Rotatouille Fun, Food, and Fellowship for a Healthy Lifestyle February 2017 These Indian recipes are from my daughter’s mother-in-law. I hope you enjoy them as much as we do! Indian Moong (mung) Dal (moong bean soup) 1 cup of yellow moong (mung) bean, without skin ¼ t. salt ½ t. turmeric 1 T. chopped onions ¼ t. cumin ½ t. ginger, chopped ½ t. garlic, chopped 1 T. of chopped tomatoes ¼ t. paprika 4 cups water Clean moong bean thoroughly with water, and then put it in the pan with 4 cups water, turmeric, & salt. Mix and bring to a boil. Turn down heat and simmer until the dal becomes creamy. The consistency of the dal should not be watery. While cooking, you can mash a few lentils with the back of the spoon. Add water if it’s too dry. Garnish: Separately, heat oil or ghee and add cumin, onions, ginger, garlic, tomatoes, and paprika. Sauté lightly until light brown. Add this garnish to the moong dal and stir. Salt to taste. “Minestra di Lenticchi” was a Sicilian New Year’s traditionBUT my Nonna made it all yearround. It was a symbol of goodluck and prosperity as the greenlentils symbolized money.

Depending on the time of year,and what was available in ourgarden, we would pour the soupover fresh spinach or escarole.Extra flavor and nutrition!

Minestra di Lenticchie(Sicilian Lentil Soup)

1 lb Lentil beans ¼ cup Olive oil ½ cup Minced carrots ½ cup Diced celery ½ cup Diced onions 2-3 cloves Minced garlic 1 tablespoon Chicken base (better than bouillon brand)low sodium

3 quarts Water 1 (14 ½) oz can San Marzano diced tomatoes or Pomi (comes in carton) Sea salt to taste Fresh ground pepper to taste Crushed red pepper flakes to taste Fresh grated parmesan garnish

1. In a large pot, add olive oil, andsauté carrots, celery, and onion,approximately 8-10 minutes. Addgarlic, and sauté (be careful not tobrown) approximately 2 minutes.

2. Add lentil beans and water andbring to a boil. Add chicken baseand undrained tomatoes.

3. Cover and simmer approxi-mately 30-40 minutes, stirring oc-casionally, checking to see ifvegetables and lentils are tender.If the minestra seems too thick,just a personal preference, addhot water, mixed with a few tea-spoons of the bouillon.

4. Season to taste and serve withfresh grated parmesan.

5. OPTIONAL: To make this amore “hearty” dish, some Italianslike to add “spaghetto spezzato”which means broken spaghetti,or ditalini pasta. I personally liketo cook the pasta separately(just a ¼ pound or so) and addwhen minestra is finished.

We have held an "after hours" get-together at a local

restaurant, and it proved successful in recruiting new

members. We have scheduled another get-together next

month to wrap up our "March madness" membership

recruitment and to welcome new members.

Our club recently participated in a local "Special Olympics"event held at Lorain County Community

College. As part of our service committee, our members, as wellas our Interact high school students, and our inbound studentsfrom Japan, Taiwan, and Belgium, were a part of our club's

"Spirit Squad". We cheered for the Special Olympics basketballteams, who played their hearts out, and I'm sure they

appreciated our cheering section and halftime performance onthe court! It was wonderful seeing our members come together on a Saturday morning to give meaning to "Service above Self"

Melanie’s Light Chocolate Truffles1/3 cup semisweet chocolate chips4 oz. reduced fat cream cheese1/3 cup plus 2 tsp baking cocoa, divided1/4 cups plus 2 tsp. confectioners’ sugar,divided

In a microwave, melt chocolate chips; stir until smooth. Set aside.

In a small bowl, beat cream cheese until fluffy. Beat in 1/3 cupcocoa and melted chocolate. Gradually beat in 1-1/4 cups confec-tioners’ sugar. Lightly coat hands with confectioners’ sugar; rollchocolate mixture into 1 inch balls. Roll in remain-ing cocoa or confectioners’ sugar.Cover and refrigerate for atleast one hour.

The mission of the annual Auction is to create an at-mosphere that fosters the idea of community, generos-ity, and awareness of Rotary Club of Maumee. RotaryClub ofMaumee has been organizing and hosting thisauction for 36 years, with the proceeds going to theMaumee Rotary Service Foundation. Local businesses,community leaders, and fellow Club members cometogether for this one evening each year to support theactive and vigorous philanthropy of our Service Foun-dation. The collective efforts during our previousevents have raised hundreds of thousands of dollarsthat have been used to support both local and inter-national giving. The funds raised are a vehicle for theService Foundation to continue its long standing tradi-tion and reputation of strong support for worthwhilecauses.

Cannellini Bean Salad1 large sweet red pepper2 cans (15 oz. each) white kidney or cannellini beans, rinsed and drained

1 medium red onion, sliced and separated into rings¼ cup minced fresh basil3 T. red wine vinegar2 T. olive oil¼ t. salt¼ t. pepper

Cut red pepper in half, remove seeds. Broil pepper, cut sidedown, 4 inches from heal until skin is blistered and charred –about 8 mintues. Immediately pl1per in small bowl. Cover andlet stand for 15-20 minutes.

Peel off and discard charred skin. Cut pepper into strips andplace in large bowl. Add beans, onion and basil. In a jar with atight fitting lid, combine vinegar, oil, salt and pepper. Shakewell. Pour over bean mixture.
