A sauce for inspiration... when a dream becomes reality. Meet Lionel Miller creator of Steakhouse Supply Group.

Some 10,240 km away from Australia in Johannesburg South Africa, Lionel Miller had a dream. To run his own restaurant. Some twenty years later that dream be-came more than a reality with 8 res-taurants to date across Australia called Squires Loft. The distinctively styled res-taurants are a meat eaters delight, based on the South African style braai – which is Afrikaans for “barbecue” or “roast”.

Lionel has always produced a unique range of sauces to compliment his dishes, black pepper, garlic, blue cheese to name just a few. These sauces were supplied under contract from outside and conse-quently lacked the quality control neces-sary to meet Lionel’s high standards.

With 8 restaurants to supply a decision was made to build an operation capable of not only suppling the groups needs but with the possibility of producing the sauces for other retail outlets.

Originally Lionel was looking to purchase machinery from overseas but the GFC made the costs prohibitive.

Lionel looked to local markets for supply and began enquiries with a NSW company.

Soon he realised the need for more than a supplier of machines. His new endeavour would rely upon an organisation with the expertise and skills to design and build a system for his specific needs capable of cooking and packing his sauces.

Lionel chose PPN because of their expe-rience in all aspects of his requirements. Design, engineering, project management and the readily available supply of new and used equipment all within the PPN ware-houses where he could view and trial ma-chines on site.

This was an ideal solution. He was also delighted with the savings made with the purchase of his new iopak machines and the secondhand equipment available at PPN.

Giles Dommisse and the team went into action and designed a sure fire system to meet Lionel’s needs.

This system is designed to manufacture steak and dressing sauces from scratch. After sauces are made they’re packed us-ing a liquid pouch packer that makes a pouch from a roll of film. Then it deposits 1 Ltr of sauce into the pouch. Pouches are printed with product name, use by dates, batch code number, ingredients listings, etc.The complete system is comprised of:1. 1 x 1,000 Ltr iopak Liquimulse High Speed Liquid Mixing System (with 15kW variable speed drive) with s/s loading stand - this system mixes up sauces that do not require cooking. on woRkPLACe SAFetY!Significant time and effort has been spent by the various workplace safety authorities in education and advertising programs. Featuring graphic examples of fatalities and other striking injuries, the campaigns are designed to promote a serious message, to widen responsibility to all workers and to educate.It is a given that accidents in the workplace do occur, and it is the responsibility of the employer to take practical steps to minimise the likelihood of such deaths and injuries. This responsibility extends not just to employees, but also to all those that come onto your site, including contractors and customers. The manufacturing sector is particularly exposed to workplace safety claims and investigations. It is a sector where heavy or powerful machinery and hazardous chemicals are common, and vehicles such as semi-trailers and forklifts are regularly moving about on site. The potential for an accident to occur is very real. Manufactures should take heart that the workplace safety authorities expect accidents to happen. However, what manufactures need to understand is that these authorities will not be sympathetic should an accident occur which was reasonably preventable. Education campaigns have occurred, and it is clearly too late to plead ignorance.Personal and company fines are increasing, as we see from the legal cases that are often brought by the regulators. Fines serve as a punishment, but are also intended to act as a deterrent and warning to others. As preventable accidents continue to happen, the fines will increase to provide greater deterrent value.

Every business is unique, and each will have particular requirements and present particular risks. The suggestions that follow are only general, but serve as a helpful overview of what manufactures can do to help manage their risks.1.Review Your Records. A simple first step for an employer is to review the records on employee injuries. Do injuries repeatedly occur in particular areas or employee groups? Find out why. Are there repeated issues with a particular piece of machinery, or even a particular worker? Investigate this and understand what the causes may be. If you are having trouble finding relevant information on employee injuries, consider updating your injury management procedures. Ensure accurate records are being kept and maintained in line with your legal obligations.2.Understand Your Workplace. This is as simple as it sounds. Go for a walk around the entire site, and take your health and safety representative with you. Take notes of what you observe. Are steps and ramps easily identified? Are pedestrian and vehicular areas clearly separated? Are chemicals being correctly handled?Talk with employees on your walk. They may identify problems you had not considered, or suggest additional safety clothing, or a guard on a machine. Your employees are your direct link to the practical examples of what can be done in your workplace to reduce liability. There are legal obligations on employers to discuss workplace health and safety with their employees. 3.Prioritise. Review your notes following your tour of the site and discussions with employees. List the risk areas in order of priority. Take the most serious risk area that has been identified and start putting in place actions to minimise that risk. For example, replace a faulty machine or tool, re-paint work lines on the factory floor, replace filters or high visibility clothing or conduct a refresher course on safety for employees.4.Implement a Policy. An employer must not only have a written occupational health and safety policy, but must implement and uphold it.

Holding regular sessions to advise employees of potential risks and how to respond to incidents demonstrates that your business takes safety seriously.5.Education. Often we see cases where an injury has occurred as a result of someone not appreciating the risks of what they were doing or not being familiar with the safety requirements. Quite often it is a new employee who is injured.Education is essential, generally on the OH&S requirements at your site, and also specifically in relation to a machine or production line. It is not just new employees who should be trained, but employees who are changing their roles. Be especially careful where an employee fills in for a sick workmate.Review your training materials, as well as your procedures about when, who and how training is provided. Periodic refresher training is also essential - even for the most skilled employees.6.Obtain External Professional Assistance. The workplace safety authorities around Australia offer services to conduct workplace inspections, as do some law firms and OH&S consultants. Receiving advice on how to promote workplace safety is an important component of the overall strategy to manage workplace safety effectively. It is impossible for every accident to be prevented, but manufactures must take all reasonable steps to prevent accidents in what can be a hazardous industry. Manufactures should also document the steps that are taken. This should minimise both the risk of injuries and the impact of any workplace investigation or prosecution.

The Packmatic 50 ASW Automatic Sleeve Wrapper automatically collates products in the desired matrix and wraps them in film (usually LDPE film). It uses two rolls of single-wound film rolls that are sealed together by the previ-ous sealing cycle and that form a single film curtain. The collated products are pushed through the film curtain and clamped at the other end of the sealing bar before making one more seal around the bundled products with a constantly-heated sealing bar that is 50 cm wide. A distribution pack of multiple products wrapped together in film with a bull’s eye at two ends is formed after this bundle goes through the shrink tunnel. Containers can be cylindrical, oval, square or other shapes.This system consists of an automatic right hand feeding sleeve/wrapper collater direct feeding a heat shrink tunnel. The collating sec-tion automatically forms bundles of bottles, jars etc from a single or multilane input, and loosely forms a packaging sleeve over the bundle. PPN would like to introduce Bradley Wardrop-Brown principle of BOI Food Tech & Packaging. For those of you who don’t know the name, Bradley has had over 20 years of involvement in the food industry with a long list of qualifications and industry experience making him an expert in the field.

Bradley works closely with PPN on many projects and his advice has been invaluable. Over coming editions he will take us through the technicalities within the industry and educate us with his great insight and know how.

As PPN has recently completed the design and manufacture of the iopakEmulsys 1000 (Multi-Purpose Blending Emulsifier), we thought it would be appropriate to talk about that wonderful food accompaniment we all love, mayonnaise. Every edition we will highlight an interesting food product and the Food Science and the equipment required to manu-facture it on a commercial scale.In this edition we will be discussing emulsified sauces, specifically mayon-naise and the materials and methods to manufacture it commercially.

PART ONEWhat is an emulsion?Mayonnaise is an oil-in-water emul-sion which traditionally contains up to 80% oil. However in our health con-scious society lower fat options are in increasing demand and whilst fat free versions of mayonnaise are available they are not actually emulsified sauces as they lack the oil phase.Emulsions are made up of a dispersed and a continuous phase; the boundary between these phases is called the interface. Emulsions tend to have a cloudy appearance, because the

many phase interfaces scatter light that passes through the emulsion. Emulsions are unstable and thus do not form spontaneously, they require significant amounts of energy to form them and generally an emulsifying agent (such as egg yolk) to assist in the stable formation of the emulsion these surface active substances (surfactants) can increase the kinetic stability of emulsions greatly, so that once formed, the emulsion does not change significantly over years of storage

Vegetable gums (such as guar, Xanthan and carboxy methyl cellulose) and pre-gelatinised modified starches are used in low fat products to replace the viscosity and bulking effect of the oil, they enhance mouth feel, and to ensure that a stable emulsion is formed.

Large scale production is normally carried out using plant specifically designed for mayonnaise manufacture. The plant generally consist of a large holding tank with contra rotating agita-tion, a high shear multistage mixing pump, a positive displacement pump and an oil feed line.

Next edition we will put our mayon-naise together utilising the new PPN 1000 lt Mayonnaise Mixer and have a look at what other products can be made with mayonnaise as a base.

PRODUCT SAFETY TAMPER EVIDENT CAPPERINIL Single Head Automatic Pick & Place Screw Capper. This comes with a cap elevator/feeder and unscrambler. Currently set up for a 38mm plastic screw cap with tamper evident band Speed: 40 min max (product dependent-must be tested to verify speed).This machine has been designed to select and apply pre-threaded caps (both metal and plastic) onto containers at a specific torque.It comes with a cap unscrambler and feeder. Conveyor (or any retrofitting to suit your product) supplied at extra cost.

Method of OperationThe caps are supplied in bulk into the cap unscrambler, where they are gently unscrambled and exit the unscrambler the correct way into the cap chute. At the end of the chute, the caps are dispensed one at a time by means of a tic toc mechanism which is actuated by the cap arm.

The cap arm passes under the chute and sweeps a cap onto the cap button. The arm then swings in under the capping chuck, and the chuck descends to pick up the cap.

The bottles arrive at the machine by the conveyor where they are stopped by the starwheel. As the container to be capped is indexed by the starwheel and moved under the chuck, the cap arm moves away and the chuck descends to apply the cap.

If the container is round, a clamp arm (in some cases pneumatic) swings in to grip the container whilst the capping operation is taking place.

As the chuck rises again, the clamp is released and the starwheel returns the container to the conveyor, where it is free to pass onto the next operation. Options: Cap Elevating Conveyor
