    Vanilla Bean And Fig Jam

    1kg fresh figs, washed and diced

    (can use dried 500 figs add more 500ml water)

    700g brown sugar

    2 lemons, juice only

    1 vanilla bean, halved

    Twist of black pepper

    METHOD

    Put all the ingredients in a jam pan or a large saucepan to marinate overnight.

    The next day bring the mixture to room temperature, cook the jam over low heat for 35/40 minutes when it starts to boil, remove the vanilla bean, scrape the seeds into the jam mix and mix well.

    Sterilise the jar with boiled hot water, don’t need to dry, place in oven to dry including the lid.

    Fill the jars with the jam, clean the edges of the jars and close them tightly.

    Preparation time: 15 minutes

    Cooking time 35/40 minutes

    Overnight soaking 12 hours

    If using dried figs add 500ml of water
