We Need
1 Green Bell pepper seeded and thinly sliced
5 Garlic Cloves (to be crushed)
1 Large Onion thinly sliced
1 Tablespoon Sunflower Oil
1 Tablespoon Thai Green Curry (2 if you like it more spicy)
400ml Thick Coconut Cream
8-10 cm Piece Lemon Grass finely chopped
3 Lime Leaves
Freshly Ground Black Pepper
For 4 persons Basmati Rice
800g Monk Fish, washed and membrane removed. Cut the monk fish into chunks - if preferred, you can keep the monk fish in one piece, but allow a little longer to cook

Cooking Instruction Step 1
Turn on the pan of water for the rice .
Fry bell pepper, onions and the crushed garlic in the sunflower oil until soft.
Add the Thai green curry paste.
Stir well and fry for around 1 minute.
Add the rice to the boiling water.
Add the thick coconut cream, lime leaves, lemon grass and season with pepper and stir well.
Bring to the boil and simmer uncovered for around 5 minutes until the sauce has been slightly reduced and thickened.

Add the monk fish.
Cook for 2 to 4 minutes.
Turn fish over carefully and cook for a further 2 to 4 minutes.
Transfer the fish to a serving dish, pour the sauce over it and serve it with the rice.
