Number: PHM-SOP001 Version: 0 Printed copy good only until midnight on 7/19/2022 Pizza making in a kitchen oven Effective Date: 05/18/2015 1.0 PURPOSE This SOP describes the requirements for Pizza making in a kitchen oven. 2.0 SCOPE This SOP applies to the kitchen oven available in the kitchen at 88, central avenue, Jersey city, NJ 07306. 3.0 RESPONSIBILITIES It is the responsibility of the person, who is making a pizza with this kitchen oven. 4.0 PROCEDURE: 4.1. Set temperature: Rotate the temperature to the desired temperature of 300 degrees. 4.2. Set function to bake 4.3. Rotate timer past 40, then to 10 minutes to pre-heat before beginning to bake. 4.4. After oven is pre-heated, rotate timer past 40 minutes and then to the desired baking time or rotate timer to stay on. 4.5. Place the food on the high or low or both rack positions for 1 or 2 pizzas respectively. 4.6. If for 2 pizzas, Place the baking racks in the bottom rack slot and in the third rack slot (from the bottom). Preheat the oven, and then place the pizzas on the baking racks. Cook the pizzas for about one-half the recommended time, and then switch the baking rack positions to allow the pizzas to be uniformly cooked top and bottom. Rotate the dial to bake. 5.0 REFERENCE DOCUMENTS 5.1. Manual provided with the oven
