If you have ever visited Exeter, NH or know anybody that lives nearby, chances are you are familiar with The Green Bean. In 1997, Lori Whitney, opened her first Green Bean

in the quaint New Hampshire town. The Green Bean quickly became a favorite of Seacoast locals and students of the prestigious Phillips Academy. The Green Bean is a cafeteria style, made to order, gourmet soup and sandwich restaurant. It is not uncommon to find a line that extends the entire length of restaurant during lunch hours. The Green Bean creates six unique soups, from their

recipe book of over 60, on a daily basis with many of them guaranteed to sell out. The sandwiches are offered on a wide selection of fresh breads, rolls and delicious homemade focaccia and are famous for their freshness and creative flavor combinations. They also offer several fresh salads. In 2003, Lori’s husband, Jeff, decided to leave his job in

computer software to assist his wife in their growing business. They opened a second location within the Great Bay Community College on the Pease Tradeport in Portsmouth, NH. This location serves many of the original favorites as well as new additions that appeal to college students. The third location is a seasonal spot on the grounds of the Wentworth Marina in the upscale ocean town of Newcastle, NH. The views and atmosphere of this spot are priceless during the short but sweet coastal New England summer season. Their

Station 19, owner's Lori Whitney and Jeff Turner new restaurant adventure, was originally a fire station.

fourth location is located within the World Headquarters of Bauer Sports, also in Exeter, NH. All locations are open to the public and offer delivery to local businesses as well as off premise catering events. Several years ago Lori and Jeff purchased the building that the

original Green Bean resides with the intent of “controlling their own destiny”. They knew the potential was there to expand the original Green Bean as well as create a completely different establishment – thus was born Station 19. The building the Green Bean calls home was the original Fire Station for Exeter, NH and the Exeter’s call number is 19. It became very clear what the restaurant should be named. Lori and Jeff envisioned Station 19 being a full service/full bar restaurant that caters to and attracts couples looking for a nice evening out while also being casual enough for families. In order to develop this new venture they needed to enlarge the kitchen and renovate a former gift shop at the front of the building. The original Green Bean is open from 7:00am – 7:00pm and Station 19 4:00pm – 10:00pm, sharing one kitchen has been fairly seamless with the most challenging time being when Green Bean is finishing up their production day and Station 19 is beginning theirs.Because this was their first venture into operating a full service

restaurant, the couple spent many hours utilizing internet sources to educate themselves on how to successfully run a full service restaurant. In addition to the internet resources, Lori and Jeff, credit much of their education to Performance Foodservice NorthCenter Corporate Chef Anthony Bussiere. Chef Anthony came down to Exeter and spent many hours reviewing the potential menu of Station 19 and breaking it down with the owners. They both agree that Chef Anthony brought them together as partners to “be on the same page” as to where this restaurant was headed. They also credit Chef Anthony with bringing their “screen” education to a reality. Lori and Jeff also made it a priority to hire experienced wait staff, bartenders and kitchen staff to make their transition to full service more seamless. Station 19 opened quietly over Thanksgiving weekend to a long line of diners, familiar with The Green Bean, curious to see what great epicurean delights Lori and Jeff have brought to downtown Exeter. The reviews have been fabulous with hardly an empty seat in the place in spite of all the recent snow we have endured.The Green Bean has been a customer of NorthCenter for over 16

years. They have experimented with other distributors over the years, but have always come back to Performance Foodservice. They were extremely impressed that President, Greg Piper, took the time to meet with them and really get to know their business and what is important to them during their initial process of creating Station 19. Panini with Dark Chocolate, Strawberries & Bacio® Cheese

BacioEXCEPTIONAL ITALIAN PIZZA CHEESE

WITH A KISSOF BUFFALO MILK

IngredIents:2 slices brioche, ½” thick2 oz. Bacio® cheese - Whole Milk (#301028) or Part Skim (#301029)¼ c. dark chocolate chips¼ c. fresh strawberries, halved1 T. unsalted butter

dIrectIons:1. Sprinkle half of the Bacio cheese over one slice of brioche.2. Sprinkle chocolate chips and cherries on top of the cheese.3. Sprinkle remaining cheese over the chocolate and cherries, top with the

remaining slice of bread.4. Over medium heat, melt ½ Tbsp. butter in a grill pan, panini press or *skillet.5. Spread the remaining half of the butter on the top of the sandwich.6. Cook sandwich until both sides are a dark, golden brown and cheese and

chocolate are melted, about 3-5 minutes, flipping once.7. Serve warm.

*If using a skillet, use another skillet to press down on the top of the sandwich.

Clam Chowder

1 51oz can Sea Watch Chopped Sea Clams, juice drained and reserved#2 Cups Red Skin Potatoes, diced2 Cups Celery, diced1 Cup Onion, diced2 Tbsp Butter2 Pinches Black Pepper1 Sprig Fresh Thyme, leaves only1 Quart Half & Half

Drain juice from clams into a soup pot, add everything else except clams and half & half. Cook until potatoes are soft. Add clams and half & half and simmer for 20 minutes.

Yields: 10-12 bowls

Clam Chili

1 51 oz Sea Watch Chopped Sea Clams, juice drained & reserved# 2 15 oz White Kidney Beans, drained 1 15 oz Black Eyed Peas, drained 2 Cups Green Bell Peppers, diced 1 Cup Yellow Bell Pepper, diced 2 Cups Onions, diced 2 oz Sweet Italian Sausage 2 Tbsp Olive Oil½ Cup White Wine1 Tbsp Cilantro, chopped 1 Tsp Chili Powder1 Tsp Ground Cumin1 Tbsp Garlic, minced1 Jalapeno Pepper, seeded & minced Hot sauce to taste

In a large soup pot, slowly saute the sausage (casing re-moved) in the olive oil. When the sausage is almost cooked add the onions and peppers. Saute vegetables until the on-ions are translucent. Deglaze the pot with the white wine and let it simmer for a couple of minutes. Drain the juice from the clams into the pot, reserving the clams to be added later. Add remaining ingredients and simmer for one half hour. Add the clams and bring the chili to serving temperature and serve. Yields:12 cups or 10 bowls

Thai Basil Clams

1½ lb Sea Watch IQF Chopped Sea Clams4 Cloves Garlic, minced4 Green Onions, chopped2 Tbsp Olive Oil4 Tiny Red Asian Chili Peppers, stemmed &finelychopped (adjust to sensitivity)¾ Cup Fresh Basil Leaves, finelychopped1 Tbsp Lite Soy Sauce1 Tsp Corn Starch, dissolved in one Tbsp of cold water

Make sure clam meat is thawed. Saute garlic and onions in olive oil for 1 to 2 minutes, add peppers and cook for another minute. Add clam meat and stir-fry until clams are cooked. Add basil, soy sauce and starch. Let sauce thicken and serve over rice or wide noodles.

Yields: 2 entrees

Naked Clam Tacos

1 lb Sea Watch Raw Clam Strips1 Tbsp Olive Oil

Pineapple Pico De Gallo1 Cup Tomato, seeded & diced½ Cup Crushed Pineapple, drained1 Tbsp jalapeño Pepper from jar, diced2 Tbsp Scallion, chopped1 Tbsp Cilantro, minced1 Tbsp Garlic, minced1 Lime, juiced4 Soft Corn Tortillas Shredded Lettuce

Onahotflattopgrillorinhotfrypan,toastbothsidesoftwocorn tortillas. Coat the same surface with the olive oil and saute the raw clam strips for 2 to 3 minutes, tossing at least twice. Cook until clams are opaque in color and at least 170° degrees internal temperature. Cup tortilla in hand; add a little shredded lettuce, one fourth of the clam meat and a table-spoon of the pineapple pico de gallo, repeat with remaining tortillas. Yields: 4 Soft Tacos

Lamb Stew

American Lamb Stew with Mashed Potato CrustServings: 4 Prep Time: 30 mins. Cook Time: 2 1/2 hrs.

• 3 Catelli Brothers American lamb shanks• 1 cup flour• 1/4 cup chile powder• 1 tablespoon each kosher salt, cracked black pepper• 1/4 cup olive oil• 1 cup each diced onions, diced celery, diced carrots• 6 cloves garlic• 1 cup white wine• 4 cups beef broth• 2 sprigs fresh thyme• 3 sprigs fresh rosemary• 2 bay leaves• 4-5 Yukon Gold Potatoes, peeled and quartered• 3 cups heavy cream• 4 ounces unsalted butter • 6 roasted garlic cloves, pureed• Salt and pepper to taste

Preparation1. Mix together flour, chile powder, salt, and pepper. Roll lamb shanks in flour mixture. In a large roasting pan, heat

oil; sear shanks. Add onions, celery, carrots, and garlic; continue to sear. Add wine, broth, thyme, rosemary, and bay leaves. Bring to a boil; reduce to a simmer and cover. Cook for 2 1/4 hours, turning shanks occasionally, until meat is very tender. Pull meat from the bone; continue to simmer over low heat until stew thickens slightly. Strain the sauce from the bottom of the pan and reduce by half. Add back into stew; cool.

2. In a small pot, boil potatoes until fork slides out of potatoes easily. While potatoes are boiling, in a separate pan, heat cream and butter until hot. Do not boil. Drain water from potatoes; place potatoes in mixer. Add 1 cup cream mixture; mix until blended. Slowly add garlic cloves and remaining cream while mixer is on medium speed. Add salt and pepper to taste.

3. Put lamb stew in oven safe bowl; top with warm mashed potatoes. Bake at 375°F for approximately 15 minutes, until stew bubbles over the side and potatoes are golden brown. Photo & Recipe: American Lamb Board

INSTRUCTIONSSlack out the lamb racks, and once thawed, slice into single lollipop chops. Season chops with kosher salt and pepper on both sides and grill to desired temperature. Bake cauliflower @ 400-425 degrees for 10-12 minutes until golden brown. Build a nest of spinach on a plate and surround with Roasted Cauliflower. Fill each end of the cannoli shell, piping in one side first, then the other side until both sides are filled equally. Directions1. BEAT cream cheese in large mixing bowl fitted with paddle attachment on medium-low speed until

creamy. Add OREO Pieces: mix well. 2. ROLL mixture into 120 (1-inch) balls (or 40 balls for trial recipe). Dip in chocolate. 3. PLACE in single layer in parchment-lined sheet pans. Refrigerate until firm.
