• To wear protective clothing isneeded but doesn’t need a separate room.

• The aim is to wear clean cloths and to avoid cross contamination with outdoorclothes

Walls and floors

• Smooth, imperviousand easy to clean(except if you havederogations)

• Painted surfaces are possible

• Maintenance isneeded: no chips, cracks, holes…

• Ventilation can be natural or artificial and air intakeshould be located awayfrom potential sources of contamination such as stables or barns

Lighting

• It could be natural or artificial buthas to be adequate. While notcompulsory, bulb shields can helpto prevent breakage into foods

• in the same room if they are protected from contamination

Waste handling

• Food waste, non-edible by-products and other refuse shouldbe removed from the productionareas as quickly as possible, deposited in containers and disposed of in a hygienic wayaccording to national legislation(see SANDACH regulations)
