Irh WskeyIn order to be called an “Irish Whiskey”, distilled spirit must beaged in wood barrels for a minimum of 3 years a minimum of

40% ABV. distilled and matured on the island of Ireland.

There are several types of Irish Whiskey including;

Pot S Irh WskeyPot still whiskey is whiskey made from a combination of malted barley and unmalted barley and is distilled in traditional copper pot stills.

Pot Still Irish Whiskeys are characterised by full bodied flavours and a wonderful creamy mouth feel.

Blended Irh WskeyA blended whiskey is a combination of 2 or more styles of whiskey

grain, pot still or malt whiskey).

Gra Irh WskeyGrain whiskey is typically produced from a mash of maize and malted barley. Grain whiskey is lighter in character than pot still whiskey and generally

the characteristics display delicate, fragrant and floral notes.

Ma Irh WskeyA single malt whiskey is made exclusively from malted

barley and is distilled using a pot still.

MeOur whiskeys are described in terms of Nose, Taste and Finish

NoseTerms to describe the ‘nose’ can vary from light to rich,

robust to mellow and simple to complex. The addition of a little water brings the full bouquet of the

spirit to the fore. However, be careful when adding ice to a whiskeyas it can mute the aromas slightly.

TAs the first sip is held in the mouth, the numerous, acutely sensitive taste

buds of the tongue differentiate the taste profile of the whiskey. The tastes that you will experience are often described in termsof the following; Sherry richness, spicy, nutty, vanilla, dark chocolate,woody, honey, full bodied and creamy. A good whiskey will stimulate

your taste buds to enjoy many of these flavours.

FhHaving savoured the taste, the finish refers to the more definedflavour that is left in your mouth. This may be quite different from

the initial sips, leaving either a sweet, dry or smooth essence on the tongue.

*Chill filtering: Prior to bottling the whiskey is cooled to -2C so certain elements such as fatty acids drop out at this temperature.

For whiskeys of 43% or more this is not needed. At 40% a haze can form if its not chill filtered.

DINGLE SINGLE MALT, BATCH NO.1 € 7.50When the first drops of new spirit started to flow in the Dingle Distillery ona cold November night in 2012 something momentous was happening. PADDY €4.00In 1920s and 1930s Ireland, whiskey was sold in casks from the distilleryto wholesalers, who would in turn sell it on to publicans. Cork DistilleriesCompany was very proud of the strong reputation which its whiskey hadearned and wanted to prevent any fluctuation in whiskey quality due tobonder underhandedly diluting the casks. Thus, the company was one of thefirst to bottle their whiskey, which became known as Paddy. REDBREAST SINGLE POT STILL 12-YEAR-OLD €7.50Redbreast dates back to 1903 when John Jameson & Son entered into anagreement with the Gilbeys Wines & Spirits Import Company to supplythem with new make spirit from their Bow St. Distillery. SCOTCH WHISKEY TEACHERS €4.40It is said that William Teacher would not give his name to his blend untilhe had found perfection. Highland Cream is that whisky. The original master blender was Jean Fillioux, who joinedthe company in 1800. GIN LISTDINGLE GIN €5.50Dingle Original Gin is made in small batches of 500 litres. In terms of itsbroad style, this is what is categorised as a London dry gin but theunique character and flavour come from our painstaking and originalchoice of botanicals. This secret combination of flavour elements aremacerated in spirit for 24 hours. Then, when the spirit is distilled, itpasses through a flavour basket in the neck of the still.
