Barry Pelletier and Steven Cabot’s lifelong dream to open a restaurant was realized three years ago when Mill Bridge Restaurant opened their doors located at the corner of Market

street and the newly built Mill Bridge on the banks of Fish River. Barry held his first foodservice job at the age of 16 and every job since has been in foodservice.

Mill Bridge Restaurant serves American Cuisine and boasts they have something for everyone with a wide variety of menu choices including their fresh seafood line of scallops, haddock, trout and clams. Their pizzas are made with an authentic Italian dough recipe. They also offer subs and sandwiches. Customer favorites include lasagna, the ‘Mill Bridge Steak Sandwich’ and their famous bread pudding with a signature brown sugar and sour cream sauce. Lobster rolls are served up on a hand-cut homemade roll.

When asked to share their most memorable moments in business, Barry quickly recalls their soft opening day. “Our soft opening was by invitation only which provided us the opportunity to celebrate the opening of Mill Bridge and also allowed feedback from our guests on ways we could improve our service before we opened to the general public.’

Another memorable time was reopening after their expansion and renovations in 2014. The restaurant had been open for a little over a year, yet the owners wanted to enhance their guests experience so they renovated. “It was the smiles on our customer’s faces that touched our hearts the most. With our expansion, we doubled our seating capacity and added a full bar. The dining room was revamped to better serve our customers.”

Mill Bridge Restaurant has been partnering with Performance Foodservice since their opening. Positive prior experiences working with Kirk Cyr and NorthCenter made this the right decision for owners Barry and Steven.

Clam Chili

1 51 oz Sea Watch Chopped Sea Clams, juice drained & reserved# 2 15 oz White Kidney Beans, drained 1 15 oz Black Eyed Peas, drained 2 Cups Green Bell Peppers, diced 1 Cup Yellow Bell Pepper, diced 2 Cups Onions, diced 2 oz Sweet Italian Sausage 2 Tbsp Olive Oil½ Cup White Wine1 Tbsp Cilantro, chopped 1 Tsp Chili Powder1 Tsp Ground Cumin1 Tbsp Garlic, minced1 Jalapeno Pepper, seeded & minced Hot sauce to taste

In a large soup pot, slowly saute the sausage (casing re-moved) in the olive oil. When the sausage is almost cooked add the onions and peppers. Saute vegetables until the on-ions are translucent. Deglaze the pot with the white wine and let it simmer for a couple of minutes. Drain the juice from the clams into the pot, reserving the clams to be added later. Add remaining ingredients and simmer for one half hour. Add the clams and bring the chili to serving temperature and serve. Yields:12 cups or 10 bowls

Thai Basil Clams

Make sure clam meat is thawed. Saute garlic and onions in olive oil for 1 to 2 minutes, add peppers and cook for another minute. Add clam meat and stir-fry until clams are cooked. Add basil, soy sauce and starch. Let sauce thicken and serve over rice or wide noodles.

INSTRUCTIONSPlace cauliflower florets in a zip lock bag and add wing sauce. Mix until completely covered in wing sauce, marinate at least 3-4 hours, or overnight. Pre-heat convection oven to 375 F. (add 25 degrees for standard baking oven). Spray sheet pan with cooking spray, and place marinated cauliflower on pan. Roast for 15-20 minutes or until golden brown. (Pre-roasting the cauliflower is acceptable, and it can easily be re-heated to save time.) Sprinkle with Ranch dressing dry mix, and serve with Blue Cheese dressing.

INSTRUCTIONSPreheat oven to 375 F. Cook lasagna noodles until just al dente, rinse with cold water and set aside. Toss in a little olive oil to prevent them from sticking together. In a large skillet, heat olive oil. Add the onions and cook over moderately low heat until softened, about 7 minutes. Add in the chopped Swiss Chard and cook over medium heat stirring frequently until wilted and no liquid remains, about 8 minutes. Stir in the chopped garlic and cook until fragrant, about 1 minute. Season with salt and pepper. Let mixture cool. In a medium bowl, mix together pumpkin puree, heavy cream, nutmeg and cayenne. Season with salt and pepper. In another bowl, mix the ricotta, beaten eggs, 1 1/2 cups of parmesan and 1 cup of fontina and 1 1/2 tsp. salt. Lay out the noodles on a slightly oiled pan. Spread 1 heaping TBSP. of pumpkin mixture across each piece of lasagna noodle, then add 1-2 TBSP of the swiss chard mixture, and finally 1 TBSP of the ricotta mixture. Carefully roll up each lasagna noodles so that the fillings stay on the inside, and place in a greased baking pan. Bake covered for about 20-25 minutes, then top with slices of the fontina cheese and a sprinkle of parmesan-romano. Finish in the oven until completely melted. Cut the lasagna roll-ups in half, and serve over some heated pumpkin filling mixed with heavy cream to form a base sauce. (See picture.) (NOTE: this recipe could also be arranged as a traditional panned lasagna, layering the pasta with the mixtures and finish with the fontina cheese.)

INSTRUCTIONSIn a medium pan, melt butter and saute onions, apples and pears over medium heat for 4-5 minutes. To the above mixture, add cinnamon, nutmeg, cloves and salt and pepper to taste. Chill and set aside. Filet out the pork tenderloin with a horizontal cut, so it can hold the filling. Place the stuffing inside the port tenderloin and roll back together, placing the seam side down on a sheetpan. (You can also wrap butcher's twine around the tenderloin to hold it together during cooking). Bake @ 350 F until internal temperature reaches 145 F. Remove from oven and let rest. Heat together the dressing and maple syrup over low heat for 1 minute. Remove the twine from the pork, slice and place sauce over the top,.Serve with appropriate starch and vegetable.

LettuceLettuce Varieties Item List

Iceberg lettuce is the number one workhorse lettuce in the industry. This versatile crisp, firm lettuce is great for salads, sandwiches, hamburgers, wraps, and as a garnish. It is round in shape and tightly bound with broad, thick-walled leaves. Outside leaves range may be dark to lime green while inner leaves range from light green to white.

Romaine lettuce has a tall head with stiff, dark green leaves with a central rib running the length of each leaf. It has a crisp texture with delicate and sweet inner leaves and more bitter outer leaves. Romaine lettuce is slightly sweeter than iceberg lettuce and is a popular choice for salads, sandwiches, and wide range of other foodservice applications.

The tender and delicate leaves of red and green leaf lettuce are mild in flavor and not as crisp as those of Romaine or Iceberg. There leaves are shades of green and purple and present nicely in salads or on sandwiches.

Spring mix is typically a blend of small, tender, multicolored leaves of several types of letuce. Peak spring mix blends five green lettuces, and three red lettuces for a flavorful way to add vegetables to almost any meal. Keep smoked salmon and trout frozen at or below 0°F for no longer than 270 days. The products should be thawed under refrigeration. Once it is removed from the freezer, the unopened refrigerated packaged product shelf life is 30 days.

Empire’s Treasure and Silver Source smoked salmon and trout products are conveniently ready to use from a thawed state. For maximum flavor, remove from the vacuum pack and let stand at room temperature for approx-imately 1/2 hour before serving.
