Introduction:Brazil is the fifth largest country in the world by both area and population. It is the largest
among Latin American countries and is the largest country to have Portuguese as an official
language. The country is bounded by the Atlantic Ocean in the East and has boundaries with the
major South American countries.
The Brazil has different climatic conditions ranging from equatorial rainforests in the north
and semiarid deserts in the northeast, to temperate coniferous forests in the south and tropical
savannas in central Brazil.
Brazilian agriculture is well diversified, and the country is largely self-sufficient in food.
Agriculture accounts for 8% of the country's GDP, and employs about one-quarter of the labor force
in more than 6 million agricultural enterprises. Brazil is the world's largest producer of sugarcane
and coffee, and a net exporter of cocoa, soybeans, orange juice, tobacco, forest products, and other
tropical fruits and nuts. Brazil is a net exporter of agricultural and food products, which account for
about 35% of the country's exports.
Brazilian Culinary with special reference to spices:
Brazil's culinary influences include its indigenous people and Portuguese settlers as well as
German, Arabic and Japanese immigrants. Each new wave of immigrants added spice, often
literally to the Brazilian table. Today, Brazilians combine fresh produce with dried spices to add
complex flavors to meat, seafood, poultry, rice and even sweet dishes.
Brazilian fish stews get their red color and earthy taste from annatto, which is a ground seed
important in Brazilian cuisine. The seed comes from achiote trees, which grow in Brazil and
throughout Central and South America; in Brazil, dried and ground annatto is called colorau.
Seafood gets added piquancy from dried malagueta, a ground powder made from the extremely
spicy malagueta chili pepper. This pepper, which Brazilians use in both fresh and dried form, is
more than 20 times hotter than a jalapeno pepper. Native to Brazil, its popularity spread to Portugal
and Mozambique, where it also is a culinary staple.
Earthly, spicy flavors ground Brazilian meat dishes. Black peppers are a key to that pungency.
Brazilian-grown black peppercorns are well known for their potency. One example of a classic
Brazilian meat dish is barreado, a stew traditionally prepared in a clay pot. Along with black pepper,
spices include cumin and chili flakes. Red pepper flakes, also crucial to Latin American dishes,
come from the cayenne pepper but are less intense than ground cayenne powder.
The Brazilian staple farofa acts as a spicy condiment as well as a side dish. The dry mixture
of manioc (yucca) flour and spices such as black pepper, coriander and smoked paprika may be
sprinkled over other dishes, used to stuff foods or simply warmed and spooned onto the plate as a
side dish. Smoked paprika is the Spanish version of the Hungarian-based ground pepper.
Limes, coconuts and other fruits are cornerstones to typical Brazilian desserts. When it
comes to flavoring agents, Brazilian dessert spices are similar to those used in North American and
European kitchens. Key dried ingredients for sweet treats such as ambrosia, puddings and cakes
include cloves, cocoa powder, cinnamon and nutmeg. The Brazilian taste for sweet endings to a
meal as well as the sugar, citrus and spices used to flavor them came from Portuguese settlers.
Apart from above there is a requirement of various spices in Brazil like white pepper, tej pat
leaves, rosemary, fennel, star anise, garlic, turmeric, ani seed, curry powders, spices oils and resins.
Major Spices Exported from India to Latin America:
Among the various spices exported from India to Latin American countries, Chillies, Cumin,
Spice oils and resins and mint products are important in terms of volume and value. During 2014-15
a total quantity of 14318 MT tones of chillies worth 28.67M USD was exported. This was followed
by export of cumin 16127 MT worth 26.33M USD. The details of various spices exported from
India to Latin American countries are given in Table 1.

Exporters of Spices from India to Latin America
Generally the demand of whole spices is less in Brazil and they prefer more spice
products, like pastes, curry powders, garam masala, spices oils and resins etc. The contact details
of major exporters form India exporting various spice products to Brazil is given in Table 2.

Food Ingredients South America 2016 at SaoPaulo:
Sao Paulo is the largest metropolis in Brazil and is one of the most important cities in
Latin America. São Paulo is home to 18 million people and is the third largest city in the world.
The weather is pleasant with a day temperature ranging from 240-270C and with a night
temperature of 150-170C. The city has many business establishments and an ideal place for
conducting international trade fairs in Latin American Region. The people are very friendly and
the food culture is more like that of western countries. Brazilians prefer breads, milk products,
fruits and lot of vegetables. They also use rice and non veg items like beef, lamb, chicken and
fish.
The International food fair ‘Food Ingredients South America 2016’ was conducted at
Transamerica Expocenter, Sao Paulo during 23rd-25th August 2016. The International Food fair
'FISA' is the only meeeting place for the food ingredients industry in Latin America. Over the
past two decades since its debut, FISA has been a strategic platform for generating business
between ingredients manufacturers, distributors and final product developers in the food and
beverage industry. FISA also launched innovpack which is focused on design trends and
innovation for consumer goods final packaging.
The fair was organised by UBM, which is a leading global business media company and
the second largest world wide exhibitions organiser. FISA 2016 has 151 stalls and there were
more than 700 brands from about 40 countries and there were 3 stalls from India.
The Spices Board was represented at FISA 2016 by Dr. D.Ajay, Scientist C, Regional
Office, Guna and Shri. AP. Beneeshmon, Deputy Director (Accts.). Spices Board has booked a
stall of 40 Sq.m (stall no.950). Various Indian spices in their whole form and spices products of
Flavourit Spices Trading Ltd, were displayed. In addition to that, samples sent by various
exporters were also displayed. Spices Board has given permission to accomodate 7 spices
exporters in the stall to show case their products. Board has also organised a cookery show
through Tulsi Indian Cuisine of Prodigy Grand Hotel and Suites, Berrini, Sao Paulo which show
cased Indian cuisine with special reference to various Indian Spices.
The exhibition timings were from 1.00pm to 8.00pm and there were more that 500
visitors every day in our stall. The Cookery show attracted the visitors and all of them were very
happy with the naans, samosa, chiken tikka, kheema and varous chutneys prepared at the stall.
There were general enquireies on spices, mainly chillies, cumin and trumeric. There were
enquireies on spices pastes, powders and garam masalas. People were enquiring mainly on the
availability of retail packs of spices from India. Some of them wanted spices oils and oleo resins.
A total of around 50 prominent enquiries were received from various traders/importers. The stall
was visited by student groups who are doing research on medicinal poperties of various spices.
On the last day, Dr. Ajay Deore, Third Secretary, Office of Consulate General of India, Sao Paulo
visited the stall and interacted with all the participants and visitors and appreciated Spices
Board's efforts in promoting Indian Spices
On 26th August, market suvery was conducted alomg with co-participants in super
markets and in municipal market. In super markets spices like chilly, garlic and turmeric are
available in the form of pastes and powders. The leaves of parsley and rosemary were also seen
in the supermarkets markets. In the municipal market many spices are available in their whole
form like Cumin, Cardamom, Turmeric, Fenugreek, Black Cumin, Garlic ,Cinnamom, Black
pepeer, Coriander and also their powders and pastes. The whole spices were not visually
appealing and we find it of inferior quality especailly Cumin and Black Cumin. Chillies of
different pungency are preserved in vinegar and packed in different sized bottles are availble in
alomost all the shops. Garlic and cumin are imported from neighbouring countires like Argentina
and the traders said that it's much cheaper to import these itmes compared to market the
indigenous ones owing to the EXIM policies in Brazil. Generally people want Indian Spices and
the as availability of good quality spices are difficult they seeked the intervention of the Board.
There is a gradual increase in the preferences of people towards spicy foods and it will be highly
remunerative to explore the Latin American spice market. The details of prominent enquiries are
given in Table 3.
