RATING CHEF SHOWS From Bourdain to Batali, television now has a kitchen full of culinary stars.By Frank Gabriel

TH E U N I N T E N D E D consequence of a snowy, relentless winter and its rain-soaked after-

math of early spring has been countless hours hunkered down indoors.

Filling much of my misspent time was televised food/restaurant pro-gramming. Thusly, a few thoughts and comments about the current state of the culinary visual medium.

Start at the top, with the best of the bunch.

Avic Eric on PBS. Well-informed food folks have embraced celebrated French native Eric Ripert — of NYC’s famed Le Bernardin — as perhaps the world’s finest chef for quite some time. His thoughtful contributions to other shows, notably Bravo’s Top Chef, precipitated hosting this weekly Public

Broadcasting gem. Equal parts travel-ogue, opinion and technical instruc-tion, Avic Eric shines both in content as well as production value.

Top Chef on Bravo. With the debut of spin-off Top Chef Masters Season Two this month, there is no better time to recognize TC, entering its sev-enth campaign. We felt the franchise slipped a bit in its fifth season, but last season’s brilliant finalists reversed that downward trend. Easily the best assembled to date, TC6 added the compelling drama of two gifted, com-petitive brothers, Michael and Bryan Voltaggio, doing a kitchen take on Cain and Abel. Sultry hostess Padma Lakshmi possesses true star quality, coupled with a superb, discriminat-ing palate. Now, if we can just wipe that constant smirk of disapproval from knowledgeable lead judge Tom Colicchio’s face, please?

Ramsey’s Kitchen Nightmares/The F Word on BBC and Fox. We’ve come full about on the bombastic former footballing Scot. Initially, we despised his antics, found them at best unpro-fessional, and at the worst, down-

right phony. Watching earlier BBC shows actually helped change that. Particularly, Ramsey’s earnest insis-tence that his brood of children under-stand from whence their food — read: meat — originates. This meant the family learning together about ani-mal husbandry, raising lambs and tur-keys in their back yard. We have to say; watching Ramsey turn away and quietly weep in the British abattoir, which was those lambs final destina-tion showed the chef possesses not just chutzpah, but remarkable tender-ness. Well done, mate.

Molto Mario on Fine Living Network. If asked for one final meal prepared by anyone on the planet, we would without hesitation select the burly Batali, also appearing on the Food

Network’s deeply-flawed Iron Chef America. The format of Molto is sim-ple, Mario and three friends hanging out in the kitchen while he serves up a multi-course feast. The larger-than-life chef makes every second splendid, answering questions, dish-ing glorious food and pithy remarks in equal portions. For those uniniti-ated in Italian food and culture, his show serves as an ideal intro course, a primer with panache.

Anthony Bourdain’s No Reservations on The Travel Channel. Ever since Kitchen Confidential ripped the lid off the industry’s best-kept secrets, New Jersey native Bourdain has been trying to outdo himself, continually pushing the envelope of acceptable on-camera behavior. Who could forget the hor-rified expression on his face while forcing down barbequed iguana in Mexico or rotting, ammonia-scented shark in Iceland? Regardless, on No Rez, Bourdain always demonstrates an unflagging sense of adventure and sincere appreciation for the humble cooks around the globe who toil at his chosen craft.

Colameco’s Food Show on NJ Network. Gotta give thumbs-up to another homeboy, even if he is also from northern New Jersey. The beard-ed host’s sagacious demeanor and self-deprecating humor blend smoothly like a fine emulsion. One need only check his guest list to see the respect Colameco receives from peers. Plus, he regularly wears a T-shirt on camera emblazoned with local food Mecca Cape May.

Now, the bottom of the barrel. Food Wars on Travel Channel.

A fine concept gone terribly awry. Blindfolded testers sample and pro-nounce judgment on local cooking rivalries nationwide. So far, so good. The problem? A foolish format, which provides tasters only ridiculous, lim-

ited quantities with which to work. Case in point: a Buffalo wing contest decided by eating only one tiny drum-stick. Are you kidding me?

Iron Chef America on Food Network. Maybe we’re jaundiced by our early infatuation with the original Japanese program. We think that the Food Network’s follow-up, despite an infusion of star chef power, remains a triumph of style over substance. Don’t even get us started about the questionable quali-fications of some judges, either. The 20-something twins from syndicated sitcom Sister, Sister? Really?

Dinner Impossible on Food Network. Despite the presence of two chefs with A.C. area ties — Brit Robert Irvine and longtime sous George Galati — this remains a train wreck of improvised buffoon-ery. Irvine’s Patton-esque front just doesn’t work well on camera. His condescending attitude, berat-ing and ridiculing those assigned as assistants, makes us want to go upside his head with a sizzling sauté pan. ■

New Jersey native Bourdain has been trying to outdo himself,

continually pushing the envelope of acceptable on-camera behavior.
