ChamarelWhere rum is king

One of the most modern on the island but

still in keeping with tradition, the Chamarel

distillery in Mauritius

15 million litres of it are produced each year, one third of which is exported, making rumalong with vanilla and tea one of Mauritius’treasures. In the south west of the island on asmooth plain that benefits from a micro- climate, the Chamarel rum distillery is one ofthe jewels in the crown of the local rum cul-ture and in pure local tradition. At the heartof a 350 hectare plantation, a quarter of whichis devoted to the growing of sugar cane. Onceharvested it is ground to separate the juicefrom the straw, a technique handed down fromgeneration to generation. Next follows the filtration and once the juice is collected fermentation begins, ranging from 48 to 72hours a period that helps the rising of the alcohol and enhances the aromatic notes thathelp make up true rum.

Going back to 1850 one Pierre Charles FrançoisHarel opened the first rum distillery on theisland, at the end of the 19th century sap fromthe Red Latan Palm and the palm tree wasused to produce arrack. Slowly over thedecades he perfected the procedure until hesucceeded in producing a better flavour thatwould prove popular in other markets too.

Today on the Chamarel plantation, less than 4hours after cutting, the sugar cane is taken tothe distillery mills. The fermentation processis one of the most modern and environmen-tally friendly as Olivier Couacaud, productionmanager explains “Nothing is wasted; thebagasse, the cane fibre that remains after the

sugar extraction is transformed into energy, the vapour is cleaned, the ashes and vinasseare treated and used as fertiliser in the fields”.

The distillery is open to the public and eachday a guide welcomes those who want to learnmore about the production of agricultural rumwith an obligatory trip past the fermentationvats, the stills on eight plateaus and the tuns, those great wooden casks that hold the preciousliquid for 3 months during the maturation pro-cess. Of course no tour would be completewithout a tasting of different rums including“straw rum”, “amber rum”, white agriculturalrum and vintage rum, exploring the notes ofcitrus, precious wood and plants as well assweet spices including the famous vanilla.

The BoréalA boat labelled “Green Ship”

The Compagnie du Ponant has been synony-

mous with yacht cruising for more than 20

years, combining untold luxury on board

with exceptional discoveries; a tradition per-

petuated by their newest vessels the Boréal

and the Austral.

In the same style as their current three ships theBoréal offers a unique atmosphere of refine-ment and intimacy with a contemporary andwarm style, making use of quality materialsand a traditional nautical flavour.

The Boréal with a homogenous streamlinedsilhouette of 142 metres long and 18 metreswide was conceived in the image of a “privateyacht” with a great glassed arch at fore and aft,a reception area, a large salon, two res taurants,a theatre, a swimming pool and an observationlounge.

The vessel is equipped with a very quiet electrical propulsion engine which consider-ably reduces the vibrations, does 16 knots andoffers perfect stability for its passengers. Thereis also an emphasis on insulation and soundproofing to both limit energy consumption andensure passenger comfort.

An advanced treatment and collection systemis installed on board; all waste is separated, treated and stored in a special refrigerated areathus avoiding any need to jettison waste during the voyage.

Named, blessed and launched on the 1st ofOctober 2009, the Boréal aims to be the epitomeof French vessels. Combining tradition andmodernity whilst avoiding damage to marineresources or harming either flora or fauna, it is thus that the Boréal has received the inter-national label of “Green Ship”.

The Boréal will set sail on her 8-day maidenvoyage from Marseille in May 2010.
