Cookin' the Market - Chef Anna Buss

Radicchio has been used since ancient times for itsmedicinal properties as a blood purifier and also forinsomnia. Modern cultivation of the plant began in late

15th century, and now all radicchio that you find in themarket is named after the region where it was firstgrown in Italy. This cruciferous vegetable is high in fiber, magnesium, potassium, riboflavin, and vitamin K.Riboflavin helps the body sustain healthy skin, nails,

eyes, mouth, lips, and tongue. Vitamin K increases bone health andhelps to limit naturally occurring gradual neuron damage to the brain.

When shopping for Radicchio select tight, firm heads that feel heavy fortheir size. It can be eaten fresh, grilled, sauted, blanched, or roasted. Not only can it be cooked in multiple ways it also pairs well with avariety of flavors. The bitterness of radicchio can be complimented bysweet, salty, sour, pungent, and savory flavors. So next time you go tothe farmers market add radicchio to your bag!
