We all know the official kickoff of summer is Memorial Day weekend, and we all know summer just isn’t the same without coleslaw. is is a great take to your Memorial Day Get Together. It can be doubled or even tripled for those larger events. Old-Fashioned Sweet-Sour Coleslaw 1 ½ lb. shredded green cabbage or 24 oz. package of carrot/cabbage coleslaw 1 teaspoon salt 2/3 cup sugar 1/3 cup vinegar 1 cup whipping cream (do not whip) Works well to mix sauce 3-4 hours ahead and refrigerate. Add to cabbage just before serving. This recipe came from a tiny hotel in Lindsborg, Kansas many years ago. World Environment Day was established by the United Nations General Assembly in 1972. It is commemorated annually on June 5th. To celebrate the 2017 theme, Connecting People to Nature, we offer a traditional folk tale. Journey with us to a village somewhere in the part of the world we now call the Democratic Republic of the Congo. People in the village fell asleep each evening to the lulling sounds of frogs that lived in a nearby marsh. One night the frogs kept the village’s chief awake. e demanding and selfish chief ordered the frogs to be quiet. When the frogs ignored him, he became furious. e next morning, the chief commanded the villagers to kill every frog. Fearing the chief’s wrath, they ran to the marsh with spears and sticks. One elderly woman refused. Recognizing her age, the chief decided to be merciful. “You’re too old to catch frogs, anyhow.” Her response stunned him: “Oh! I am not standing here because I am old. I am standing here because you are making a serious mistake. ere is something you need to learn. I will tell you what that is!” e chief retorted, “What can an old woman like you teach me?” She answered, “is is what I can teach you: All things are connected.” “What does that mean?” shouted the chief. “You will see,” she warned. An eerie silence kept the villagers awake that night. e chief -- pleased with his power and dominance -- slept soundly. A few days later mosquitoes swarmed the village. Of course, they awakened the chief. He yelled his vicious threats. e mosquitoes just buzzed and bit. He called the villagers together again and ordered them to kill every mosquito. Some tried. Others packed their belongings and leſt. ey knew the situation was impossible. With no frogs to eat the larvae, there would be more mosquitoes every day. Each day more families leſt the village until there was no one leſt to rule. at’s when the chief understood the elderly woman’s words. “Now I understand. All things are connected.” But, alas, it was too late. We all know the official kickoff of summer is Memorial Day weekend, and we all know summer just isn’t the same without coleslaw. This is a great take to your Memorial Day Get Together. It can be doubled or even tripled for those larger events.

Old-Fashioned Sweet-Sour Coleslaw1 ½ lb. shredded green cabbage or 24 oz. package of carrot/cabbage
