Skip the pricey bleacher seats at Churchill Downs and celebrate the Kentucky Derby closer to home with horses and hats, mint juleps and soul-warming southern fare
the most exciting two minutes in all of sports, it’s no surprise that the southern
panache surrounding the Kentucky Derby (held this year on May 7) spreads so eas-
ily to the metro. Kansas City actually has a winning history with the rosy race. The
1938 trophy went to a copper-brown colt named Lawrin, who was born and bred on
Prairie Village’s Woolford Farm, land that is now Mission Road Antique Mall, Corinth
Shopping Center and Corinth Downs. So really, it’s your obligation as a Kansas
Citian to throw a charmingly posh Derby party packed with springtime blooms (our
gorgeous palette of pink and peach petals was arranged by Beco Flowers), tradi-
tional Derby dishes and hat-bedecked guests. Don’t stress. We’re here with all the
resources you’ll need to jockey your bash from the first toast to the finish line.

table from tilting over-the-top, choose a simple, uncovered surface to anchor your flowery
spread and surround it with unfussy chairs. An elegant white linen napkin monogrammed and
bordered with pink and green embroidery and gathered in a blooming napkin ring, both avail-

throw your fete in the center of a thriving horse farm, find unexpected ways to work in eques-

curated collection of lovely lids. Here, she dishes on how to get that chic Derby style
THE MOD HATTER
Any sporting event that practically requires a fabu-
lous hat is a winner in my book. The tradition of
wearing an elaborate headpiece to the Derby actu-
ally started as part of the event’s dress code—the
big brims a necessity for horse racing spectators not
lucky enough to take in the trot from under cover of
Louisville’s strong rays. Now, hats have turned into
the ultimate social status symbols and have become
an opportunity to showcase personal style.
When styling my clients for special events, I use
the opportunity to incorporate trends they may not
get a chance to wear every day. Bold floral patterns,
sheer lace and mixed prints are all especially perfect
for springtime events, and a mixture of ladylike sepa-
rates looks wonderful when paired with an under-
stated shoe or other feminine accessories. One tip
on mixing prints: Look for pieces that share colors or
keep the size of the prints on the same scale. How to
choose the right Derby hat? The wider the brim the
better—and extra points for flowers and feathers.

the newly opened Tavern in the Village restaurant, puts his own
local spin on the southern standard with the Thai Tavern Julep;

THAI TAVERN JULEPCreated by David Smuckler of Tavern in the Village
2 ounces Basil Hayden's Bourbon
1 sprig sweet basil
1 sprig mint
1 slice English cucumber
.75 ounce house-made lavender simple syrup
Build all ingredients in julep glass, muddle, shake with vigor
and serve over cracked ice. Garnish with a slice of English
cucumber and a sprig of basil.

grits, cheese and onion soufflé
Serves 4
2 tablespoons butter
3/4 cup onion, chopped
3/4 cup leek, chopped
1-1/2 cups whole milk, divided
1/2 teaspoon salt
1/3 cup quick-cooking grits
4 large eggs, separated
3 green onions, chopped
1 cup (packed) grated hot pepper Monterey
Jack cheese (about 4 ounces), divided
Preheat oven to 425 degrees. Butter souf-
flé dish. Melt 2 tablespoons butter in large
saucepan over medium heat. Add onion and
leek; sauté 3 minutes. Mix in 1-1/4 cups whole
milk and 1/2 teaspoon salt, then grits; bring
to simmer. Reduce heat to low, cover and
cook until thick, stirring occasionally, about
5 minutes.
Meanwhile, whisk remaining 1/4 cup milk
and yolks in small bowl to blend.
Remove grits from heat. Stir in yolk mix-
ture, then green onions and 3/4 cup cheese.
Beat whites in medium bowl until stiff but
not dry. Fold into grits in 3 additions. Divide
mixture among prepared dishes (mixture will
come all the way to top of dishes). Spring with
1/4 cup cheese.
Bake soufflé until puffed and brown on
top, about 18 minutes. Serve immediately.

buttermilk biscuits
Makes 6
1-1/2 cups all-purpose flour
1-1/2 tablespoons sugar
1-1/2 teaspoons baking powder
Rounded 1/4 teaspoon salt
roasted beef tenderloin
with henry bain sauce
Serves 6 to 8
3 pounds beef tenderloin, trimmed and tied
as necessary
1 tablespoon canola oil
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup A.1. Steak Sauce
1/3 cup Heinz Chili Sauce
1/3 cup ketchup
1/3 cup Worcestershire Sauce
2 tablespoons Major Grey’s Chutney
Heat oven to 450 degrees and arrange a rack
in the upper third. Place meat on a rack over
a baking sheet and rub with oil. Sprinkle salt
and pepper on all sides and let meat come to
room temperature while the oven is heating,
at least 30 minutes.
Meanwhile, combine remaining ingre-
dients in a small saucepan and place over
medium heat. Cook, stirring occasionally,
until sauce is thick and coats the back of a
rubber spatula without running off, about 15
minutes.
Roast tenderloin until a meat thermom-
eter inserted in the thickest part reads about
100 degrees, about 10 to 15 minutes. Remove
from oven and increase the oven temperature
to 500 degrees.
While the oven is heating, brush all sides
of the meat with 1/4 of the glaze, then return
to the oven. Continue brushing 1 to 2 table-
spoons of the glaze on the meat every five
minutes until the thermometer reads 120
degrees (for rare), about 15 to 20 minutes.
Remove tenderloin from the oven, tent
with foil, and let rest at least 10 minutes.
Slice into 1-inch-thick pieces and serve with
remaining sauce on the side.

1/4 teaspoon baking soda
1/2 stick (1/4 cup) cold unsalted butter,
cut into 1/2-inch cubes
3/4 cup well-shaken buttermilk
1 tablespoon milk or cream for brushing
biscuits
Put oven rack in middle position and pre-
heat oven to 425 degrees.
Sift together flour, sugar, baking pow-
der, salt, and baking soda onto a sheet
of wax paper, then sift again into a bowl.
Blend in butter with your fingertips until
mixture resembles coarse meal. Add but-
termilk and stir with a fork until a dough
just forms (dough will be moist).
Turn dough out onto a well-floured
surface and knead gently 6 times. Pat out
dough on a floured surface with floured
hands, reflouring surface if necessary. Flour
the rim of a circular cookie cutter or drink-
ing glass and cut out rounded dough for
biscuits, flouring cutter or glass between
cuts. Transfer biscuits with a metal spatula
to an ungreased baking sheet, arranging
them 2 inches apart, and brush tops with
milk or cream. Bake until pale golden, 12 to
15 minutes, then transfer to a rack to cool
to room temperature.
