Starting with Birthdays…it then entered Office Farewell Parties, Promotions, Anniversaries, Weddings….so much so that nowadays no occasion is complete
without a Cake!
But the fact is…you don’t really need a reason to eat a Cake!!!
• The history of cake dates back to ancient times. The first cakes were very different from what we eat today. They were more bread-like and sweetened with honey. Nuts and dried fruits were often added. According to the food historians, the ancient Egyptians were the first culture to show evidence of advanced baking skills. The Oxford English Dictionary traces the English word cake back to the 13th century. It is a derivation of 'kaka', an Old Norse word. Medieval European bakers often made fruitcakes and gingerbread. These foods could last for many months.
• According to the food historians, the precursors of modern cakes (round ones with icing) were first baked in Europe sometime in the mid-17th century. This is due to primarily to advances in technology (more reliable ovens, manufacture/availability of food molds) and ingredient availability (refined sugar).
• It was not until the middle of the 19th century that cake as we know it today (made with extra refined white flour and baking powder instead of yeast) arrived on the scene.

• With the increasing Broadcast Media… We have dedicated Cooking Channels and increasing reality/competitive shows and events on Cooking like Master Chef, Farha ki Dawaat, Philips cooking competition and many others. This has created only more awareness about various food preparations including bakery products
• There has been phenomenal increase with the number of bakeries opening up across the country. These bakers are not only experimenting with various recipes, but also exhibiting their decorative and artistic cakes with other mouthwatering presentations of quick bites on various marketing platforms
• The ‘New Age’ Indians are world travelers & have disposable income. They want to experiment with their taste buds
The New Age
Bakery industry in India is today growing at 13-15% annually - It has an important place in the industrial map of the country. With rapid growth, improvement in standard of living, westernization, increase in spending power, changing eating habits of people and increased transition from the unorganized sector to organized sector, bakery products have gained immense popularity among masses.
Industry Structure -The bakery industry in India is mainly popular in the states of Andhra Pradesh, Maharashtra, West Bengal, Karnataka, Tamil Nadu and Kerala. Around 60% of production takes place in the unorganized sector.
The market size for the industry is pegged at US$ 4.7 billion in 2010 and is expected reach US $ 7.6 billion by 2015.

has huge history, and the people who prepare it with its technique are
close to its heart. Born in the City Of Dreams, Mumbai, Yogesh was

part of his foundational training.
• Having completed Hotel Management Diploma from Dr. D.Y. Patil College
Mumbai Yogesh has been part of many National & International Events &
Television shows.
• Having worked with the Celebrity chefs like Sanjeev Kapoor, Ranveer Brar,
Vikas Khanna to name the few, Yogesh holds his core competency in
Strategic Planning, Team mentoring & Vendor Management. Today, Yogesh
with his experience and industry knowledge for past decade, is Head of
Department at Sheila Raheja Insititute of Management.

• After completing his formal training in bakery and confectionery, Chef Javed honed his skills with stints at ITC Grand Maratha Sheraton, JW Marriott Mumbai, Oberoi Hotels, Mumbai and Novotel Mumbai where he was Executive Pastry Chef. Between these stints, he has also travelled across the globe to culinary hotspots like France, Belgium, Switzerland and Singapore to acquaint himself with the latest food trends including molecular gastronomy. He has also been the proud recipient of various culinary awards and represented India at the World Asia Pastry Cup 2012 in Singapore

Chef Brainard Colaco
• Brainard Colaco originally from Goa, but born and brought up in Mumbai,
has a long history with the hotel industry.
• Having enjoyed working in the hot kitchen. The passion for cakes and
desserts developed much later, He don’t know when and where it started,
but it started and there was no stopping.
• After a stint of a year with French company Accor, he joined Impresario
Entertainment who run the coffee chain Café Mocha as Head Executive
Chef. In his eight year stint with Mocha he expanded the brand from 1
outlet to 22 outlets all over India. He was also the youngest Corporate Head
Chef in India at that time.
• Today, Brainard runs a boutique Cake shop Moga in Goa & is a Consultant
to many Pastry related ventures.
