Bouchee- “mouthful” a one inch round vol-u-vent
Jalousie-“venetian blinds” a rectangle puff pastry consisting of 2 pieces that is filled and the top piece is slit so when it bakes the top puff pastry piece will open up like blinds
Pithivier-a round puff pastry generally consisting of two pieces filled with frangipan and the top piece is very decorated with pieces of puff pastry
Chausson- a sweet or savory turnover
Sachristain-‘Pope’s hook” a sweet or savory long twisted piece of puff pastry that is curved at the end to represent the fisherman’s Staff of Peter that the Pope carries
Palmier- a clover shaped leaf cookie made from puff pastry rolled up with simple syrup and sugar
