Welcome to the Taste Kerry publication. This is our way of showcasing some of the remarkable food and drink that Kerry produces.

The aim of this publication is to strengthen the links between everyone who creates, cooks, eats and drinks in Kerry and beyond. We want to give a strong and vibrant message that Kerry is open for business in relation to food and drink and that we have some of the best food producers and food experiences not just in Ireland, but in the world.

This publication is being brought to you by Taste Kerry which is a voluntary organisation which has set itself the following mission:

‘To create a strong, vibrant and living food identity for County Kerry. This is to be achieved by providing and supporting networks, which encourage and enable stakeholders, to engage and become more sustainable. The ultimate goal is to promote growth and profitability within the food industry.’

When it comes to food and drink producers, the individual is as important as the product, because they bring their own passion, beliefs and character to bear on what they do and they all have their respective stories to tell. In this publication this is reflected, as well as events and experiences related to food and drink in Kerry.

I am very proud to be a Kerryman (is there any other kind?) and as a chef and educationalist I could not think of a better place in the world to be than in Kerry.

I hope that this publication will give all its readers new eyes when looking at food and drink in Kerry.

BEAUFORT FREE-RANGE EGGS Mary O'Connor and husband Pat produce free-range eggs from over 900 Lohmann Brown hens in Beaufort, near Killarney. The eggs have a distinctive golden brown shell and the yolks are a rich yellow.

VALENTIA ISLAND FARMHOUSE DAIRY

A small family business on an island transforms milk from Friesian cows into rich creamy yogurt and ice cream.

Joe and Caroline Daly set up Valentia Island Farmhouse Dairy ten years ago on Valentia Island. They make and sell high-quality yogurt and ice cream to hotels in County Kerry including the 5-star Europe Hotel and Resort in Killarney.

Their products (including buttermilk) are made from the milk that comes from a herd of 70 pedigree Holstein Friesian cows who graze on Valentia Island on grasses flavoured by the wash of the Atlantic ocean.

'We add cream to our milk to make our ice cream', says Joe. 'We also have an ice cream parlour on the farm'. It's been so successful that they had to extend it in the last year. They sell pancakes and desserts with a healthy dollop of Valentia Island Farmhouse Dairy Ice Cream!

DINGLE FARMHOUSE CHEESE Made by Mai and Tomás O'Bruic, the Dingle Farmhouse product range includes a semi-hard cow and goat's cheese made in summer from the milk from their pure-bred Friesian herd and Saanen goats.

They sell their cheese locally in food markets, shops and restaurants.

They also produce real milk, cream, buttermilk and a cream cheese in both plain and flavoured varieties. t: 087 6483018

DAIRY + EGGS

WILMA'S KILLORGLIN FARMHOUSE CHEESE Cheesemaker Wilma Silvius makes a gouda cheese in the dutch style in the summer months, using the milk from her herd of Holstein cows using natural rennet. She also makes flavoured gouda with cloves, cumin, fenugreek, seaweed or garlic.

She sells the cheese in its young state after 6 weeks and holds some back to mature for up to 3 years. You'll find it in markets and delis around the country and Wilma will also post it in Ireland and around the world. t: 087 978 7944/066 9761402

DINGLE PENINSULA CHEESE German-born cheesemaker Maja Beaujouan of Dingle Peninsula Cheese makes a range of semi-hard and hard cheese. The jewel in the crown is her Dilliskus flavoured cheese (pictured above) with hand-picked dillisk seaweed and made using morning milk. She matures them in a 200-year old stone building whose natural flora adds to the fermentation process and the final flavour of the cheese.

Her cheese – when available as it is seasonal – sells at Sheridan's Cheesemongers in Dublin 2 and at Temple Bar Market on Saturday in Dublin. You can also visit Maja at her store and buy her cheese at The Little Cheese Shop in Dingle. thelittlecheeseshop.ie

RING OF KERRY QUALITY LAMB

Both the lowland and hill lamb from sheep reared on the Ring of Kerry is iconic in food circles and loved by chefs.

Ring of Kerry Quality Lamb is produced by a co-op of just 18 sheep farmers who live around the Ring of Kerry making it unique. They market and sell their lamb direct to customers from their website, so you can be assured of both quality and traceability. You know exactly what you are buying from 'mountain to fork'. It also means that you are buying your lamb straight from the people who nurture and grow it so you know its provenance.

Ring of Kerry Quality Lowland Lamb is grass-fed and available throughout the year – the lamb is exceptionally tender.

Ring of Kerry Quality Hill Lamb, considered a delicacy, is only on sale from August to March.

Also called Kerry mountain lamb, the hill sheep graze on a more varied diet of grasses and heathers than lowland sheep which gives a distinctive, slightly stronger sweet flavour to the meat which is prized by chefs.

All Ring of Kerry Quality lamb is hung for a minimum of 7 days to mature and is Bord Bia Quality Assured.

SÁSTA SAUSAGES AND PUDDINGS John-Paul and Kathleen O'Connor who own and run Sásta always knew their sausages and black and white pudding were something special. But even they couldn't believe it when their white pudding won the Fins Goustiers award in Normandy.

One of the most prestigious awards in the world of artisan food, Sásta have beaten the French at their own game. They have since gone on to win the best sausage with over 90% pork in Ireland and Britain and are now expanding their business so that even more people can enjoy their product.

Patrick O'Connell of O'Connell's Poultry Farm rears ducks and chickens in the halcyon setting of their family farm in Meeligoleen. THE WILD SIDE Frenchman Oliver Beaujouan marries the skills he learned in charcuterie with local and Irish ingredients to create a smorgasbord of micro-artisan foods to grace any table from a fine restaurant to a charcuterie board at home. He crafts salamis from scratch; smokes fish; collects and dries local seaweed and makes sausages, patés and terrines from local and Irish pork, duck and chicken. KENNEDY'S BUTCHERS, DINGLE Kennedy's butchers in Dingle run by craft butcher Jerry Kennedy (and previously by two generations before him) is famous for selling the artisan beef from the Dingle Peninsula and pré-salé mountain lamb from the Blasket Islands (though you need to be quick as it is in short supply and has a short season). PICKLED IN DINGLE + BALLYDAVID HONEY

When Marie Charland of Pickled in Dingle met her husband Fergal Murphy, an aspiring beekeeper, they formed a marriage in more ways than one.

Marie Charland, a French Canadian who came to Ireland 16 years ago, met her husband Fergal Murphy while pouring a pint for him in his local. Together they have created a little food industry between them.

Marie makes Pickled in Dingle chutneys including 'Date and Orange'; 'Butternut Squash, Apricot and Almond'; 'Pear and Red Onion' and 'Beetroot and Orange' made with beetroot grown by her friend Aidan in Castlegregory. Meanwhile Fergal has created a business from his passion for beekeeping, selling Ballydavid Honey from his hives of bees who feast on clover, fuchsia flowers, blackberries and sycamore in Ballydavid, just ten minutes west of Dingle. The honey is pale with a

delicate flavour and changes throughout the year depending on what's growing in each season. It is the ultimate local product. DINGLE SUSHI Whoever first said 'Act Local, Think Global' must have had husband and wife team Marcin and Magdalena Kopec who own Dingle Sushi in mind.

The couple, who are originally from Poland, create hand-made colourful, delicious sushi using Kerry fish and seafood in the Dingle Gaeltacht with the support of Údarás na Gaeltachta. Each of their hand-crafted sushi look like little portraits of the Kerry landscape. They won local acclaim with a Blás na hÉireann 'Best in Farmer's Market' award in 2015.

AN SIOPA FEIRME When does 'local' really mean local? When it's called An Siopa Feirme! This farm shop in Waterville, County Kerry is remarkable in that it sells only food and drink produce made in Kerry.

Run by Lucia McGuirk and Mattie Doody they trace the map of Kerry in food and drink and stock the products they find in their shop, so that people can find the bounty that is on their doorstep in one place.

The Dingle Distillery is an artisan company dedicated to bringing back the tradition of independent distilling in Ireland. They make a pure pot-stilled malt whiskey from the finest malted barley, then store it in casks to mature. You need patience to make a good whiskey so while they are waiting for the whiskey, these prodigious people make an exceptionally pure quintuple-distilled vodka; that is it goes through 5 distillations that

no doubt enhances its creamy and slighty sweet taste on the palate. BEER-BRAISED KERRY BEEF

Kerry Beef is both tender and meaty and is the perfect foil for Carraig Dubh porter from the West Kerry Brewery.

OIDEAS/RECIPE

Serves 4

INGREDIENTS450g Kerry stewing beef, cut into 1" cubesSalt and freshly ground black pepper 1 tablespoon rapeseed oil 1 medium onion, finely chopped1 clove garlic, finely chopped1 medium carrot, cut into small chunks 1/2 stick celery, finely sliced 1/2 teaspoon dried fennel3 sprigs thymeZest and juice of 1 orange500ml porter2 medium tomatoes, finely chopped 2 sprigs of fresh thyme to garnish

1. Preheat the oven to 180C/350F/Gas 4 for 20 minutes.

2. Season the beef lightly with salt and freshly ground black pepper and set aside.

3. Place a tablespoon of rapeseed oil with the onion, garlic, carrot and celery in a heavy oven-proof casserole and cook over gentle heat for 10 minutes until soft and lightly coloured. Add the dried fennel, stir and cook for 2 minutes.

4. Add the beef, thyme, zest and juice of the orange and the porter. Stir to remove the sticky bits at the bottom of the casserole.

5. Place the casserole in the oven with the lid on and bake for 2 and a half to 3 hours, or until the meat is melting. Stir from time to time, adding a little water if necessary. Remove the lid from the casserole for the last half hour of cooking so the sauce can reduce and thicken.

6. Stir in the tomatoes ten minutes before the end of cooking. Garnish the stew with a few sprigs of fresh thyme and serve.

1. Clean the mussels and clams under lots of cold running water, discarding any that are open and that do not close easily when you gently press the shell. Remove the beards from the mussels.

2. Place the saffron in a small bowl or glass with hot water. Leave to bloom.

3. Take a large saucepan that will fit all the shellfish. Melt the butter with the rapeseed oil over a gentle heat and add the garlic and shallots. Cook until soft (2-3 minutes). Add half the parsley, the white wine and a little freshly ground black pepper.

4. Turn the heat to high and add the saffron and its soaking liquid with the mussels and clams. Put the lid on the saucepan. Cook over high heat for a few minutes until the shells open. You'll need to shake the pan a few times during cooking and halfway through, toss the shellfish with a large spoon. When all the shells are open the shellfish is cooked (discard any that have not opened).

5. Spoon the shellfish into bowls with a little of the white wine and saffron broth. Sprinkle over the remaining parsley and serve immediately.

It's so easy to put together a plate of cheese and cured meats when you use products that are hand-made and hand-crafted by Oliver Beaujouan of The Wild Side and Maja Beaujouan of Dingle Peninsula Cheese, who also owns The Little Cheese Shop in Dingle, County Kerry.

Oliver suggests you start by choosing his The Wild Side Kerry chorizo, which has a robust spicy flavour.

It goes perfectly with Maja's Dilliskus cheese which is threaded with local Kerry seaweed (read more about the cheesemaker on page 17).

1. Preheat the oven to 200C/400F/Gas 6.

2. Make the gouda crisps. Line a baking tray with parchment paper. Place 8 small bundles of grated gouda on the parchment making sure they are ½ inch apart. Bake for 5 minutes until bubbly (they will spread out quite a lot). Remove from the oven and leave to cool.

3. When the gouda crisps are cold, lift them gently from the parchment paper with a spatula or palette knife. Use immediately or store in an airtight container for up to 3 days until ready to use.

4. Just before serving, mix the cream cheese with the chopped chives. Place the gouda crisps on a serving plate, top each with a spoon of chive cream cheese and place a thin fold of smoked salmon on top.

Recipe tip: If you make the gouda crisps ahead of time, refresh them for 1 minute in a hot oven to crisp them up.

1. Preheat the oven to 180C/350F/Gas 4. Oil or line a square baking dish (it needs to be about 8 inches/22cm square). Set aside.

2. Spread the granola and almonds or cashews out on a large baking sheet in a single layer. Bake for 12-13 minutes, or until golden, stirring halfway through. Leave aside to cool. Leave the oven on.

3. Place the honey and butter in a non-stick pan and melt over a low heat. Remove from the heat and add the vanilla extract.

4. Gently mix the toasted nuts and granola and the dried fruit with the honey and butter mixture until you have a homogenous mixture. Press into the oiled baking dish and even out the top with a spoon. Bake for 15-17 minutes until golden. Wait ten minutes, then turn it out gently onto a board and cut into squares or oblongs.

5. While the granola bars cool, make the chocolate and fudge topping. Melt the chocolate, fudge and cream in a bowl over a pan of hot water, making sure the bowl does not touch the water. Immediately spread the chocolate mixture over the granola bars with a knife.

1. Place the strawberries in a saucepan with 1 tablespoon cold water. Add the sugar and rosewater and stir gently.

2. Cook over a low heat for 3-4 minutes until the strawberries give up enough juice to make a syrup. (You can do this ahead and store the strawberries in the fridge until you are ready to make up the dessert.)

3. When you are ready to serve, place the meringue cases on individual serving plates, fill them with lemon curd, spoon over the strawberries and drizzle with the rose-scented syrup left in the bowl.

1. Season the lamb chops on both sides with salt.

2. Heat a non-stick griddle pan.

3. Cook the chops over a medium to high heat for 3-4 minutes on the first side until golden all over, then turn and cook for 2-3 minutes on the second side. Remove to a plate, sprinkle with freshly ground black pepper, loosely cover with tin foil and leave to rest.

4. While the lamb is resting, mix the softened butter with the capers and mint.

5. Serve the lamb chops on a large serving plate dotted with little knobs of the caper and mint butter.

1. Make the dressing: place the apple juice in a saucepan. Cook over medium heat, making sure it doesn't burn, until reduced in half. Remove from the heat and leave to cool a little. Add the mustard and whisk well. Add the lemon juice and whisk again until smooth.

2. Heat the rapeseed oil in a non-stick frying pan. Add the black pudding slices in two batches and cook over medium heat, on both sides, until golden.

3. While the black pudding is frying, make the caramelised apples. In a non-stick frying pan, melt the butter, add the demerara sugar and cook over a gentle heat for a minute or two until bubbling. Stir well. Add the apple slices and cook over gentle heat until lightly golden on both sides but still holding their shape.

4. To serve: divide the rocket leaves between four plates; place 2 pieces of black pudding on each plate; add 4 slices of apple and drizzle over the dressing.
