Ahhh! It’s that time of year again. Forme, fall is the absolute best time of theyear. What’s not to like about this time ofthe year? The weather is fantastic, thecrowds have died down, and the kids areback in school.

Fall also means football season whichin the south is serious business, not to betaken lightly. Football is everywhere youturn, dominating conversations,television channels, internet and socialmedia. Yep! Here in the south you can’tgo far this time of year without the oldpigskin making an appearance in someshape or form.

With football as a focal point, thereare many offshoots of the sport that make for perfect social situations andexcuses for a party, cookout, or just meeting up with friends. There’s nothing liketailgating in Columbia or Clemson on game day, having a dog and a couple ofcold ones with 80,000 plus rabid fans. Can’t make it to the game? No problem.There are some great alternatives right here on the island.

Check out some of the best game day hangouts in this issue as Hilton Head ishome to many establishments that pull out all the stops when it comes to servingup great food and drink in anticipation of making your game day the next bestthing to being there. Start your day with a little pre game Bloody Mary or Mimosa.Then enjoy burgers, wings, pizza, and more with a cold beer or cocktail or just kickback and cheer on your favorite teams on one of the endless HD TV’s. Need tofind a special game? Not a problem as most restaurants have the sports packagesand are glad to accommodate every request.

I have to admit, when I moved to the island many years ago I lost touch withthat game day feeling. Moving away from my hometown team to a remote Islandtook some getting used to. There were only a few places that put any effort intoproviding that game day atmosphere and I never traveled to see any live gamesthat were in driving distance.

Times sure have changed as the biggest decision these days is actuallychoosing a spot to enjoy all the action. With all the options at the local wateringholes, it would be hard to go wrong. So grab your friends, your favorite jersey, anda healthy appetite and head out to get your game on!

According to legend, ex-fighterpilot Jimmy Phipps fashioned a quasi-Quonset hut overlooking the PacificOcean during World War II. Cateringto war-weary servicemen, The BigBamboo offered a taste of home,good conversation, cold drinks and thesounds of Big Band music. Fifty years later and half a worldaway, two former Disney set designerstransformed a second floor space atColigny Plaza into a replica of thefabled Tarawa bar and grill. “Where theSouth Pacific Meets the CarolinaCoast,” brothers Tristan and KieronO’Grady purchased The Big Bamboo

Café in April of 2000 and transformed itinto a local favorite. Carrying on Phipps’ legacy ofhospitality, the establishment offers an

escape from the everyday with anextensive menu of specialty seafooddishes and American comfort foods, afully stocked bar with select importedand microbrewed beers and live musicserved both inside the bamboo-lined,1940s-themed dining room or outsideon the breezy, open deck. PJ’s Fish & Chips, the award-winning ribs and NY Strip are alsoperennial favorites, notes Tristan, as arethe quality hamburgers and homemadeKey Lime pie. Made in house daily, half-poundburger choices include the originalBamboo Burger in Paradise; a CarolinaFire Burger topped with fresh jalapenos,Gouda and house Carolina Spice sauce;a Black n Bleu Burger blackened andstuffed with bleu cheese; and TheBomber covered with bleu cheese slaw,BBQ black beans and jalapenos. Daily Fresh Catch Specials arepresented as an entrée with rice andvegetables, on a salad or in the populartacos. Always a sellout, the fresh catchvaries from red or black grouper andmahi-mahi to amberjack and cobia.Never the same two days in a row, thespecial changes daily to reflect thefreshest fish available on the market. Five months in the making, anotheraddition at The Big Bamboo is anocean-facing deck on the second floor.Finished in May and adding an extra 50seats, this outdoor area is the perfectplace to relax while drinking amargarita, enjoying a delicious meal,listening to the latest bands andwatching the world go by. “We’ve always wanted outdoorseating,” says Tristan. “Sitting up high,you can feel the breeze.” Although wryly noting it “was achallenging project – I’m just glad thewhole thing is over,” he is definitelypleased with the results. “The visibility is probably one ofthe biggest benefits of the wholeproject. People now see this place.Upstairs restaurants aren’t supposed towork – it’s very, very difficult.” Thanks to its extensive menu,reasonable prices and diverse

entertainment lineup, The Big BambooCafe has managed to beat the odds byattracting a loyal local following of allages. The Kid’s Menu has recently beenrevamped to include select grilleditems, Emilee’s Island Pasta and Luke’sChicken Caesar, alongside the requisitechicken fingers, hot dogs and burgers.Located in the back of the restaurant,the Family Game Room will keep thekids busy before or after their meal, atleast until the quarters run out. For instance,The Beagles, a Beatles tribute band, arenow heading into their ninth yearperforming during Friday night dinner –always the busiest day of the week, nomatter what season. Another key element of therestaurant’s popularity is the uniqueatmosphere. “People often come in and say thatthey really feel like they’ve escapedwhen they come in the Big Bamboo,”Tristan explains. “Everyone – kids tograndparents – can enjoy our offerings.The theme connects with people. What would our lives be likewithout hamburgers? What would wedo for those backyard cookouts? Wouldfast food even exist? I picked up thephone at work the other day and it wasa client asking where the best burgerwas on Hilton Head. While I thought thequestion was random at the time, wehad quite a lively debate about it in theoffice. Because after all, everyone hastheir go-to place when they need aburger fix. While the fast food burgerhas become a staple of our society, the

gourmet burger is being taken to awhole new culinary level and Charbar,Hilton Head’s new gourmet burger spot,is the talk of the town. So pay heed, burger lovers. There isa new team on the roster and they meanbusiness. Charbar opened its doors inSeptember of 2012 and only one monthlater won “Best Burger” at the Burgers& Brews Festival. Not only did they winthis award right out of the starting gate,they did so resoundingly, garnering1,200 of 2,000 votes with 14 restaurantsparticipating. ”That was huge for us!”exclaimed Nick Bergelt, owner ofCharbar. “We competed against greatrestaurants that had won the award inthe past so it gave us a big vote ofconfidence that we were doing thingsright.” A native of Hilton Head, Nick grewup surrounded by the hospitality

industry. He graduated from the MooreSchool of Business at the University ofSouth Carolina with a major inEntrepreneurship and a minor inHospitality Management. After college,he opened up an Asian restaurant onKing Street in Charleston, but alwayswanted to move back here because offamily. With his dreams of moving homecame plans for his future. “I felt thatHilton Head was well suited for agourmet burger market.” Call itserendipity if you will, but when Nickwas looking for a culinary partner, he raninto his childhood schoolmate fromHilton Head Christian Academy, CharlesPejeau. Charles had been workingunder Robert Irvine at Eat as well as atPalmetto Bluff and just happened to bea chef with a passion for burgers. Thusa merger of minds and talents wasmade and Charbar was born. Nick explained that Charbar is both

vision and concept. “We arenot just about burgers. Weare all about driving homevalue. We deliver a gourmetproduct without thegourmet price tag. We wantto blend a fine diningexperience with good butquick service.” On thegourmet side of things,Charbar does everythinghigh-end and home-made.They grind all of the meatdaily, and make their ownpickles, buns, and desserts.Their bacon comes from themountains in NC and issmoked for 3 days. Theycelebrate local flavors anduse locally growningredients in season. Suffice to say thatCharbar will satisfy all of yourhamburger cravings. Themenu is simple and givesthe diner the power tocreate his own favorite fix.The ‘Char’ means everythingis grilled, the ‘bar’ stands for your builda burger options. “We want people tohave a stake in their food,” said Nick.There are four stages in building yourburger. First thing to do is “Pick yourown Protein” – hamburger, chickenburger, shrimp burger, or veggie burger(black beans, rice, carrots, roasted redpeppers and onions). Next you chooseyour cheese, then your fixings, andfinally your fresh bun --brioche, pretzel,focaccia, sourdough, or gluten-free. Ifyou prefer not to build-your-own, thereare ‘specialty’ burgers. The ChampBurger, which features a baconmarmalade, won them “Best Burger”and there is a daily Chef’s Special.Nick’s favorite burger is a Bleu CheeseBacon Burger with blue cheese oozinginside and a pimento topping. The menu also includes Starters likewings and sliders, Sides like their bestselling Rosemary Truffle Fries, a trio ofSalads, and yummy Desserts. They havea varied choice of shakes includingdouble chocolate, grasshopper, and

even a root beer float. All of the wineson the menu are boutique and theyhave Craft Beers on tap from smallbreweries as well as 15 different bottledbeers. Located in Park Plaza near themovie theatre, Charbar has created aperfect niche as not only offeringfabulous food, but they knock it out ofthe park when it comes to ambianceand technology. The interior is a clevermix of old and new. The walls areadorned with nostalgia -- old albumsand album covers dating back to the30’s. “We wanted every generation tofeel welcome here and find a bit of theirpast. We wanted a full sensoryexperience. Everybody has good foodand good service, but we wanted moreso we added the music aspect toportray a blend of American culture.” Adeparture from the past and a step intoto the future, Charbar is piloting aprogram which provides each table witha small i-padesque computer tablet.You can scroll through pictures,

descriptions, and pricing foreach item on the menu andsome day you will order andpay for everything right fromthe tablet. “We are usingtechnology to make businessmore efficient. This way ourservers can focus on thehospitality.” The tablets alsoprovide non-stop entertainmentfor the kids or the entire familywith a complete digital gamessection.

The exterior of the restaurantsports a whole new look with apatio, a fire pit with comfychairs, and an outdoor bar. Thearea is tastefully done and ahuge boon to business. ParkPlaza’s well groomed groundsflank the patio, making thewhole experience feel quitebackyard-like and homey. Kidscan peel off onto the lawn afterdinner and run around in safetywhile mom and dad sit backand enjoy a cocktail and livemusic. Passing movie goers

cannot help but be wooed by thearomas and music and detour inside fora visit. Charbar is the only restaurant onthe Island to offer live entertainmenteveryday of the week, year-round. “Welike to support the locals when hiringour entertainment,” said Nick. You cancatch an array of talent like the goodvibrations of Derrick and Damato andHilton Head Prep student and vocalist,Taylor Kent, who lights up the night withher powerful voice. The locals havealways come first to Nick and Charles.Opening a restaurant in September canbe risky business, but Nick explainedthat they wanted to cater to the localsfirst. “We didn’t want the locals to haveto fight crowds. I use theknowledge daily to maintain an ever-evolving outlook on the culinary scene.”

In 2000, Chef Wade’s love ofadventure and travel led him back to theEast Coast and ultimately to Hilton HeadIsland to assist in opening a newrestaurant. “I fell in love with the island,the culture and the people right away.”

During this time, Chef Wade earneda reputation as a talented chef andbecame acquainted with the wonderfulpeople at The Jazz Corner. “I wasfortunate to get an invitation from KelliLesch at The Jazz Corner in early 2013 tointerview for a position with their culinaryteam. After meeting with Bob and LoisMasteller and learning of their passion topreserve the Great American Art Form ofJazz, we all felt it was a perfect fit for meto join the team melding great food,great jazz and the intimate elegantatmosphere of The Jazz Corner.”

Cooking is an art form to ChefWade. “I am excited to use fresh, localproducts in preparing new, creativedishes while keeping staple menu itemsthat are signature to The Jazz Corner. Myfavorite dishes usually include fresh, localseafood, but one of my signature dishesis Pork Osso Buco. It is not on the menu,but I feature it as a special.”

The day that his parents gave him a drum set when he wasthree years old was a defining moment in Luke Mitchell’s life.While as a parent I would deem that a bold move to give licenseto my toddler to bang on a drum and rock the alreadytumultuous reverberations of a house with little ones, it obviouslywas a strong move by his parents. Luke is now a full timemusician and music has consumed his past and present and is allhe can see in his future.

Drum lessons began for Luke at age 8 and he started his firstband while in middle school. He started earning money for histrade at age 13. Aside from the drums, he plays the guitar --acoustic, electric, or bass – the banjo and some piano. Luke grewup on Hilton Head and, recognizing that music was more than apassion, he played for 5 different bands while attending HiltonHead High School. After going to college in Charleston and thenthe Berklee College of Music in Boston, Luke went solo.

“I decided to go solo mostly because the venues I played atwere small.” His act was singing and playing the guitar. What wasmissing was his favorite first instrument, the drums. One nightwhile playing his music at the Quarterdeck, Luke decided tochange it up. “I knew I had to do something different. I had seena guy in Austin playing the guitar and using his feet to play thedrums and I thought that maybe I could do it better.” So he triedit that night and it was a huge success. “It took me about an hourto get it right. After that, everything changed for me.”Heattaches each heel to a device which will beat a drum and thenthe rhythm is all in thumping those heels. Luke has found hisniche and his listeners found themselves dancing, tapping theirfeet, and thoroughly enjoying what now became a visual show aswell as musical entertainment.

The phone started ringing for Luke and now he often plays 3gigs a day. That’s 11 hours of music. “Better to be employed thanthe alternative,” he says with a chuckle. His typical day mightstart at a hotel or a brunch before he will play for a dinner crowdand then off to late night stuff, sometimes teaming up withchildhood friend, Kevin Early, in the band “Rowdy Cloud”.

Luke writes his own music and is currently on his fourthalbum. When he plays his gigs, however, he mostly plays otherpeople’s music like older 50’s classics, Motown, Tom Petty, NeilYoung, and Bob Dylan. He has started incorporating his musicinto the mix and hopes to do more of that in the future.

While he mostly plays on Hilton Head, Luke also does showsin Savannah and Charleston as well as wedding and privateparties. His future? “I would love to join a band, make albums,and be a touring musician.” To find out where Luke is playing,visit his website at www.lukemitchellmusic.com.

San Miguel's is a special place toCarrie, and her co-workers are like asecond family. Working in a family runbusiness adds an incredibly importantdynamic. She has held a variety ofpositions – waitress, manager, andeverything in-between. “I wear manyhats; particularly while bartending -friend, therapist, tour guide, mother,acrobat, concierge, magician, andcomedian, sometimes all in the samenight!” To be successful at her job,Carrie has to be a good listener and aquick thinker. “I truly love talking topeople and hearing their stories andjokes. And I have a few to share as well!”

Hospitality is a unique industry inthat every day it offers something new.“That’s why I love what I do,” Carriesaid. “Every day I have the opportunityto meet new people and have newexperiences, and I almost always have agood time! You never go through a shiftwithout laughing, even in theoffseason!”

The hospitality field is certainly notfor everyone, and not everyone can do

it well. You attract more flies with honeythan with vinegar. Carrie added, “Thekey to success in doing my job is topractice patience, go with the flow, andsmile and laugh – a lot!”

One of Carrie’s challenges in her jobis being around the tasty food! “Afterworking at San Miguel's for years, I stilllove the food and the margaritas! Amargarita anywhere else is but a paleshade in comparison to the ones wemake at San Miguel's.”

Carrie’s favorite way to spend a dayoff is to be with her husband andchildren. “I love to play tourist and do allthe fun things people do when they

come here on vacation.” She alsoappreciates the varied and excellentdining options on the island. “It surefeels good to have the roles reversedand be waited on.”

When asked what job she’d want ifshe could have any job in the world,Carrie’s response was “This is it; I lovewhat I do!” And she does it well.

While we may not have any localcollege teams on the Island, and whileSouth Carolina may not be home to anyprofessional teams, there is certainly nolack of enthusiasm around here for our“home” or favorite teams. So maybe

we can’t tailgate in the stadium parkinglot or sit in the stands, but we cancertainly find Game On in every cornerof the Island. We have the next bestthing to being there as our localrestaurants love football season and

bring the action to life every weekendall fall. In fact, what is kind of fun aboutgame days on the Island is that sincewe are such a melting pot, we have fansfor pretty much all sports teams and ifyou are looking for a particular game,you just have to venture out to one ofour many restaurants that have GameOn!

For Callahan’s owner, Vic Neely, falland football mean his “biggest seasonof the year”. Given Callahan’s hugelocal following, the tables and barstoolsare habitually full year round, but theypositively light up during footballseason as the fans pour in and theatmosphere comes alive with the “ahs”of victory and the “ohs” of defeat.Callahan’s boasts 35 televisions, 2 ofwhich are large screen. They carry anyand all sports packages and if you arelooking for a remote game, they canfind it. On Saturdays, Michigan State,West Virginia, and South Carolina fansare among the throngs and Sundayssee the arrival of the boisterous Steelerscrowd, but also Philly, Baltimore, andGiants fans. Local college alumnichapters looking to reunite for a biggame just need to call ahead and makearrangements for their game to beshown.

Theyhave more room now in a fancy newhome with plenty of seating both insideand out. While their Bluffton locationhas always drawn a good sports crowd,their Island locale was never a hugesports bar. Russell Anderson, owner ofCaptain Woody’s with his wife,Shannon, is excited about footballseason. “If you want a good time, comeon in,” said Russell. “We are new at thisso we are a fan of every team. If youwant a game, just ask for it.” CaptainWoody’s has 16 tv’s at their Target Roadlocation, 9 inside and 7 outside. Theiroutdoor seating, while usually not openuntil 4 p.m., will be sporting “game on”for all kickoffs, early and late. If there isa nip in the air, Russell knows how tokeep his exterior area warm with a glasspartition, exterior heaters, and blankets.Woody’s will run different drink andfood specials each week.

The Frosty Frog keeps pace duringfootball season too as they welcome apumped up crowd and even go so far

as accommodating littlefootball fans with a bouncyhouse every Sunday! TheFrog carries all of the NFLand MLB sports packagesand tunes into ESPN3 forCollege games so they canshow all the big match-ups.They are not home to anyparticular NFL team, so willfeature an array of games. Aspecial feature of game dayat the Frosty Frog, is thatthey have 5 different zoneswhere they can turn up thevolume on different games.During all Saturday, Sunday,and Monday games, theyoffer 25 % off of pizza, $13buckets of domestic beer,$16 buckets of imports, $4well drinks, and $4 for housewine. They have 27 High Deftv’s, 2 of which are 70 inchersand 2 with surround sound.There is a new outside patiowith a retractable roof, a beach area,and plenty of seating inside and out.For the non-game watchers in yourclan, Coligny Plaza offers lots ofshopping and sweet treat options.

Located on Office Park Road nearthe entrance to Sea Pines, Drydock isthe home of the University of PittsburghPanthers and owner Rob Arogastpromises to show their games “comehell or high water”. He explains that,“Since the Panthers moved to the ACCthey are hard to find now but I willstream them with a laptop if I have to.”Drydock is also home to University ofMichigan Wolverine fans. “It’s likehaving a wife and girlfriend,” jests Rob.“You don’t want them in the same roomso you have to be careful.” Drydockalso carries all Directv sports packagesfor NFL and MLB. Sundays see an influxof Dolphin people as well as Lions fanswhich are an offshoot of the Wolverinecrowd on Saturday. Rob said that theyalso have a regular crowd of BuffaloBills fans and he is sure to put theirgame on in a different room from theMiami game. “The place is full of

hootin’ and hollerin’ when the Bills playthe Dolphins.” Drydock has 10 tv’sincluding a 12 foot projection tv,outdoor seating, and will show up to 8different games at a time. They havedrink specials every Saturday andSunday with $1 off all beer, wine, andliquor. Sundays they will play up thetailgate atmosphere outside and willfire up the grill and have oyster roasts.

Mellow Mushroom restaurants inPark Plaza and also in Bluffton arealways very busy places during footballseason. With a fan base all over theboard from Atlanta to Cleveland toIndianapolis, Mellow Mushroom is notreally “home” to any particular team.“If it’s available, we have it on,” saidKim Boyce, owner of MellowMushroom with her husband, John.Kim says they will mark their tv’s withwhat game will be on so early arrivalsthat want to get a good seat will knowwhere to plant. “Football days are hugefor us. The restaurant is so full ofenergy. We have become the meetingground for a lot of f&b people and it isjust so much fun,” said Kim. MellowMushroom has 21 tv’s in both locations

Theyhave a big 12 footprojection screenfor the game ofthe day as well asoutdoor seating.The Park Plazalocation also hasan outdoor barand fireplace.Every game daywill see differentspecials. Theirmenu adds a“breakfastspecial” for earlygames like aspecialty calzoneor pizza and you can expect drink dealsto include bucket and shot specials aswell as Bloody’s and Mimosas. “Comeearly and stay late. We are the meetingplace for game day.”

Just a chip shot down Park Plazafrom the Mushroom is Charbar, anotherbig home for Gamecock fans. Charbarwill have all the games showing on theweekend with televisions indoors aswell as outside on their fancy new patio.Owner Nick Bergelt wants game day tobe authentic, so aside from serving upfun burger specials, he will havehotdogs on the grill too. Drink specialswill vary from week to week, but youcan expect something worthy of of notewill be on tap during all games.

Reilley’s has always been a popularplace for sports fans and enjoys a good,cheerful crowd on game days. Sundaypatrons can come early and feast onReilley’s famous brunch menu and stayfor the duration. Reilley’s on the southend has 12 tv’s, 6 indoors and 6 out.They will take any and all requests on afirst come first serve basis. You canalways find the Gamecocks playing onSaturdays and on Sundays you will be ingood company if you’re are a Patriot’sfan. Reilley’s North End, off ofMatthew’s Drive, sports 8 tv’s and hasan affinity to the Nebraska Cornhuskers.Sunday they see a good crowd ofPatriots and Steelers fans. “All people

have to do is ask for a game and we willfind it,” said David Reilley. The footballmenu at both Reilley’s locations featuresinexpensive appetizers, burgers, andsandwiches as well as specials on beerincluding $2 domestics, $2.50 imports,$3 drafts, and $3 well drinks.

Another Reilley family restaurantthat turns up the volume in the fall isAunt Chilada’s on Pope Avenue. AuntChilada’s is serious about footballseason with a pre-season countdownclock on the wall indicating the numberof days until the start of the seasonwhen Game is On! They have 28 tv’s, 2of which are outside, and will showevery game, every day. If you can’t findyour game, just ask for it. Aunt Chilada’stries to stay neutral when it comes toboasting a home team so shouts for allteams can be heard reverberatingthrough their walls. They have gameday specials that include $2 Pabst BlueRibbons, $3 Blue Margaritas, and $0.50wings.

Located on the north end in MainStreet, Mangiamo packs a standingroom only crowd in the fall duringfootball season. “If you take a Sundayin June we probably only have ahandful of people. Compare that to afootball Sunday and the place ispacked,” said owner Brian Bambeck. Ifyou are an Ohio State fan, then this isthe place for you as it is all Buckeye

high fives whengame is on. Thefolks fromCleveland comeback on Sunday asthe Browns’ fansemerge.Mangiamo has 19tv’s, 2 big screens,and has outdoorseating. They willrun differentspecials everyweek like Bloody’sand Irish coffee forthe early games.

Fittingly,Kenny B’s is hometo all things NewOrleans, including

the Saints. The walls are adorned withSaints as well as LSU and GeorgiaBulldog memorabilia and you can besure to catch them in action whenavailable. With its casual, order at thecounter atmosphere, you can stop byand watch the game or pick up yourCajun cookin’ for take-out - Gumbo,Po-Boys, Crawfish, Jambalaya, andmore.

The Hilton Head Brew Pub willhave more than great beer on tap thisfall. Owner Juan Brantley ushers infootball season with great gustoknowing that his cheering sections willbe full. With 7 outdoor tv’s and another25 or so indoor screens, you can catchall the action at the Brew Pub.Gamecock fans are aplenty onSaturdays and NFL game days see aninflux of Steelers, Bills, and Falconsfans. The Brew Pub will offer foodspecials all season including buy oneget one wings and a Large CheesePizza for $11. You will not go thirsty atthe Brew Pub during football seasonwith $4 craft pints and $15Brewtenders.

It’s hard to believe that it’s almostTaste of the Season time again! TheLowcountry’s premier culinary event,presented by the Hilton Head Island-Bluffton Chamber of Commerce, is theplace to wine, dine, and enjoy award-winning cuisine. Treat yourself to thecrème de la crème of the Island’srestaurants and resorts with a ticket toa holiday culinary extravaganza – asumptuous sampling of the area’s topchefs and confectionary artistsshowcased in sparkling holidayelegance.

Taste of the Season was created tocelebrate the talents of our area’s topchefs and indulge the foodies of theLowcountry. This year marks the 24thanniversary of the culinary showcase,and it continues to get better andbetter each year. More than 35 arearestaurants and chefs will showcasetheir skills and culinary creations this

year on November 22, at the HiltonHead Marriott Resort and Spa inPalmetto Dunes, from 6:00 until 9:00 p.m.

Each year, winners of Taste of theSeason are chosen by those whoattend the event to sample some ofthe region's best culinary offerings.Awards are presented to therestaurants serving the most populardishes. Hundreds of ballots aresubmitted for both best cuisine andbest decor.

Last year’s award for Best Cuisinewent to Hugo’s Seafood andSteakhouse for their Surf n’ TurfLollipops, lobster wontons, andHawaiian-seared filet mignon withceleriac puree, parsnip chips, and soyvinaigrette.

Second place went to Marley’sIsland Grill for their savory Surf and TurfRockefeller with tender chili peppers,

beef tenderloin over sautéed spinachRockefeller, drizzled with roasted redpepper and garlic Aioli, and DoubleChocolate Raspberry Truffle Blisscookies.

Honorable Mention for BestDessert was awarded to Flatbread Grillfor their Flourless Chocolate Cake withPeanut Butter Bark, White Chocolateand Pumpkin Crème Brulee Cheese-cake, and Miniature Christmas Treecupcakes.

While food is the focus, attendees are also able tobrowse great gifts offered in the silent auction - whichinclude getaways, works of art, and golf packages. With a chance to win prizes such as gift certificates to localrestaurants and vacation packages at area resorts, theauction and raffle are always very popular. And, each year, when the evening is over, the HiltonHead Island-Bluffton Chamber of Commerce and theparticipating restaurants donate more than 300 pounds offood from the Taste of the Season event to Second Helpingsto be distributed throughout the Lowcountry.

Traditionally, one of the island’s most popular events—and always a sellout—this year’s tasting promises to be thebest yet. One of the biggest complaints Ihear about pursuing the healthiest foodoptions is the expense. It’s no secretthat a bag of chips is a fraction of theprice of a bag of carrots. Taking a “farmto table” approach can help with notonly keeping your expenses in checkbut also with capitalizing on theseasonal genius that mother natureprovides.

What exactly does it mean to havea ‘farm to table’ approach to eatingright? At the most basic level ofunderstanding, farm to table is aconcept versus an actual type ofcuisine. It’s the attempt to eliminate asmany steps, processes, chemicals, andhands that interact with your foodbetween its raw state and the state inwhich you consume it.

The largest benefit to you is thatyou are eating a whole food with all thenutrients and yumminess natureintended. Let’s take that bag of carrotspreviously mentioned. When youpurchase a bag of carrots at a largeretail grocery store you have the carrotsthat were cut by a machine, placed in apreservative liquid, packaged in plastic,frozen, shipped, then thawed, andstocked. Whew!

However, a bundle of carrotspurchased at the local farmers marketwas hand harvested, hand cleaned,then set on the market table for you topurchase and prepare however youwant. Even just reading the stepscomparing these two choices reinforces

that the locally grown option is goingto provide you with a fresher choice.Fresh means not only more nutrientdense, but also means tastier too. Andthe same volume of carrots purchaseda local farmers market is going to beeasier on the pocket book as well.

While taste and cost are fantasticbenefits, the most important reason toapply farm to table habits is that therotation of readily available producewill broaden your nutritional intake.Mother Nature is a pretty smart cookie.She gives us acorn squash just whenour Vitamin C needs are at their highestand she gives us watermelon when weneed the most hydration!

Seasons infuse natural diversity inour food choices, which in turn exposesus to a wider range of vitamins andminerals. With modern foodprocessing this diversity can all butdisappear. TO PREPARE YOUR DISHPlace Short Ribs in a large roasting pan, in a single layer.Add beef stock. Cover pan tightly with foil. Roast 4 hoursat 350°. Remove foil. Roast 30 minutes more, meatshould fall off the bones. Remove bones. Discard *Strainstock into a saucepan. Reduce by half. Shred beef.

RED WINE SAUCEAdd Red Wine and shallots to another sauce pan.Reduce to a light syrup, add tarragon. Strain into beefstock. Keep warm.

HOLLANDAISE SAUCEAdd 6 yolks to a mixing bowl, add white wine. Over lowheat whip yolks and wine into a thick sauce consistently.Slowly pour in melted butter, whipping gently butconstantly until butter is incorporated into the eggs. Sethollandaise in a warm spot on the stove. Stir in cayennepepper and worcestershire sauce with a serving spoon.

TO SERVEToast english muffins add sliced tomatoes, place beefinto warmed beef sauce, put on tomatoes. Put vinegar inboiling water, add eggs to poach. Place poached eggson top of beef, spoon on Hollandaise sauce.

Scheduled for November11th to the 17th, The Savannah Food & Wine Festival is chock-full of JamesBeard Foundation celebrity chefs, guest winemakers, demonstrations,competitions, and of course oppor-tunities for foodies from all over to feastto their heart’s content. In its 1st year,the Savannah event already is making a bold statement with big names and a large gamut of opportunities to eat,drink, and become educated by thepros. The city’s Tourism LeadershipCouncil (TLC), under the tutelage ofMichael Owens, is obviously quiteserious about making Savannah a foodand wine destination and has hired JanGourley as their fearless leader. Jan hasbeen the successful organizer of festivalsin Hilton Head, Atlanta, Marietta andnow Savannah. Jan was thrilled at theprospect of bringing this type of festivalto Savannah, the face of southern
