Healthy Summer Recipes from Greenbrier Employees

Strawberry Spinach SaladGuadalupe Rosales
Gunderson (Rail Engineering) – Portland, Oregon
Ingredients:
Dressing:• 1 Lemon• 2 tbs White wine vinegar• 1/3 c Sugar• 1 tbs Vegetable oil• 1tsp Poppy seeds
Salad:• 1/4 c Almonds, sliced• 1 ½ c Strawberries, sliced• ½ Medium cucumber, sliced and halved• ¼ Small red onion, sliced into thin strips• 1 6oz Package baby spinach
Prep:
• For dressing, zest lemon to measure ½ tsp. Juice lemon to measure 2 tbl juice.
• Combine zest, juice, vinegar, sugar, oil and poppy seeds. Refrigerate until ready to use.
• Toast almonds at 250 degree F(use symbol) for 10-12 min or until lightly browned.
• Slice berries, cucumber and onion and combine with spinach. Toss with dressing and add almonds.
Berry SmoothieSally Terrazas

Ingredients:
• ½ c Unsweetened Almond Milk
• ½ c Blueberries
• 1 6oz Vanilla Yogurt (nonfat or low fat)
• 1 c Ice
Prep:
• Blend all the above ingredients in blender.
• Serve.
Two Bean & Rice SaladAlice Wright
Greenbrier Management Services (Fleet Maintenance) – Lake Oswego, Oregon
Ingredients:
• 3 c Chilled cooked rice
• 1 15oz can black beans, rinsed and drained
• 1 10oz pkg. frozen peas, thawed
• 1 c Sliced celery
• ½ c Chopped red onion
• 2 4oz Cans diced green chili peppers
• ¼-1/3 c Snipped fresh cilantro
• ¾ c Kraft non-fat Italian dressing
Prep:
• Combine rice, beans, peas, celery, onion, green chili peppers and cilantro.
• Pour dressing over rice mixture, toss to coat.
• Cover, chill until serving or for up to 24 hours.
Broccoli SaladHolly Vetter
Gunderson (Main Tool Room) – Portland, Oregon
Ingredients:
• 4 c Fresh broccoli florets
• 4 c “Craisins”
• ½ c Miracle Whip
• 1 tbs Apple Cider Vinegar
• 2 tsp Sugar
• 3 Bacon strips crumbled
Prep:
• In large bowl combine broccoli and Craisins.
• In small bowl combine Miracle Whip, vinegar, and sugar, pour over broccoli mixture, toss to coat.
• Sprinkle with bacon..
Baked Nutmeg BananasJoel Stacy
Gunderson (Accounting/Finance) – Portland, Oregon
Ingredients:
• 3-4 Bananas, peeled and sliced in half, lengthwise
• 1 Splash pineapple juice
• 1 Splash lemon juice
• 1 Splash apple juice
• 1tsp Honey
• 1 tbs Brown sugar or substitute
• ¼ - ½ tsp Nutmeg
Prep:
• Preheat oven to 450 degrees F.
• Line baking sheet with foil.
• Arrange banana slices on prepared baking sheet.
• Sprinkle remaining ingredients over banana slices.
• Cover with foil and place into pre-heated oven for 5 min.
• Remove foil and bake additional 3-5 min. until golden brown.
