But leftovers must be handled safely in order to prevent foodborne illness. Here are 6 tips from the USDA’s Food Safety and Inspection Service to make the most out of your leftovers and prevent foodborne illness. Always wash your hands before and after handling food. Use soap and warm water; scrub for 20 seconds. Keep food out of the “Danger Zone”. Bacteria grow best between temperatures of 40 to 140 degrees F, so always refrigerate leftovers within 2 hours. Throw away all perishable foods that have been left out at room temperature for more than 2 hours (1 hour if the temperature is above 90 degrees F, like an outdoor summer picnic). Cool food quickly. Large amounts of leftover food should be divided into small containers for quick cooling. Large cuts of meat like whole roasts or hams should be cut into smaller parts. Hot food can be placed directly into the refrigerator—no need to cool on the counter. Heat leftovers to an internal temperature of 165 degrees F. Use a food thermometer to check the temperature. Leftover Safety Tips Leftovers save both time and money by providing already made meals in a hurry and helping to stretch our hard-earned dollar. But leftovers must be handled safely in order to prevent foodborne illness. Here are 6 tips from the USDA’s Food Safety and Inspection Service to make the most out of your leftovers and prevent foodborne illness.

Always wash your hands before and after handling food. Use soap and warm water; scrub for 20 seconds.

Keep food out of the “Danger Zone”. Bacteria grow best between temperatures of 40 to 140 degrees F, so always refrigerate leftovers within 2 hours. We are planning a fun day out to the Kentucky Sheep & Fiber Festival in Lexington, KY on Saturday, May 20th. The Festival exists to bring together the arts and crafts community with the

producers of the fibers they utilize. At this festival you can literally see sheep to shawl and everything in between! There are over 100 vendors each year, live animals, sheep shearing

demonstrations and many classes. The festival is FREE,

you will just need to bring money for lunch and of

course, spending money! This would be a wonderful, educational opportunity for those who love to knit and

crochet to see how your fiber is made! We will leave the

Extension Office at 8:00 a.m. and return in the early

evening. If you are interested in participating, please

contact the Extension Office to put your name on the list.

Sample Gluten Free Recipes!

Gluten Free: Is it For Me?

The gluten-free diet is emerging as one of the most popular trends on the market, but gluten seems to be widely misunderstood. At this class we will learn what defines gluten, what a

gluten-free diet looks like and who should follow this diet. We will also sample some gluten-free recipes.

Have you noticed that as you age your doctor requests more tests than when you were in your 20s or 30s? Just like a car, as we age parts break down from wear and tear of age and use. One blood test that is often recommended is for your thyroid. As with many preventive tests, the choice to test or not to test depends on many factors. Doctors are concerned that over screening can lead to over treating those with no symptoms. Their concern of not screening is not treating when the patient has not complained about vague symptoms that are actually present. Your doctor will assess harm versus the risk of screening you. The thyroid is a butterfly shaped gland located in the front side of the neck. It is one of the things doctors check when they feel your neck area. Its main function is to produce a hormone that controls the speed of energy use in your body. There are several common thyroid problems: goiter or an enlarged thyroid, thyroid cancer, nodules on the thyroid, producing too much hormone, producing too little hormone and an inflamed thyroid gland. The two most common blood tests used to determine how well your thyroid is working are free T4 which is the primary hormone your thyroid produces and thyroid stimulating hormone (TSH) which shows how much effort it takes to produce T4. As with many blood tests, if results indicate a problem, the tests may be repeated and others might be ordered. Our bodies do not perform at peak levels every day. Looking at results over time is very important for developing a health care plan.

Coupon Swap & Talk April 17 @ 12:00

Please bring a lunch and enjoy a coupon swap with other people who love to coupon! We will also learn tips and tricks from the pros on how to save big with

coupons while we shop. Lots of freebies and coupons will be available. If extreme couponing interests you,

you won’t want to miss this class!

Couponing in the Digital Age Couponing has moved beyond the Sunday paper and flyers received in the mail to the digital age. While you will still find great deals on paper, you will find many more online or on smartphone apps. Clipping coupons on websites and smartphone apps will result in more savings by giving you a greater number of coupons and a chance to search for the brands that your family uses. Below are a few pointers digital coupons:

Use trusted websites. There are a number of trusted websites including www.coupons.com and www.redplum.com, to name a couple. However, there are also some websites that try to pass off fake coupons. Using fake coupons is considered a crime so beware!

Search for the brands or products that you buy. Use the search feature on couponing websites to search for specific brands or products that are on your shopping list.

Sign up for brand’s loyalty emails. Your family most likely regularly consumes a few different major brands. Go to the brand’s website and sign up for their e-mails or newsletters, most of the time these e-mails will contain digital coupons.

Download rebate apps. There are a number of rebate apps, such as Ibotta, that will send you cash or gift card rebates for buying certain products at different stores.

Sign up for your grocery store’s app. Many grocery stores, including Kroger, offer digital coupons available either online or through a smartphone app that will provide you with additional savings.
