From The Manager

Can you believe it’s been a little over a month now since Chef Ann has been on board? We are very excited about her creativity and the new dishes she has brought us. Hopefully you have had an opportunity to join us for a meal to try her new menus. This fall Chef Ann is going to tantalize our tastebuds with some creative dinners. Be on the watch for more information! Grab your calendar and save the date! On Monday, December 7, Broadway performer Franc D’Ambrosio will be joining us for a fun-filled night of music! Franc D’Ambrosio is best known for his impressive portrayal of the “Phantom” in Andrew Lloyd Webber’s Tony Award winning Musical, The Phantom Of The Opera. During his performance with us, he will be singing a variety of holiday and Broadway tunes. D’Ambrosio has performed at several of my previous clubs and the members rave about the great show! More information is on its way soon! Having just completed the 2014-15 fiscal year, I wanted to give you an update on the use of our capital dollars. Last year we spent $245,000 on facility improvements. As part of these improvements, we spent $167,000 up-grading our banquet spaces with new carpet, new AV equipment, fresh paint, new chairs and a new stage. We also spent $10,000 for new front doors on the clubhouse. The new barstools in the Grill were $7,000 and the cooling system for the wine storage was $5,000.

There was $18,000 spent updating both the member’s kitchen and the banquet kitchen and our HVAC up-grades cost $6,500. The funds for these im-provements came from several different sourc-es. $150,000 was a draw on our Line of Credit with Umpqua Bank and additional funds were used from the Capital Assessment account ap-proved by the membership two years ago. All of these funds are outside of the designated funds used for Golf Course improvements and equipment. It is important to continue the trend of not only maintaining our facilities, but improving them as well. We have just re-cently submitted the Capital request for this year, 2015-16. Once the budget is approved by the Finance Committee and the Board, it will be posted to our website. As we slip into September and the fall months, I want to wish all the participants of the Southern Oregon Golf Championships good luck and congratulations! I would also like to send out a “Thank You” to the many volunteers who have shared their time with us. We really appreciate the time and efforts you put in volun-teering with this event and helping us showcase Rogue Valley Country Club.

Book Club - September 8The Book Club will meet on Tuesday, Sep-tember 8 at 4pm to discuss In the Kingdom of Ice: The Grand and Terrible Polar Voyage of the USS Jeannette by Hampton Sides. Alan Holmes/Dom ProvostSaturday, October 17, is our annual Alan Holmes/Dom Provost Scholarship Tournament. The tournament features a two-person scramble (Men or Women) with a 1:00pm shotgun start. A no-host dinner, raffle and awards follow golf. This is the Club’s annual scholarship tournament. The event provides funds for scholarships given to local students in-volved in golf. Grab a partner, fill out an entry and join the fun for a great cause helping student athletes with scholar-ship opportunities. Entries will be available in the Golf Shop in mid-September. The fee is $100/person. This is sure to be the best raffle of the year and it all goes to the kids.

Hole in OnesOn July 24 our Senior Men’s Club President, Jim Buck, used a 7 iron to ace the 9th hole. The shot was witnessed by Howard Hunt, Bob Zoll, Bill Vaughn and Mike Hornbeck. Jim was playing in the Rogue Valley Seniors tournament and his teammates greatly appreciated the score on that hole. Way to go Jim! Jim is in the pot.

On Saturday, July 25, Gary Ward was playing with his wife, Sue, and Steve and Kathy Jones when he put a perfect swing on a 9 iron. That swing was executed on the 4th hole of the Rogue Course. Great shot Gary! On the first day of the Ladies Invitational Marcia Skinner used a rescue club to ace the 9th hole. Marcia was playing with Annette Holman, Tina Blum and Teri Mayer. Marcia is in the pot. Way to go Marcia!

Age ShooterOn July 25 Dave Simms was playing with Tom Michaels, Bruce Mendelson and Todd Anderson when he shot 75 from the Gold tees on the Rogue Course. Dave is 79 years. Quite the round Dave! Congrats.

As you read this, the major events on our tournament schedule have just passed and fall is on the doorstep. The Club Championship with its very own brand of pressure is in the record books. The Southern Oregon Championship, that until I came to Rogue Valley CC 10 years ago, I had no idea of the scale and production associated with it. Let alone the big time tournament pressure! Not all of you are participants in these events, you most likely have your own versions of pressure-packed golf situations. You don’t need a gallery to feel the “heat.” So, how do we turn down the heat? And just because we’re not playing for millions doesn’t mean we don’t get white knuckles and sweaty palms. I started playing golf over 55 years ago and I still feel it. But why? My livelihood doesn’t depend on it. If I lose my grip I’m not falling down a cliff. If my ball doesn’t turn the desired way I’m not going to crash into the wall on turn three at Indy. Why do the announcers on TV talk about how much “courage” a player showed in successfully completing a particular shot...especially when that shot is one we can do over and over on the range or when the round doesn’t mean so much. I thought

courage was needed to do things like go into battle or be a police-man. But I get it. This game is tough. It’s just you! Unless of course you are part of a team and then you really feel the pressure. So, how do we learn to let go? How do we learn to give it “our best” and accept the fact that the outcome is going to reflect our best a small percentage of the time? Ben Hogan figured that he hit approximately three shots a round exactly as he meant to hit them. Three!!! Now for the answers to all of the above. Sorry, not here. I’m still searching. Oh, that doesn’t mean I haven’t had my share of epiphanies in my career. But the truth is, the process is lifelong. I think it has to do with deciding to enjoy the journey as opposed to being wrapped up in the destination. Remember, as kids we were told as we embarked on the family vacation, “getting there is half the fun.” Hmmm. Maybe more. Fabulous books abound on the topic. I have about 20 (maybe more). I’m going to read them...again.

I am assuming that by the time this Bulletin article is in your hot little hands, your Club will be in full preparation or execution mode for the Southern

Oregon Golf Championship! With that said, I cannot believe how quickly this summer has flown by. Being a component of the team that puts on this wonderful tournament is such an honor. I am happy to see the competing Members and guests alike enjoying such a great week of golf and enter-tainment. This year should be no different! This year’s irrigation season has been a tricky one with all of the extreme heat of June, sometimes cool cloudy skies of July and the ever present drought and water restrictions. With that said, I am proud of your golf course maintenance staff for always answering the call no matter how hot it may have been, and I hope you can see the great course condi-tions reflect that! The Medford Irrigation District is saying that we will be lucky to have usable water in the canal by the end of August. What this means for us, Rogue Valley Country Club, is that we have an extremely high probability of needing to utilize and purchase city water. I received formal permission to purchase city water as needed. As a reminder

to all golfing members, RVCC has a policy that bills the cost of all water used for irrigation purposes to the golf member-ship. Before that alarms you, I estimate that each golfing member, at most, would be required to pay about $0.75 per day for approximately 60 days. This cost would include watering greens, tees, fairways, and very little rough. Water usage does trend downward as fall approaches and daylight hours diminish. I take great pride and responsibility in being your Golf Course Superintendent, and I understand the water situation we are facing and how it can directly impact your monthly bill. I will continue to maintain RVCC in the condition that you have all become accustomed to, while using only the minimum amount of water necessary, to keep your monthly bill in order. Thank you for your continued support and cooperation during the drought situation we are experiencing. FLIP FLOPS & LEMON DROPS TOURNAMENT - July 26-28Kudos to Toni Watkins for chairing the ever suc-cessful ladies tournament. She and her committee of Deb Anderson, Trina Jones, Tory Nieto, Tammie Allen, Angela Galante, Barb Pinkham, Lynn Smith, Deb Stuart, Pam Schepis, and Marcia Skinner once again organized a fabulous three days of golf which showcased our golf course and amenities for the participants. A horserace, followed by dining on the Terrace, started off the festivities on Sunday after-noon. On Monday, Best Ball on the Rogue Course was followed by a luncheon featuring a pasta bar. Casino games were set up downstairs and were a hit by the “gambling” ladies. Others gathered on the terrace after they finished shopping in the Pro Shop to spend their tee prize certificate. On Tuesday, a Scramble format was played on the Original Course followed by the awards luncheon. Special thanks to all of the RVCC staff who helped make this a memorable event. Out of town teams are already looking forward to playing in the tour-nament next year.

RVCC Pictoral Membership AlbumRogue Valley Country Club would like to announce that we will be producing a Pictorial Membership Album. With this member recognition program, we are confident that our Members, and incoming Members, will have more opportunities to get to know one another. It has been a very exciting week here at Rogue Valley Country Club settling in as your new Executive Chef. Thank you so much for the opportunity to lead your culinary team into a fresh new vision celebrating the amazing abundance of fresh produce, local meat, cheese, chocolate and wine that the Rogue Valley has to offer. We have already made many positive changes in lead-ership in the kitchen by hiring our new morning Sous Chef, Chris Berg. Chef Chris and I have worked together to create and implement an exciting new breakfast menu that includes dishes like the Surf & Turf Omelet and Crab Cake Eggs Benedict with Chili-Lime Hollandaise. We have brought in fresh huckleberries for the Nuts & Berries French Toast dish, fresh figs are featured in the Hillcrest Orchard Crepes and “La-Di-Da Lavender” Cheese from the Rogue Creamery is highlighted in the La-Di-Da Lavender Hot Cakes dish.

The staff has graciously been giving me tours of the Rogue Valley and local farms enabling us to collaborate with Hillcrest Farms, Dunbar Farms, Rogue Creamery, and Lille Belle Chocolates as well as other local purveyors to bring in fresh, local offerings for the new menus. My pas-sion is Asian Fusion so we have been training the culi-nary team in the art of Sushi rolling and composition. We hope to be introducing Sushi to the bar menu as well as

Asian-inspired dishes on the new lunch and dinner menus. We will be offering Sushi on the Terrace for the Southern Oregon Golf Championship as well. Many members are anx-iously awaiting the new menus. We have been taking time to select the best product and properly train the culinary team in new techniques and dishes, so it will be worth the wait! We have made several structural adjustments to the culinary team to ensure cleanliness and quality improve-ments are being implemented and maintained in the Food & Beverage department. I am pleased to announce two promotions within the culinary team: Ron Lewis has been promoted from Pantry Cook, which handles cold dishes such as fruit platters, salads, cheese platters etc., to Kitchen 73142Supervisor. Kyle Davis, a culinary graduate who has been with RVCC for three years, has been promoted from Pantry Cook to Line Cook. Hector, from the front of the house, has always dreamed of being a chef, so we are

giving him the opportunity to begin his training in the kitchen. Also, we have hired another new pantry cook, Nick Gomez, and he has been an enthusiastic addition to the team. We have brought in Ecolab Cleaning Solutions specialist Tony Worthington to lead a training on properly operating the dish equipment and cleaning products and have already experienced successful improvement in the cleanliness of the dishes and cutlery. We have promoted Pablo Valesquez, a dishwasher at RVCC for 10 years, to Dish Supervisor to ensure this new success is maintained. The new structure has already drastically improved the functionality of the kitchen operations, and the team has been very positive in cooperating with all the changes this month. My culinary experience includes mentoring under Five Diamond chefs at The Greenbrier Sporting Club of The Green-brier in White Sulphur Springs in West Virginia, culinary super-vision and management in several large, high volume hotels and resorts, as well as Restaurant Management and Execu-tive Chef experience of several private restaurants where I received excellent training in the administrative and leader-ship skills needed to ensure financial responsibility of a Food & Beverage department of a club your size. I hold ServSafe Management Certification, membership with The American Culinary Federation as an Executive Chef, and membership of the Women Chefs and Restauranteurs Association which provides me with a great deal of continuing education and support in this industry. Staying current with culinary trends is very important, so our culinary leadership team will be competing in local and regional culinary competitions in the near future. I believe that competitions are a great way to participate with the community and stay on the cutting edge of culinary trends, while also keeping the team excited and inspired in the creative field of Culinary Arts. In addition, we are planning

to host a Culinary Cooking Competition here at RVCC for local chefs to compete using local products. I am very excited to be here, and look forward to bringing the Food & Bever-age area of our club up to the standard that you as mem-bers deserve. Thank you so much for the opportunity.

drop-ins or coached sessions. It’s a great chance to connect with other players and their groups. Our two pros, Kory and Andris, will make it chal-lenging and fun.

2015 USTA League TennisThe 2015 League season is underway. What a great way to hone your game and spend time with other teams in and around our area.

MIXED 40 & OVER (SINGLE WEEKEND LEAGUE)The RVCC 40+ Mixed league team played July 31 through August 2 against other teams from the area and as far away as Bend and Salem. It was a lot of fun and we had some good competitive matches. Although we didn’t win this time, we honed our

skills and tempered our game for the next time. Much of the fun is seeing old friends from other clubs and meeting new ones.

MiscellaneousDon’t forget you can order food to go! It can be ready for pick-up when your game is over and is an easy way to meet your food minimum requirement.

BALL MACHINEIf you haven’t made use of the ball machine to groove in your strokes, maybe it’s because you just aren’t sure what to do. To get the most out of your time, try using these TIPS:

Target Tennis professionals tell us to have a target in mind on each shot. Often in the heat of a game, we forget that advice, but by practicing on the ball machine with such purpose, it will become more automatic in your game – even in those critical moments.

Interval Be sure the interval between each ball gives you adequate time to see your shot land in the target zone before the machine launches the next ball.

Position Direct the balls to a sequence of positions to develop your shot making skills while moving. Our machine can be pro-grammed to send a sequence of six balls to your chosen areas of the court.

Speed Set the delivery speed so you are able to return most of the balls. As your strokes and Spin improve, you can increase the speed. Practice returning balls that have topspin, un-derspin, and flat (neutral) balls. That way you will be prepared for whatever type of shot your opponent sends across the net.

The annual Rogue Valley Country Club Club Championship was held August 14-16. The three days were hot and the course was tough, but those who participated enjoyed the reception and SOGC-style gala on Friday night. The awards banquet on Sunday afternoon had a lot of laughs while friends came together to congratulate each other on a fun and competitive tournament.

Does the thought of climbing up a hill during your walk make you turn the other way?

Relax. Look at it as an opportunity to train your Core!

Walking up hills is also a great way to increase the intensity of your workout without having to run.

Besides a great core exercise, I get a great butt workout while exercising my pelvic floor muscles to keep my organs propped up!

Here’s how:

First locate your spine. It starts inside your skull between the ears and behind the eyes. It is stacked and goes through the middle of your body, like an Apple Core.

It inserts into the pelvis, then the tailbone is tucked neatly between your sitz bones.

This tailbone, by the way, is attached to all the pelvic floor muscles, the muscles responsible for spine and organ health, so just by using your body this way you are also elevating your organs for optimal health!

FEEL this Apple Core spine in the middle by releasing all outer periphery muscle tension.

Put your hands at the groin in the crease. IMPORTANT: This is where your body folds. This is the joint. Do not fold at L 4 or above. That will only cause back pain and knee pain.

Now, with your hands in the crease, send your butt back (downhill) reaching away from your head.

For optimal balance and control, now activate your imagination.

Imagine that your tailbone starts releasing back and becomes a big Dino Tail dragging then lifting up behind you.

Arms freely hang in front of your body.

Now effortlessly take off up the hill like a Velociraptor.

The really great thing is that you go downhill the same way!

No special technique, just be an Apple Core with a Dino Tail!
