There are plenty of ways to "change it up", especially with thetoppings or sauce. I happened to have a bag of frozen mixed berries on hand sothats what I used.In this recipe, dried coconut is used as the bottom layer (to replace thecrumbled graham crackers), macadamia nuts are used for the bulk of the"crust" layer, and cashews make up most of the "cheese" portion.Equipment Needed: Food ProcessorBottom Layer Ingredients: 1/4 cup of dried coconutCrust Ingredients: 1 1/2 cups of raw macadamia nuts 1/2 cup of dates 1 pinch of sea salt (optional)Filling Ingredients: 3 cups of cashews 3/4 cup of lemon juice 3/4 cup of raw honey (or other raw sweetener) 3/4 cup of coconut oil 1 tablespoon of vanillaTopping Ingredients: 2 cups frozen mixed berries (or any frozen or fresh fruit) 1/2 cup of datesRaw Cheesecake RecipeCopyright 2011 RawFoodHealthWatch.com 5. Directions: 1. Sprinkle coconut on the bottom of cheesecake pan (or any glass bakingdish). 2. Blend crust ingredients (youll see when it starts to get crusty) in foodprocessor and spread on top of coconut layer. 3. Blend filling ingredients in food processor and then spread on top ofcrust layer. 4. Cool in fridge or freezer to firm up a bit. It took about 45 minutes in thefreezer when I prepared it. 5. Blend sauce ingredients in food processor and then spread on top ofcheesecake layer.Like I said there are many variations for this raw food cheesecake, and ofcourse countless ways to prepare the sauce on top, but if you dont feel likebeing creative, try this one, its hard NOT to love it!Like with any other dietary change, please check with your doctor before making any drasticchanges to your diet.Advertiser HereContact me at firstname.lastname@example.org to inquire about advertising at thebottom of my PDF documents. You can order and instantly download this complete raw recipe series at a discountright now from The Raw Chef - click HERE.Raw Cheesecake Recipe Copyright 2011 RawFoodHealthWatch.com
