Kilted Chef - Alain Bosse “The Acadian Kitchen” Recipes Then and Now
Fricot is a staple in many Acadian homes and while different regions will vary the preparation method, in fact the method may vary from family to family based on what recipe has been handed down through the generations; it is widely recognized as a true Acadian dish. As a child it was a favorite and I still enjoy it on a regular basis to this day.
Acadian Chicken FricotServes 4-6
1- 5lb chicken, bone-in, skin-on10 cups water8 medium potatoes, peeled and diced1 medium onion, finely chopped1 cup diced celery3 carrots, peeled and diced2 tsp chicken bouillon1 tsp freshly-ground pepper1 tsp summer savory
In a large pot, boil the chicken in 10 cups of water until tender, approx. 60 minutes. Remove the chicken, strain broth and reserve. Cool chicken and remove the skin and meat from the bones. Roughly chop the meat and set aside. Return the broth to the pot and add potatoes, onion, celery, carrots, bouillon, pepper, savory, and chopped meat. Add water to cover if needed. Bring to a boil and reduce heat, simmer for 45 minutes.
