3 eggs1 cup oil2 cups sugar2 cups grated zucchini3 teaspoons vanilla3 teaspoons cinnamon1 teaspoon baking soda1 teaspoon salt1/2 teaspoon baking powder3cupsflour1/2 cup chopped nuts (optional)

directions

1. Mixfirst5ingredients.2. Mixtogetherflour,bakingsoda,salt,powderandcinnamon; add to mixture.

3. Placeinagreasedpanandbakeat325degreesforabout1hour.

4. Bakeat350Ffor45-50minutes.Makes12servings.

1 lb. sage sausage1 tsp. salt1 tsp. dry mustard2 c. 1% milk1/2c.cheddarcheese,grated12oz.herb-seasonedstuffingcubemix2 c. egg beaters (8 eggs)

directions

1. Brown & drain sausage

2. Placestuffingin9x13pan&sprinklesausageoverbread. Cover with cheese.

3. Mix eggs well & add seasonings & milk.

4. Pour egg mixture over cheese. Cover & refrigerate overnight.

5. Bakeat350Ffor45-50minutes.Makes12servings.

1. Brown meat with chopped onion and salt. Add to large pot. 2. Brown Sausage. Add to pot. 3. Add canned ingredients. I used a really large pot.4. Salt and pepper. Chili powder to taste. 5. Simmerforalongwhile.6. Enjoy? You betcha!

1 tablespoon vegetable oil4(4ounce)skinless,bonelesschickenbreasthalves,cutintocubes4 teaspoons chili powder2 teaspoons ground cumin1largeonion,chopped1mediumgreenpepper,chopped1(10.75ounce)canCondensedCreamof ChickenSoup2 tablespoons water (as needed)1 1/2 cups frozen whole kernel corn2(15ounce)canswhitekidneybeans(cannellini),rinsedanddrained2 tablespoons shredded Cheddar cheese

directions

1. Heattheoilina4-quartsaucepanovermedium-highheat.Addthechicken,seasonings,onionandpepperandcookuntilthechickeniscookedthroughandthevegetablesaretender,stirringoften.

2. Stirthesoup,water,cornandbeansinthesaucepanandheattoaboil.Reducetheheattolow.Coverandcookfor5minutes,stirringoccasionally.Sprinkle with the cheese.

ingredients1½cansstewedtomatoes,chopped1 ½ cans tomato paste1½carrots,chopped3stalkscelery,chopped½ cup white wine2pinchescrushedredpepperflakes¼cupgreenbellpepper,chopped¼cupredbellpepper,chopped

directions

1. Inlargepotovermedium-lowheat,combinetomatoes,tomatopaste,carrot,celery,wine,pepperflakes,bellpeppersandsteaksauce;

2. Whiletomatomixtureissimmering,inalargeskilletovermediumheat,cook bacon until crisp. Remove to paper towels. Cook beef in bacon drip-pingsuntilbrown;drain.Stirchiliseasoningintogroundbeef.

3. Stirseasonedbeef,cuminandbaconintotomatomixture.Continuetosimmeruntilvegetablesaretenderandflavorsarewellblended;

4. Stir in beans and parsley. Heat through and serve.Reducetheheattolow.Coverandcookfor5minutes,stirringoccasionally.Sprinkle with the cheese.

ingredients1 pound ground beef1cupself-risingcornmeal1 cup whole1(14.75-ounce)cancreamstylecorn2 eggs well beaten2jalapenos,sliced1 cup shredded cheddar cheese

directions

1. Addthevegetableoiltothebottomof a10-inchcastironskillet.Placetheskilletintheovenandpreheattheovento350°.Whiletheovenandskil-letpreheat,brownthegroundbeef thendrainthegreaseaway.

2. Inalargebowl,combinethecornmeal,buttermilk,creamstylecorn,and beaten eggs until well mixed.

3. Oncetheskilletishot,pourhalf of thebatterintothebottomof theskillet. Sprinkle the ground beef amd jalapenos over the batter. Sprinkle the cheese over the other ingredients then top with other half of the batter. Bake for45to50minutesoruntilgoldenbrown.Allowthecornbreadtocoolslightlyinthepanbeforeflippingoutontoaservingplate.

1. Seasonporkshoulderwithsugar,salt,pepperandonionpowder.Placetheporkincrockpotandaddbeer.Cookonlowfor8-10hours.Thenshredpork with work.

2. Addgarlic,shallot,pepper,tomatopuree,crushedtomatoes,beans,to-mato paste and remaining spices. Mix well to evenly distribute ingredients. Coverandcookonlow4-6hours.

ingredients1lb ground beef 1lb ground pork1marinatedandrubbedgrilledflanksteak2onions,chopped1redpepper,chopped1greenpepper,chopped6-8clovesgarlic,smashedandchopped4cansbeans,anykind(Iused2red,1white,1black),drained2 cans diced tomatoes3cansfireroastedgreenchilies(or2-3freshfireroastedpoblanopeppers)2 ears grilled corn (optional for extra goodness)1bottleof beer(getexperimental,that’swhatbeerisfor!Iusedalager)3 tbsp. chili powder3 tbsp. cumin2 tbsp. coriander2 tbsp. ancho chili powder2 tbsp. cocoa powderSalt and pepper to taste

1. Marinatethatflanksteakhoweveryoulike.Iusedsomeoil,redwine,soysauce,Worchestersauce,thejuiceof 1lime,garlic,onion,mustard,papri-ka,andwholecoriander.Stickitinthefridgefor4-24hours.Takeitoutanddryitoff abit,noonelikestobecoldandwet....(continued)

2. Nowit’stimetoshowthatsteaksomelove.Giveitarubdown,rubitrealgood.Imagineit’samoonlightnightintheSouthwest,justthetwoof you.Nothingwasexact,buttherubinvolvedgarlicpowder,onionpowder,paprika,smokedpaprika(goalittleeasyhere)groundmustard,coriander,chili and ancho chili powders. Maybe a little sugar if you want things a little sweeter.Thatflanksteaksbeenbusy,giveitabreak.

3. Get a grill going. Natural lump charcoal of course. And start soaking somesmokerchips.Irecommendwhiskeybarrelchips.If yourgrillingcorn,peelmostof thehusk,leavetheinner1or2layers.Peelthosebacktothebase,removethesilks,andfoldthehusksbackintoplace.Soakincoldwaterforabout15minutes.

4. I hope you have a big pot. Brown the ground meats in a little oil and drain. Now the good stuff. Start dumping in all the canned ingredients. With eachcanof beansapologizetoyourlovedones.Orlaughmanically,you’rechoice. Add the beer. Add all those delicious spices. Simmer away.

5. Grillhot?Good!Addthewoodchips.Thesteakshadenoughof abreak,itslonely.Throwitonthegrillandcover.Afewminuteseachsideshouldbegood.Getagoodsearoneachside.Itcanbeontherareside,itsgoinginthepottofinish.Shakeexcesswateroff thecornandgrill15-20minutesturningevery5minutes.Grillingpoblanopepperstoo?Whodoyouthinkyouare,BobbyFlay?Blisterandlightlyblackentheskins.Wipetheskins off with a paper towel. They don’t have to be spotless.

6. Cutthecornoff thecob,chopthepeppers,cubethesteak.Additalltothepot.Simmerfor3-4hours.Stirringoccasionally.Grabanotherbeer(thisone’sforyou)sitback,relax,andenjoythesmellof chilimagic.Let’sfaceit,the house only smells good for now…
