About UsHello, my name is Stefano, and my passion has always been around cooking and creating. As a young boy, I grew up in Trieste, Italy, eating the local produce always grown traditionally in the countryside, which today we call grown organically. Of all the fruits and vegetables I had to choose from, I always had a fascination for Mushrooms, trying all varieties from the local markets and using them in homemade pasta’s. This is where my passion for cooking began. Later in life, I moved to London and worked for nearly a decade doing corporate event catering and private cheffing for high profile clients. It was during this time, I met Reaya (who was on a modelling assignment), and together in 2011, we decided to move to Australia and started Stefano’s Kitchen. Today, we sell our organic vegan and vegetarian food at farmers’ markets in Marrickville and Potts Point here in Sydney, as well as house cheffing and corporate catering. We create the food that we love and share this within our community.

One of our favourite recipes are organic Bliss balls which we stock in three different flavours. We also offer under the ZOI Organics brand single ingredients which we use on a daily basis.

Whilst eating organic food is regarded as a much healthier option, the bigger picture is how it contributes to a healthier planet for us all, by not using toxic insecticides, herbicides and chemical fertilizers.

Organic soil is rich in nutrients from decaying plants, green manure, micro-organisms and worms. Organic crops rely on rich fertile soil and pristine water, whereas conventional crops only use “lifeless” soil to keep them propped up.

Direct Sourcing means Traceability

We source our organic Mushroom powders in 200gm pouches directly from a company called Biosan www.qualitymushroom.com located in Lishui in Zhejiang province.

Lishui, is regarded as the hometown for Maitake, Shiitake and Reishi. Lion’s Mane & Tremella are cultivated in Gutian County, in Fujian province. Wildcrafted mushrooms, such as Turkey Tail and Chaga, typically are grown in the wild forest in Heilongjiang province. Biosan was founded in 2002 by a lady called Xingli Wang, who started the cultivation of organic Mushrooms in specially designed greenhouses. As the business became more successful, Xingli established a modern factory in 2012, to process dried Mushrooms, mushroom powders, mushroom powdered extracts and produce granules, sachets and filled pouches.

Organic + Standardized = Quality Biosan organic Mushrooms are grown in Greenhouses using typical native timbers such as Beech, organic rice grain and hardwood chips. The planting season for the Mushroom spores depends on the variety and geographical location. For example, Reishi grows in Zhejiang province, starting from October and continues to grow until September the following year. At a certain maturity, they are harvested and then sent to the Biosan factory for further drying and milling to powder.

Analytical tests are carried out to guarantee a minimum level of key constituent called polysaccharides. Other tests such as heavy metals, pesticides, microbiology are all carried out to make sure each Mushroom conforms to the highest standard. By applying organic principles along with a standardized process of growing, harvesting, drying and packing, a quality organic Mushroom powder which has consistency from batch to batch is assured. All of this is supported by an Analytical Certificate for each batch.
