For the former Bethany Tulloch, whogrew up on the Island, it’s truly agreat homecoming. After about adecade away, she’s now back home,as she, her husband and 18 monthold son Atley embark upon a new and exciting phase of their lives together.

Two years ago, in looking to the future, they bought the old Still farm on theX Line. But it’s not something that they’ve done on a whim. Fund ‘Young Entrepreneurs’ Grant, the young couple setabout making the plan a reality. And they’ve certainly donethat!

The historic old Still farm is now an enchanting blend of theold and the new. Pulling into the driveway,you are immediately charmed by the rusticlog farmhouse, the stately old barn andoutbuildings while off to the side sits asleek, modern addition – the new bake-house. With help from his wife, Nicholasdid all of the construction work, with theexception of the brick baking oven, whichhad to be built by qualified, professionalmasons.

The rest of the building is neat, tidy and or-ganized, devoted to ingredients storage, alarge,well-used work table and a large com-mercial mixer. And Oh! How the Higgins’do bake bread! We tried a few loaves our-selves to see what all the fuss is about, andnow we too are dedicated converts to theirtasty, organic offerings!

“Bread making is an ancient craft. It’s afundamental food.” says Nicholas. “We bakethe way people have been baking bread for

as long as there has been yeast for leavening.” Bethanyproudly adds “We use only organic ingredients, 99.9% of thetime.” The list of ingredients tends to be a short one: organicflour, salt and water. That’s it!

Yet, it’s not just about the wholesomeness of the ingredients;it’s also about what magic these young bakers can make withthem! They use a variety of recipes, wild yeasts, organic seeds,their own sourdough cultures and a long, slow rising process,before baking it in their wood-fired brick oven. The end re-sult is an assortment of truly delicious artisan breads, withsuperior flavour, texture and keeping qualities. They’re alsohealthier than commercial breads, since wild yeast works bet-ter to naturally ferment the grains, making them easier to di-gest and providing more vitamins and minerals for the body.

“We’re still experi-menting andtweaking ourrecipes, but it’s allintuition.” Bethanytells us. “This is noassembly line!”That’s for sure!Bethany andNicholas follow arigid schedulingroutine in bakingeach batch. A fullday is devoted tomixing each batch,which then sitsovernight orlonger, dependingon which types ofbread are being made. The oven is fired, usually from aroundnoon until about 6 pm, when the wood is removed and theoven is allowed to reach its optimum temperature for bakingthe next day.

Yet, the bakers cannot just toss their loaves into the coolingroom and go watch television. They must monitor the bread’sprogress, sometimes having to accelerate or slow down thefermentation, to get things just right for baking. After ‘baking’day, there’s lots of clean up work, before the cycle starts all

over again with the next batch. The work never really stops,but this young couple clearly loves what they’re doing.

Again, this is no hermetically sealed, climate controlled com-mercial bread factory. Each loaf baked could be subject tochanging temperatures, increased or decreased humidity …any number of variable influences, so no recipe is guaranteedto come out exactly the same every time – but that’s part ofthe charm of custom-made artisan bread. And it’s always deli-cious!

Their rapidly-growing list of devoted customers is proof ofthat. “The response has been just great!” says Bethany happily.“Way better than we expected!” Nicholas quickly chimes in.Both are quick to add that they have no plans to get too “big”in what they do.

They sell their breads at the Mill Market in the Sault onWednesdays from 3 pm to 7 pm and Saturdays from 8 am to 2pm. We think however that Islanders enjoyed seeing them atthe Old Town Hall in Richards Landing from 4:30 pm to 6:30pm on Wednesdays, although they’ve now stopped doing that,at least for the cold winter months.

Don’t worry though! You can still call them at 705 246-1803to place a delivery order or, for a real culinary experience, visitthem at their Bakehouse, located at 4159 X Line, a few min-utes outside Hilton Beach. They’re open for customers Fri-days from 4 pm to 6 pm.

“We want to stay local and we want to make something thatpeople want.” Bethany asserts. Nicholas adds “We’re workingon figuring out the best ways to serve our Island customers.”

We’ll look forward to hearing more from them about wherewe can find a new supply of their wonderful offerings.

Creating unique artisan breads can be a painstaking, compli-cated undertaking, but it’s clear that this young, dedicatedcouple know exactly what they’re doing!

A Scary Night on the Island!

This past Saturday was a beautiful day on St Joseph Island with brightblue skies that were clear enough to see the heavens.

Many people came out to enjoy our Island and found themselves over-whelmed by all of the crafters with wonderful hand-crafted items forsale - not only Made in Canada but made on St Joseph Island!

I do hope you came out to enjoy the ride to Hilton Beach andto visit with the artisans themselves in person. Volunteer or-ganizer Gloria Fischer said there were a total of 25 Vendorswhose goods you could explore.

Luncheon was supplied by the Hilton Union Public Librarywhile our own specialty coffee brewers St. Joseph Island Cof-fee Roasters provided the coffee. Owners Shane and HeatherHoffmann also had a great display of their coffees available topurchase.

Admission at the door was by donation, of which half wentto the St Joseph Island Museum.

It’s Time for the Gingerbread House Contest!

ALL RIGHT ALL YOU TALENTED AND CRAFTY PEOPLE,it’s that time again! The St. Joseph Island Public School Parentand Teacher Group, along with the help of The Sugar ShackGift Shop are again doing a Gingerbread House Contest.

The only rules are that the completed display measures nobigger than 12 x 12 inches, and all parts are made of ediblematerials.

Houses must be entered on Thursday, November 27 to theSugar Shack in Richards Landing. Voting takes place on the28th and 29th, with pick up on the 30th. We will be awardinga 1st, 2nd and 3rd place winner. All monies deposited into thevoting jars will be donated to the Parent and Teacher Group.

THE EAST ALGOMA ONTARIO PROVINCIAL POLICE(OPP) have laid 2 additional charges in relation to the July19th single vehicle accident that claimed the life of SarahBoyle, age 25 of St. Joseph Island.

The collision occurred on Highway 129 approximately 15kilometers north of Highway 554. Neither occupant waswearing a seatbelt and both were ejected from the vehicle onimpact.

Shane Rouleau, age 28 of Jocelyn Township has been chargedwith Impaired Operation of a Motor Vehicle causing Death,Operate Motor Vehicle with over 80 milligrams of alcoholcausing death and Criminal Negligence causing Death underthe Criminal Code of Canada. He will appear in Blind Rivercourt on November 6th.
