The Salsa ScoopThe word salsa means “sauce” in
Spanish, and there are countlessrecipes and flavor combinations of thispopular condiment staple. Dip into thisserving of some favorite salsa styles:
Salsa roja. Meaning “red sauce”since it uses cooked tomatoes as abase, this is often simply referred toas salsa, especially in the U.S. It canbe thin or chunky, mild or spicy, withchili peppers, onions, garlic andcilantro rounding out the flavor.
Salsa verde. This salsa is similarto salsa roja but instead of tomatoes, uses tomatillos, a tart fruit that lookslike an unripe tomato, resulting in itssignature green, or verde, color.
Pico de gallo. The name of thissalsa means “rooster’s beak,”referring to the way the dicedingredients can be picked up betweenthe fingers, like a rooster pecking atthe ground. Also called salsa
fresca, or “fresh sauce,” because it isuncooked, pico de gallo is made fromraw tomatoes, chili peppers, onionsand cilantro, with a splash oflime juice.
Mole poblano. Mexico is home tomany types of sauces called mole, pronounced “moh-lay.” Mole poblano, the country’s unofficial national dish, isthe most popular. Roasted chilipeppers, unsweetened chocolate andalmonds are the key flavors in thisrich, dark sauce, which takes hours tomake. It’s typically served over meat.
