Cherry tomato• Being the most famous and popular product of

Santorini, cherry tomatoes with the slightly hardest skin and rich juicy body, can be savored fresh, sun-dried, in the form of paste or even as spoon-sweet.  

• A serving of these tomatoes provides you with 15 percent of the daily recommended intake of vitamin A and vitamin C.

Caper• It is a wild bush thriving in rocky areas; that is why it is

said that “caper is planted by ants”. It is collected at the end of spring and throughout summer. From the bush are taken the ‘kaparokoumba’ (caper buds) and ‘kaparofilla’ (caper leaves).

• Once they soak in water for at least one week, with the water being regularly renewed in order to take the bitterness out, they turn into pickles by adding vinegar and salt.

• Capers are in fact very low in calories, 23 calories per 100 g. The spicy buds contain healthy levels of vitamins such as vitamin A, vitamin K, niacin, and riboflavin. Niacin helps lower LDL cholesterol.

Fava• The Santorinian fava is unique because it comes

from a different variety of fava bean, Lathyrus Clymenum, which according to excavations in Akrotiri has existed on the island since 3.500 years ago.

• Santorinian fava beans is served as a salad, leaves a full and sweet taste in the mouth and has a rich flavor.

• Fava beans are very high in protein and energy. 100 g beans contain 341 calories per 100 g. The beans, however, compose plentiful of health benefiting antioxidants, vitamins, minerals, and plant-sterols.

Wine varieties• Assyrtiko-Santorini is one of Greece’s most fascinating

and unique indigenous grape varieties. . It produces a dry white wine of distinctive character and great minerality, pleasant to drink young, but also very ageworthy.

• Athiri : A Greek white grape with a lemony character, often blended with other grapes such as the Assyrtiko. Wine made from Athiri is generally high in acid but low in alcohol, making it a suitable grape for blending. Athiri is used as part of the traditional Vin Santo blend.

In fact, one potential origin of Athiri’s name is ‘Thira’, the ancient word for Santorini.
