Texture Modified FoodAn innovative approach to puree meal production that creates a mousse like texture form. The puree is moulded for improved food appeal. Residents with Dysphagia will have an extended range of attractive, tasty and nutritious foods to eat.

A la Carte Meals An a la carte menu is available to compliment the four week rotational menu. Residents and family members can purchase a la carte meals on a user pays basis.

Vanilla Bean And Fig Jam

1kg fresh figs, washed and diced

(can use dried 500 figs add more 500ml water)

700g brown sugar

2 lemons, juice only

1 vanilla bean, halved

Twist of black pepper

METHOD

Put all the ingredients in a jam pan or a large saucepan to marinate overnight.

The next day bring the mixture to room temperature, cook the jam over low heat for 35/40 minutes when it starts to boil, remove the vanilla bean, scrape the seeds into the jam mix and mix well.

Sterilise the jar with boiled hot water, don’t need to dry, place in oven to dry including the lid.

Fill the jars with the jam, clean the edges of the jars and close them tightly.

Label with a swing tag

Preparation time: 15 minutes

Cooking time 35/40 minutes

Overnight soaking 12 hours

If using dried figs add 500ml of water
