Melinda Adams is an inspiration, this bright bubbly

42-year-old took on the challenge of losing almost two-

thirds of her body weight and she’s winning.

Melinda Adams was an average sized baby who rapidly

gained weight in childhood and continued to do so as a

teenager and as an adult. Melinda says she didn’t eat vast

quantities of junk food or drink litres of sugary soft drinks

but she did eat large portions of food. “I obviously ate

more than I needed but I didn’t eat the amounts of food

most people associate with obesity,” she says.

“I come from a big family, my mum and dad struggled with

weight issues and other family members have problems

with their weight. Whether the problem is genetic or not

is irrelevant, I just wanted to get my weight under control.

My weight loss journey hasn’t been easy but the end of

the road is now in sight,” she says.

At 172cm (five foot eight inches) Melinda is taller

than average. Her weight billowed to 215 kilos, the

recommended height to weight ratio shows Melinda

should be around 75 kilos. Melinda says she tried every

method of losing weight and had some success with Jenni

Craig. “I went from 120 kilos to 85 kilos on the program

but I gained it all again, and then some,” she says.

“My problem is hunger; I would wake up hungry and eat a

big bowl of cereal. By mid-morning I would be ravenous.

Lunch would be a big meal, followed by afternoon tea and

a large serving of whatever was for dinner. I don’t have

food cravings although I do love chocolate and cheese.

My only issue was constant hunger and I eventually made

the decision to have lap band surgery,” she says.

A series of serious health issues saw Melinda spend time

in hospital. She had to cut short a trip to Peru and return

home to the Gold Coast for medical treatment. “I had an

infection in the soft tissue of my legs. It was exacerbated

by poor circulation, a common problem in seriously

overweight people,” she says.

“I had looked at the possibilities of lap band surgery when

I lived on the Gold Coast and later when I was based in

Brisbane. I was more than a little nervous until I discovered

along to a free seminar to explore the possibilities further.

few years. “I trained as a home economics teacher but

didn’t take up teaching as a career,” she says.

“While I was still at school and later at

university, I worked with a friend’s mum

who made beautiful bridal gowns. What she

taught me set the foundation for a career as a

couture seamstress,” Melinda says.

“In London I worked for prestigious couture

houses and helped create gowns for Princess

Diana and the Queen. I used to make my own

clothes when I was so big it was impossible

to buy anything, now I am a shopaholic. I now

wear a size 18, sometimes a 16. I have so

many clothes but they are interim clothes.

“As my weight loss journey continues, I buy

smaller and smaller sizes. My regular support

A matter of tasteScientists have discovered some people

have a taste for fat. Deakin researchers

Dr Russell Keast and PhD student Jessica

Stewart with colleagues from the University

of Adelaide, CSIRO, and New Zealand’s

Massey University found people with a high

sensitivity to the taste of fat ate fewer fatty

foods and were less likely to be overweight.

Dr Keast says we already know the human

tongue can detect fi ve tastes – sweet, salt,

sour, bitter and umami (a taste for identifying

protein rich foods).

“Through our study we can conclude that

humans have a sixth taste – fat,” he says.

“Fats are easily accessible and commonly

consumed. This suggests our taste systems

may become desensitised to the taste of

fat over time, leaving some people more

susceptible to overeating fatty foods. We

are now interested in understanding why

some people are sensitive and others are

not, we believe this will lead to ways of

helping people lower their fat intake and

aid development of new low fat foods and

diets,” Dr Keast says.

Calories, kilojoules and energy Confusion reigns supreme when it comes to food packaging. Australian law requires

manufactures to show how much fuel is in food. Fuel for the body can be called energy,

calories or kilojoules. All of these names denote the rate we burn the food we eat. Food that

is not burned through activity is stored as fat. Put too much fuel in a car and it spills out, put

too much food in the body and it turns to fat. A calorie is one unit of heat or fuel. A kilojoule

is exactly the same thing in metric measurement. A calorie equals 4.18 kilojoules. Calories

and kilojoules often appear on packaging as energy. A slice of bread may be shown to

contain 77 calories, 324 kilojoules or energy. It’s all the same.

A 60 kilo female aged 36 to 55 years with a reasonably active lifestyle needs around 1800 calories or 7500 kilojoules a day to maintain her weight. A 75 kilo man in the same age group and with a similar lifestyle needs about 2500 calories or 10,500 kilojoules a day to main that weight. Younger people need slightly more food, older people slightly less

Daily needsBurn it off Light exercise burns four calories (16.72 kilojoules) a minute.

These activities include strolling, easy cycling, light gardening,

housework, tennis doubles, golf, and horse riding. Moderate

exercise burns 7 calories or 29.26 kilojoules per minute. Options

include fast walking, moderate cycling, swimming, light weight

training, racquet sports, football and vigorous dancing. Burn 10

calories or 41.80 kilojoules a minute with power walking, heavy

weight training or cycling, skipping, advances aerobics or climbing

stairs. Vigorous sex burns about six calories or 25.08 kilojoules a

minute and it’s more fun than housework.

Broccoli is a rich source of vitamin

The 1950s saw the introduction of surgical

involved intestinal bypasses; a large

part of the small bowel was removed to

There are numerous theories about weight gain but the fact is most of us now eat too much and don’t move enough

Early man had no issues with weight management. Food had to be caught or found, hunting wasn’t

a hobby, it was hard work and people ate only the amount of food they needed to survive. In ancient

times, people fasted for religious or cultural reasons. This holds true today as Christians may choose

to fast or give up a favourite food during Lent and Muslims fast during Ramadan.

As people became more affl uent and food more readily available, excess weight became a greater

problem. In the days of the Holy Roman Empire, gladiators and their girls would fi nish a big night out

with a trip to a vomitorium for a good chuck in the company of friends. The dangerous binge and

vomit fad latest for centuries.

The link between food and weight was not understood until the 1700s. Not many people had a weight

problem as food was a scarce resource for the majority, only the wealthy ate well. Obesity was seen

by some as a disease, a punishment for sinful behaviour, or a sign of affl uence. Art favoured the fat,

think of those voluptuous ladies classic artists painted – but only the rich could afford portraits.

In 1727 Dr Thomas Short published Discourse Concerning the Causes and Effects of Corpulency. This

English physician was ahead of his time. He advised overweight individuals to follow a diet of ‘moderate,

spare and of the more detergent kind’. Some of his other ideas were a bit hit and miss. Dr Short

recommended the avoidance of swamp like areas where the air was moist and soggy. Perhaps this

theory was based on fl uid retention; lots of people appear to enlarge in hot, humid conditions.

In 1835 Belgian statistician Lambert Adolphe Jacques Quetelet developed the body mass index (BMI).

This was the fi rst mathematical calculation to measure body fat. The fi rst commercial concerns about

obesity and death were highlighted by the life insurance industry. Later the World Health Organisation

developed a system of categorising BMI based on health risk. While other measures now exist, BMI is

still widely used as a measure of weight related health issues.

The link between food and

weight was not understood until

the 1700s.

Calorifi c discoveries In the late 1800s chemist Wilbur Artwater

measured the energy content in food and

called it calories. The idea of counting

calories was under wraps until Dr Lulu Hunt

Peters published Diet and Health, with a

Key to the Calories in 1917. Dr Hunt Peters

recommended a daily limit of 1200 calories.

She promoted lifelong self discipline as the

key to successful dieting, little has changed.

Calories (kilojoules in the metric system) and

the idea of energy balance is still important

in weight management. The principal is

the same but the strategy has changes as

experts now realise willpower alone will fail

even the most determined dieter.

Banting recommended four meals a day based on green vegetables, fruit, meat and wine. He

advised people to avoid sugar, starch, beer, milk and butter. Wine and beer presented a problem in

Merry Old England. Water was too dirty to drink, coffee, and tea had not been discovered so most

people drank ale and wine from dawn ‘til dusk. Banting’s ideas about a relationship between diet

and weight didn’t impress the medical fraternity.

Knowledge gained over a few centuries did nothing to stop the outbreak of fad diets. There have

been a few good diets based on logic and science but these don’t outweigh the fads. The mad fads

include cabbage soup, vinegar, bananas, cookies, grapefruit, and coconut oil diets. The more bizarre

feature the tapeworm diet, cigarette diets, and the sleeping diet (it is diffi cult to eat while sleeping).

These were closely followed by the hallelujah diet, baby food diet, purple food diet, and others too

numerous to mention. As recently as the 1960s, bulimia was promoted as a healthy way to lose

weight. Binging and vomiting is not good for the system, the long term results are dire.

We could construct a diet dictionary from Atkins to Zen but it seems the fi rst low carbohydrate diet book was Letter on Corpulence, Addressed to

the Public published in the 1860s by English undertaker William Banting. Perhaps Mr Banting was tired of carrying heavy coffi ns but

he treated his own obesity using a diet designed to treat diabetes

Before starting this regime count the number of kilojoules or calories

(2000 kilojoules) a day. Around 3500 calories or 14000 kilojoules must

Here’s cheersWowsers and health nuts seem to take

a fi endish delight in putting the kibosh on everyone’s fun but how much

alcohol is too much

Health professionals and others deliver dire warnings about the

effects of over indulgence in alcohol. An Australian Government

study shows drinking that results in problems is considered an

addiction. People who depend on alcohol are no longer described

as alcoholics – even Alcoholics Anonymous refer to members as

problem drinks.

Most people enjoy kicking their shoes off and having a couple of

glasses of wine or beer after work. After work drinks with mates is

a western world tradition. Problem drinkers are said to be people

who consume more than six drinks a day; less according to some

experts. Alcohol damages the brain, causes cancer and heart

disease, wreaks havoc on the liver and causes weight to increase.

People who choose to give up alcohol or reduce their consumption

to moderate levels need a will of iron. It is easier not to draw attention

to abstinence, ask a friendly waiter to keep the wine glass topped up

with water, order soft drink or non-alcoholic cocktails.

A standard drink contains

but serving sizes are often

drink. Australian bars and

restaurants do not use

common glass sizes and

super sized glasses are the

current fashion on licensed

premises and in the home.

A standard drink varies according to alcohol content. In

general, a 100ml of wine, 30ml of spirits and 285ml of

full strength beer are standard drinks. Weight watchers

should note alcohol is high in kilojoules and has little or

no nutritional benefi t. A single nip of spirits (30ml) has 275

kilojoules on average, most wine comes in at around 300

kilojoules per 100ml, and 285mls of full strength beer has

about 440 kilojoules.

The kilojoules soon mount up and alcohol lowers resolve

so drinkers are likely to become eaters. Foods most likely

to accompany alcoholic drinks are high kilojoule fatty

snacks such as cheese and biscuits, salted nuts, pies

and other products with low nutritional value. People who

want to reach or maintain a healthy weight are advised to

avoid wine, beer, and spirits.

Experts recommended setting a limit on alcoholic drinks

and sticking to it. Start with non-alcoholic drinks and

alternate with alcoholic drinks. Drink slowly and try low

alcohol drinks. Eat nutritious low-salt food before or while

drinking, salty foods accelerate the need to drink.

The Australian Government website www.alcohol.gov.au offers some sensible advice on alcohol consumption. Responsible drinking is the focus. Guidelines recommend no more than two standard drinks a day for healthy men and women. Gender, age, mental health, drug use, and existing medical conditions can alter the affects of alcohol.

According to Drake Insurance representative Kelvin Fair many business people now

Some people enjoy a work out in the gym, a long walk, running,

swimming or other forms of exercise. The majority of people regard most

of these activities as torture but there is something to suit every body –

plump, lean, obese or athletic. Exercising alone is more benefi cial for

people who want a high intensity workout, according to a study from the

American College of Sports Medicine.

The study shows people are more likely to work harder on their own,

and even more so in a gym than outdoors. The study speculates this

is due to the variety of strength and cardio equipment available in a

gym. Researchers claim people do more exercise when focusing on

themselves rather than worrying about a friend’s pace or having a chat.

The study revealed people are more likely to exercise longer (but not

necessarily harder) when working with a friend. Working with someone

seems to prevent boredom. People are more likely to exercise for longer

periods outdoors as opposed to a gym. Choose a solo fast-paced push

or more leisurely exercise with a friend.

Get motivated with Emma Snowsill and Craig Walton

The Gold Coast’s golden couple has an

impressive collection of Olympic medals

but that doesn’t mean motivation comes

naturally. Emma says her greatest motivation

is shopping but she knows it’s important to

keep in shape and lead a healthy lifestyle.

Craig says he loves to exercise. “It keeps

me productive as well as fi t,” he says.

Emma and Craig start the day with a run on the beach and a swim. Emma says

regular exercise is all about habit. “It doesn’t matter what you do as long as you

do something every day,” she says. “Around 30 minutes of physical activity every

day is all it takes. Start with something that is relatively achievable, push it a bit

harder each day.

“That might be just adding an extra block to the morning walk or spending a few

more minutes on a treadmill. Results aren’t instant but they are consistent with

the effort put in. Even after the past 10 years of professional triathlon training,

getting out of bed at 5am every day never seems to be easy but it is all about

habit and consistency. The more you force yourself to do something, the easier

it will get,” Emma says.

Craig says working as a couple makes exercise easier. “We are both keen on

health and fi tness but not all couples share the same goals. If your partner won’t

work out fi nd a friend who will. It makes exercise fun and most people achieve

better results with the help of a little friendly competition,” he says. If you know

you have to meet someone at a certain place to exercise then you are more likely

to do it rather than making excuses at to why you shouldn’t,” he says.

At the recent American Society of Aesthetic Plastic Surgery meeting in Washington

DC, much attention was focused on advances in body contouring. This expanding

fi eld has seen a sharp focus on patient safety and improved contour after these

signifi cant procedures.

After a signifi cant stretch the skin’s capacity to rebound to its original size and shape

may be seriously impaired. This can leave unwanted skin folds along the upper arms,

the sides of the chest and the torso. The legs may also be markedly expanded and

the breasts may have had a huge stretch and then a dramatic loss in volume.

Innovations in the techniques are using some of these skin folds to be “recycled”

in such a way that the tissues that would normally be excised are tunnelled to help

recreate the curvature of the buttock and an appropriate shape to the breast.

Further adaptations in techniques have been designed to reduce the incidence

of delayed healing in lifts to the arms, trunk and thighs, as these long wounds are

commonly troublesome and slow to heal.

Of course the most common body contouring procedure, Liposuction, can have a

role to play in restoring shape. However if the skin elasticity is poor, liposuction in

isolation may give a defl ated look and occasion a great deal of skin irregularity due to

the loss of the capacity to shrink and smooth the contour down. Thus Liposuction

may be required to be combined with one of the more extensive techniques to

create good contour.

Another area where major advances have been made is in abdominoplasty

or “tummy tuck”. The abdomen is the area most commonly ravaged by weight

fl uctuations and pregnancy. The stretch to the skin is obvious, but there are usually

signifi cant pressures put on the abdominal muscle wall from the expanding uterus or

even weight gain. Thus an abdominoplasty combines removing this excess skin and

the attached fat with tightening of the muscle sheath to return it to its youthful tone.

This has a dramatic effect to narrow the waistline and fl atten the abdomen. The scar

is designed to be situated as low as possible to make it easier to conceal beneath

most clothing. The narrowing of the waistline can be further accentuated by limited

liposuction to the fl ank region which helps to taper and lengthen the waistline.

Adaptations in the abdominoplasty technique pioneered by the French have

enhanced the improvement in contour achieved with this procedure and at the

same time reduce the complication rate and shortened the recovery. The procedure

is most commonly performed under a general anaesthetic and hospitalization for

two or three nights is normal. Fine catheters may be left in the abdomen to trickle

local anaesthetic around the abdominal wall repair for two days after the procedure

which greatly enhances the comfort during recovery.

Much like a caesarean, the muscle wall repair is the feature that tends to inhibit

mobility after surgery. Most people will have one to two weeks away from work but

it takes four to six weeks to get back to full strength there.

The body contouring procedures are amongst the largest of cosmetic surgery

operations. However their effects on body contour can be quite dramatic and they

About 921,000 Australians are currently diagnosed with diabetes but

estimates show there may be as many undiagnosed. The total number of

Australians with diabetes and pre-diabetes is estimated at 3.2 million. It is

this country’s sixth leading cause of death. Excess weight is a key factor in

the alarming rise of type 2 diabetes, 60 per cent of cases could be prevented

or delayed by healthy eating and regular physical activity.

Bodies function by converting glucose (sugar) from food to energy via the

hormone insulin. Diabetes occurs when insulin is no longer produced or the

amounts are insufficient. When people with diabetes eat glucose (bread,

cereals, fruit, starchy vegetables, legumes, milk, yoghurt and sweets), the

sugar stays in the blood instead of being converted to energy.

In type 1 diabetes the pancreas (a large gland behind the stomach) stops

making insulin. The body can’t turn sugar into energy and attempts to

compensate by burning fats. This produces dangerous chemicals in the

blood and can cause a condition known as ketoacidosis. This condition is

potentially life threatening and must be treated with insulin.

Type 1 diabetes usually occurs in people under 30 years, but can occur

at any age. The cause is not known, but it has a genetic link and can’t be

prevented. It has nothing to do with lifestyle but a healthy lifestyle is very

important in helping to manage type 1 diabetes.

Type 2 diabetes is the most common form of the illness. It

is caused by genetics and lifestyle. Risk is increased by high

blood pressure, excess weight, lack of physical exercise, poor

diet and an apple shape body with extra weight around the

waist. Healthy eating, regular physical exercise, and medical

assistance is essential for people with type 2 diabetes.

Other types of the illness include gestational diabetes. This

occurs in a small percentage of pregnant women. Impaired

glucose metabolism or pre-diabetes shows in high blood-

glucose readings that are not high enough to be classified

as diabetes. This is a warning sign and type 2 diabetes can

be prevented through lifestyle changes.

All people with diabetes must follow a healthy eating and

exercise plan as well as medical advice and support though

tablets or injections. Regular low fat meals should be based

on high fibre carbohydrate foods. The diet should include

wholegrain breads and cereals, beans, lentils, vegetables

and fruits. It is important to balance the amount of food with

the amount of exercise and eat only what the body needs.

Regular physical activity can help manage blood glucose

levels, reduce cholesterol and triglycerides and maintain a

healthy weight. Fats have the highest kilojoule content of

all foods. Eating too much fat increases weight and makes

managing diabetes difficult. Saturated fats should be strictly

limited. These fats occur in fatty meat, milk, butter, cheese,

palm oil, solid cooking fats, snack foods, convenience

foods, copha, coconut milk or cream.

CarbohydratesCarbohydrates are a great source of energy. Most foods contain carbohydrates, fi bre, vitamins and

minerals. Very low carbohydrate diets are not recommended for people with diabetes. Regular

amounts of carbohydrate foods help maintain energy levels without causing dramatic rises in blood

glucose levels. People taking insulin or diabetes tablets may need between meal snacks.

All carbohydrate foods produce glucose but at different rates. The glycaemia index or GI

shows how fast a carbohydrate food affects blood glucose levels. Eat moderate amounts of

carbohydrate and include low GI high fi bre foods. Avoid foods with added sugars including

sweets, lollies and standard soft drinks. Modify recipes by using reduced amounts of

sugar or a sugar substitute.

Protein is essential but choose lean meat, poultry without the skin, seafood, eggs

(not fried), unsalted nuts, soy products such as tofu, dried beans and lentils.

Herbs, spices, garlic, chilli, lemon juice, vinegar and other seasonings may be

used but take salt sparingly. Enjoy a moderate amount of diet soft drinks and

low joule jelly. Tea and coffee with reduced fat milk and no sugar are fi ne but

herbal tea, water, and plain mineral water are better options.

Wesley Research Institute director

Professor Julie Campbell is a renowned

scientist who heads a team of dedicated

Health professionals guide mums and dads through the fi rst months

of parenting but the going can get tough as babies

become toddlers. Lay the foundations for a healthy future

and avoid the obesity epidemic by

encouraging good food choices ...

A healthy start

Babies grow at about seven centimetres every

three months. Toddlers grow at a much slower

rate (about 7 to 10 centimetres a year) but good

nutrition is still a priority. Breast milk and formula

provided adequate nutrition for infants but toddlers

need a variety of foods. This is the time to leave

bottles behind and teach kids to eat and drink

independently.

Toddler time (between 12 and 24 months) is crucial

to long term healthy eating habits. Children learn

to accept new tastes and textures. A wide variety

of nutrients should ensure satisfaction and normal

development. Depending on age, size, and activity

levels, toddlers need between 3200 to 4400

kilojoules a day.

Milk is an important part of a toddler’s diet. Milk

provides calcium and vitamin D to help build

strong bones and teeth. Toddlers should have 500

milligrams of calcium and fi ve micrograms of vitamin

D a day. Australian kids usually get enough Vitamin

D from a varied diet and outdoor play in the sun.

Usually kids aged 12 to 24 months can drink

whole milk. This helps provide calcium, vitamin D

and the fats needed for normal growth and brain

development. Reduced fat milk may be given if

overweight or obesity is a concern, and if there is

a family history of obesity, high cholesterol or heart

disease. After age two most kids can switch to

low-fat or non-fat milk. Discuss this with a doctor

or health professional.

Children may reject cow’s milk because it doesn’t

taste like breast milk or formula. If the child is at

least 12 months and rejecting cow’s milk try mixing

the milk with formula or breast milk. Gradually

adjust the mixture until it is 100 per cent cow’s

milk. Some kids don’t like milk, some may have an

intolerance to dairy products but this is relatively

rare. Discuss the options with a health professional.

Toddlers need nine milligrams of iron each day. Iron

defi ciency can affect growth and may lead to health,

learning and behaviour problems. A child who has

too much milk may reject iron rich food as their

appetite is already satisfi ed. Limit milk to about 600

ml a day. Serve iron-rich meat, poultry, fi sh, grains,

beans, and tofu. Include foods that contain vitamin

C (tomatoes, broccoli, oranges, and strawberries);

these improve the body’s iron absorption.

Keep high fat, deep fried, spicy and sugary foods

off the menu for as long as possible. Eventually

peer groups pressure will help cultivate a longing

for unhealthy foods but tastes formed in early

childhood are likely to last a lifetime. People who

prefer the natural fl avours of fresh wholesome

foods have the healthiest outlook. Talk to a doctor

about dietary concerns and don’t give children a

vitamin, mineral or food supplement without fi rst

discussing the products with a doctor.

Parlour P owner Katrina Peacock is a professional skin therapist and

an Association of Professional Aestheticians of Australia member.

She gained her Diploma of Beauty 27 years ago and went on to

work for leading international cosmetic houses.

Katrina furthered her career in Paris and trained with Clarins founder

Jacques Courtin-Clarins. She says the training included specialised

techniques in skin care including manual lymphatic drainage. “On

returning to Australia, I took up a position with Terry White Chemist

of years,” she says.

The good oilOils and fats are generally considered the

enemy in the battle of the bulge but not all oils

and fats are bad news. Fat is essential but it

must be the right type in the correct amounts.

There are two essential fats the body can’t

produce, these are omega-6 fat (linoleic acid)

and omega-3 (alpha-linolenic acid). These fats

help form parts of the structure of the brain,

eyes, ears, adrenal glands, joints and almost

every cell in the body.

The good oil is not hard to fi nd, it is present

in a number of foods including some types

of fi sh, olive oil and even chocolate. The best

source is fl axseed oil taken in a capsule as

a dietary supplement. Flaxseed oil is easily

destroyed by light and oxygen. Look for quality

brands in a dark glass bottle. Keep fl axseed oil

in the fridge. It cannot be heated but in liquid

form can be added to protein shakes or used

as a dressing.
