Weihenstephan ‘World’s Oldest Brewery’, The ‘Sacred Steven’ or Weihenstephan brewery overlooks the town of Freising in Germany. In 1040AD, the city granted Abbot Arnold the right to brew and sell beer- making them the World’s first licensed brewery. It has also been established that the Benedictine monks had brewed their own beer much earlier than this. Even as early as 768AD a hops garden was founded in the grounds of the monastery, the harvest of which was certainly brewed in the monastery. The reputation of the Weihenstephan brewers- as true masters of their craft- has gone from strength to strength- with centuries of brewing experience. Today’s modern commercial brewery and the world’s best known ‘University of Brewing’ occupy the former monastery buildings. The Weihenstephan brewery maintains close links with the University. Students from around the world are let into the secrets of the Bavarian art-of-brewing. Many of the world’s best brewers have been trained there and many breweries draw their yeasts from the famous Weihenstephan yeast library. Sünner The Sünner brewery and distillery was founded in 1830 by Christian Sünner in Cologne and is the oldest existing brewery in the city. Today, the company is in its sixth generation and is managed by the founder’s great-granddaughter; Ingrid Müller-Sünner together with her daughter Astrid Schmitz-Du Mont.

Kölsch- pronounced “koelsch”- is a beer brewed exclusively by the breweries in Köln (Cologne to the English speaking countries).

The beer style has been around for several centuries, but was never called Kölsch until the Sünner brewery labeled it as such in 1906, and hence, claim invention of the style.

The culture of this beer is also unique. People from all economic classes enjoy the beer.

Karl Marx remarked that, “this revolution could never take hold in Köln, because the workers drink with their bosses!”

The beer is so anti-class that the breweries all agreed that no Kölsch would be sold with “special”, “extra” or any other add-on.

Kõlsch Tasting Notes: Sunner is a “Kolsch” style beer which is unique to Koln (Cologne) Germany. Like Champagne (Appellation Controlee) it is protected by law, so that only beers brewed in that region can bear the name. It is an Ale with a stylish character derived from lagering. Pours a luminous gold colour, with a thick, large, white head. Floral aromas hit the nose, with a slight hint of peppers and spices. Taste is light, delicate, and full of the same floral notes, while also malty, with a dry hoppy finish. Food to Match: Goes well with Traditional German Cuisine, and fish, pork and shellfish

Schlenkerla Rauchbier

Bamberg and Smokebeer (the Germans call it "Rauchbier") belong together.

The greatest of which is the Schlenkerla: the most productive, most visited and most traditional Smokebeer source in Bamberg.

It originates in the middle of the old town, directly underneath the mighty cathedral, from a half-timbered house on which the geraniums effusively glow in the summer.

Anyone who did not come here and try the strong, unmistakable taste of Original Aecht Schlenkerla Rauchbier cannot claim to have been to Bamberg. Its smoky flavour is being achieved by exposing the malt to the intense, aromatic smoke of burning beech-wood logs at the Schlenkerla-maltings. After mixing it with premium-class hops in the brew, it matures in 700 year old cellars, deep down in the hills of Bamberg, into a mellow, magnificent-tasting beer.

Marzen Tasting Notes: There’s campfire, smoked cheese and bacon, and that’s just in the

beer’s seductive aromas. Roasted malts are also noticeable, and it’s an intoxicating

combination of these characters that create an utterly unique taste experience, and

a must-try for all true beer lovers.

Food to Match: It’s a perfect compliment to the flavours of German sausage,

kassler (smoked pork) or smoky cheese.

Weltenburger

The monastery of Weltenburg, founded at the beginning of the 7th century by the abbot Eustasius, was turned into a Benedictine monastery by Saint Boniface, and raised to an abbey by Duke Tassilo. Weltenburg, Bavaria’s oldest monastery, became a mission centre for this region. The first references to a brewery in the Weltenburg monastery are to be found in the Weltenburg Nekrologium, in which it states the brewer died. Another scientifically recognized source is a recorded entry in the “Libellus Traditionum” which is over 900 years old, and which dates from shortly before or after 1050. In the thousand years which have almost passed between then and the present day, the monasterial beer production in Weltenburg was only interrupted by the secularisation from 1803 to 1846. In 1846 the brewery was returned to monasterial ownership, and has remained so up to the present day. The Weltenburg Brewery can justifiably claim to be the oldest monastery brewery in the world. Seven beers are produced in Weltenburg in accordance with the traditional art of brewing by an experienced master brewer who keeps most strictly to the Bavarian purity laws of 1516. The special flavours of the Weltenburg Monastery beer is guaranteed by the low content of nitrates in the brewery water and the regular— up to three months long— storage in stone cellars forty meters below the ground.

Asam Bock Tasting Notes: This classic example of the German doppelbock style constantly rates in the top ten beers in the World. Pouring a lovely, rich mahogany brown colour (with a creamy, tan head), and immediately revealing the large quantities of roasted malt at its heart. Caramel, chocolate, toffee and coffee aromas are most apparent, with nut, spice and dark fruit notes adding to this complex brew’s appeal. Its flavour is just as rich, sweet, spicy and satisfying, making the Asam Bock a full-bodied favourite amongst dark beer devotees. Food to Match: Great with desserts (especially chocolate), and Game.

Pilsner Tasting Notes: The Weltenburger Pils is the epitome of class, the pinnacle of 1000+ years of brewing history. A golden yellow colour, with a tight long lasting head. The initial aroma is of passionfruit and citrus hops, and a doughy malt scent emerges as the beer warms. The beer is refreshingly crisp with a wonderful interplay between the bitter German hops and the sweet bready malt. Food to Match: Great as an aperitif, or with fish or poultry.

Sierra Nevada In 1979, Ken Grossman began building a small brewery in the town of Chico, California. His goal: to brew exceptional ales and lagers. Today, the Sierra Nevada Brewing Co. is considered the premier craft brewery in the United States. And the beer? Critics proclaim it “Among the best brewed anywhere in the world.”

Ken’s passion for brewing began when a friend showed him the basics of home brewing. Using homemade equipment, Ken began brewing five-gallon batches of beer on his own, and soon became a proficient home brewer.

In 1976, after studying chemistry and physics at Butte Community College and California State University at Chico, Ken opened his own store, The Home Brew Shop. There, he supplied Chico’s home-brewing community with equipment, materials, and advice, but dreamed of opening his own brewery.

Two years later, it was time to make the dream a reality. Ken and co-founder Paul Camusi cobbled a brewery together from dairy tanks, a soft-drink bottler, and equipment salvaged from defunct breweries. Though the equipment was second hand, they created a first-rate microbrewery. The ingredients were premium, including the copious quantities of hops that would become the brewery’s trademark. An avid backpacker, Ken named the new company for his favourite hiking grounds, the Sierra Nevada mountains.

Finally, on November 15, 1980, the Sierra Nevada Brewing Co. brewed the first batch of what would soon become a landmark in American craft brewing: Sierra Nevada Pale Ale.

Word spread quickly, and over the next decade the demand for Sierra Nevada brews soon exceeded the brewery’s modest brewing capacity. Despite nearly constant additions to the brewery, Ken was soon back at the drawing board, planning a new brewery. In 1989, the Sierra Nevada Brewing Co. moved to its current site.

The fragrant bouquet and spicy flavour are the results of the generous use of the best Cascade hops. St Peters The St. Peter’s Brewery company is based at St. Peter, South Elmham, near Bungay in Suffolk. The brewery itself was built in 1996, and is housed in an attractive range of traditional former agricultural buildings adjacent to St. Peter’s Hall.

Situating the brewery at St. Peter’s was ideal because of the excellent water quality from the onsite deep bore-hole. Locally malted barley is used, together with Kentish hops to produce a range of classical English cask-conditioned ales. In addition the company produces a range of superb bottled beers.

They brew 'traditional' beers - bitters, mild etc. - as well as some more unusual beers such as honey porter and fruit beer. Replicating what was common practice up to the Nineteenth Century to add fruits and honey to beers to create special seasonal brews. Thus, blackcurrant and gooseberry beers would be brewed when soft fruits were readily available while at Christmas-time dried fruits, spices and orange peel would be added to create a special Christmas Ale.

St. Peter’s aim is to carry on traditional brewing practices but hope always to have something new and exciting for you to try.

Organic Best Bitter Tasting Notes: Bright dark amber in colour, with a fluffy light beige head. Aromas of fresh malty caramel with hints of lemony hop and yeast. Juicy amber malts and fragrant hops up front, are quickly followed by mildly roast bitterness.

Landlord Tasting Notes: A Classic Strong Pale Ale. It pours a deep golden colour with a bright ruby sheen and thick, creamy, pillowy head. Aromas are very fresh and hoppy, with plenty of crisp herbal notes and citrus fruit. On the palate it has a rich, mouth-coating texture and an immediately bitter spectrum of flavours with a suggestion of spinach and leafy greens, minerals, and dry, hoppy flavours. There's a little biscuity note of malt in the finish, but this is uncompromisingly dry. Very good indeed.

Timothy Taylor In 1858 Timothy Taylor began brewing beer in Cook Lane in the West Riding town of Keighley. He clearly struck upon a successful formula for in 1863 he set up and built a larger brewery at Knowle Spring, where the company has remained ever since. The superb spring water that wells up from deep under the Pennines is still used today to produce the country's best traditional cask ales. The brewery remains in the Taylor family and is now the last independent brewery of its type left in West Yorkshire. This independence enables Taylors to survive as one of the few brewers still brewing true cask ales in the same way it has always done. "Taylor's Taste" is achieved by using only the finest natural ingredients , taking pride in the brewing process and allowing full time for the ales to ferment and mature, thereby creating a unique family of beers. To Timothy Taylor, flavour is all important. By brewing with the best Malt and Hops, out-standing beers are produced naturally with better keeping qualities, a wonderful head and superior flavour. Brasserie du Bocq

Brasserie du Bocq, set up in 1858 by Martin BELOT, a farmer in Purnode, began when Martin started brewing beer at his farm. At the very beginning, the beer was only brewed in the winter, when there was no work for his farm workers in the fields.

The brewery produced a very wide range of products, going from table beers to strong beers, passing through a large mix of densities, colours bitterness and tastes.

Still 100% family owned, Brasserie du Bocq remains one of the last traditional Belgian breweries.

Located in the heart of the Condroz, this dynamic company still uses the traditional manufacturing process of top-fermentation beers with secondary fermentation in the bottle.

Today the sixth generation of the Belot family is leading the destinies of Brasserie du Bocq and looks forward to the future with confidence. Nothing has changed in Purnode, at least in the art of brewing, even if the company has widely extended it’s local activities

St Bernardus In the most remote corner of West Flanders, in the middle of “Le Plat Pays”, in the heart of the hop area in West Flanders, a beer is made that beer lovers around the world have come to adore. In this poetic village, called Watou, time is apparently passing by slower than in the rest of the country. Life over there is different, quieter; where people live in accordance with nature, where tradition and values are honoured as though time has stood still. This is also the case for the brewery. Due to the anti clerical policy in the beginning of the past century, the Catsberg Abbey Community, located in the northern part of France, decided to move to Watou, a small village only a couple of kilometres further away but located in Belgium. They transformed a farm into the “Refuge Notre Dame de St.Bernard” with the production of Abbey cheese being the main product. With the proceeds of the sales, they financed the Abbey activities. In the early thirties, the attitude owards the Clergy in France got better and in 1934, the Abbey community decided to dispose of the Belgian annex move back all of it's activities to France. Mr. Evarist Deconinck took over the cheese factory and built a new building at the Trappistenweg in Watou where the cheese was further developed and commercialised. This building was later transformed into the present day private rooms but the traces of the cheese factory are still visible. Shortly after the Second World War, the Trappist Monastery St. Sixtus decided to stop commercialisation of their beer and called upon non-residents of the Abbey. An agreement was made - inside the walls of the Trappist Monastery there would only be beer brewed for their own consumption, for sales to the public at the gates of the Monastery and also for a few taverns who where connected to the Monastery. Mr. Deconinck on the other hand would brew and commercialise the Trappist Beers under licence (for a period of 30 years) Next to the cheese factory, a new brewery was constructed and Mr. Deconinck started to brew the Sixtus beers with the help of the Master brewer of Westvleteren, who brought along his wisdom, knowledge and the original recipes. In the beginning of the 60’s, the son-in-law of Mr. Deconinck, Mr. Claus stepped into the brewery and negotiations started to renew the license. This was finalised in 1962, again for a period of 30 years (until 1992). In 1992, the agreement came to an end because the Trappist Monasteries (5 in Belgium and 1 in the Netherlands) decided that the qualification ‘Trappistenbier’ could only be given to beers brewed inside the walls of a Trappist Monastery.

Therefore, since 1992 the beers brewed at the Trappistenweg 23 in Watou are commercialised under a new brand name ‘StBernardus’ (referring to the Refuge de Notre Dame de StBernard – cfr. supra).

ABT 12 Tasting Notes: Often rated as the best beer in the world the Abt 12 is the flagship

of St Bernardus. It pours a murky dark mahogany with a tan head. Aroma’s of

dark fruits (raisins and plums), bready yeast and a touch of spice. The flavour is

bold and strong with bready yeast and spice and the dark fruits coming through

after a few sips. Definite alcohol and pepper in the long smooth finish. A truly

iconic beer.

Lefebvre The origins of the Lefebvre brewery, located at Quenast (in the Brabant region of Wallonia, the French speaking district of Belgium) in the valley of the Senne, goes back to 1876. In this year, Jules Lefebvre, gamekeeper, farmer, inn keeper and brewer, inaugurated his new brewery. Pubs were opened around the neighbouring porphyry quarries so that the numerous workmen, made thirsty by stone working, could come to refresh themselves.

In 1921, just after the First World War, Auguste Lefebvre, son of Jules, moved the brewery from the centre of the village towards a neighbouring hill in order to avoid the annual floods of the Seine. The new brewery was installed in place of a brewery that had been in bankruptcy, in the location where the present buildings are.

In 1983, the Abbey of Floreffe entrusted the Lefebvre family with a licence for the brewing of its special beers. The range, including 3 beers at the beginning, quickly widens to 5. Starting with the Floreffe Double, Floreffe Triple and Floreffe Prima Melior, the Floreffe Blonde and Floreffe Blanche are soon added to the range.

In 1996, the brewery innovates and launches Barbãr, a lager with honey. Its little sister, Barbãr brassin d’hiver, brewed from October to February, also follows soon after.

Six generations young, the Lefebvre brewery remains above all a family business. Unceasingly in expansion, they mainly work with overseas countries by exporting more than 80% of their production.

Brasserie Dupont

Brasserie Dupont is a co-writer of Belgian beer history. Situated in Tourpes, in the centre of West-Hainaut, and incorporating an old farm, the brewery has been producing wonderful, unique beers since 1844.

Their specialty, is in producing saisons - farmhouse ales traditionally brewed in the winter to sustain the farm labourers during the summer. ‘Saison’ literally translates to ‘season’. Therefore, saisons are traditionally light and spicy beers brewed for the summer and hotter months, a low terminal gravity makes them remarkably dry and refreshing.

Fruity, dry and spicy, saisons are complex beers. Much of the flavour comes from the use of some unique top fermenting yeast strains. They lend spicy flavours, reminiscent of orange peel, clove, allspice, citrus, cut grass and coriander. Saisons also have a distinct 'funkyness' about them - earthy and rustic flavours as comforting as a good red wine.

Dupont's beers have a more aggressive hop character than other Belgian ales, adding to the complexity and refreshing nature of the style.

In recent times there has been a trend towards producing high gravity "super saisons". Dupont produced the first of these beers in the 1950's under the Moinette label (Moinette Blonde and Moinette Brune). The Avec Les Bon Voeux reinforced this concept, and paved the way for this new style of beer.

With the exception of the Moinette, the Dupont beers come in 750mL corked champagne-style bottles. This is the traditional bottling method of farmhouse breweries such as Dupont, a logical extension given the vinous characters of the beers, and not surprising considering they are such close neighbours to France!

As part of the breweries production, Brasserie Dupont now produce several qualified organic beers with the label Biogarantie® These include the Saison Bio, Moinette Bio, Bier de Meil Bio and Blanche du ht Bio.

Cervesia Tasting Notes: Cervesia is a recreation of an ancient style of beer. It was created exclusively for an archaeological site in a village neighbouring Dupont. According to the brewery, the archaeologists undertook "long and intense research" into the common styles of beer being consumed at the time and based on their findings and asked the brewery to replicate such a beer. The result is a blond beer utilising a blend of various flowers and herbs (as opposed to hops) to flavour the beer and balance the sweet malt flavours. Like the other saisons it is dry and refreshing, with a lightness belaying the 8% ABV. Food to Match: Drink lightly chilled as an aperitif

Lindemans Eight generations ago, in 1809, the Lindemans family owned a farm in Vlezenbeek near Brussels. They decided to intensify Lambic brewing activities during winter, when less farm work had to be done. The farm produced wheat and barley, the raw materials of the Lambic.

"Lambic" is infamous in that it is more vineous than your regular Belgian style of beer. This style can only truly be produced in a specific region of Belgium from local barley, unmalted wheat, and aged or "debittered" hops, and matured in oak casks in the breweries cellars.

These casks harbour various local wild yeast and bacteria, causing the wort to ferment without the addition of a commercial yeast strain (known as spontaneous fermentation). The result is a light bodied but intensely sour and complex beer - the tartness is akin to a hard cider or white wine.

To make the beer more palatable en-mass- most people are scared of the sour and funky flavours, breweries often add fruit to the casks mid-fermentation.

Kriek (cherries), framboise (raspberries), apple and cassis (blackberries) are the most common additions.

The beer takes on intense fruit flavours and colours when brewed in this manner, though interestingly the fruit does not add any sweetness to the beer. Sweet versions are produced by sweetening before packaging. Both adding fruit and sweetening are methods of "taming" these wild brews, by offering balance to the often intense sourness.

Framboise Tasting Notes: Pours a very deep pink colour with a pink flecked, tight white head. Pronounced raspberry fruit aroma with some yeast and almonds. Flavour begins with a tart edge before a raspberry syrup taste takes over.

Food to Match: Chocolate desserts (especially chocolate decadence), fresh

raspberries, ice cream with a raspberry demi-glaze sauce, créme caramel, baked

Alaska, Olympia oysters, caviar.

Cantillon Steeped in history and tradition, Cantillon is held in the highest regard among beer connoisseurs worldwide. Cantillon produces Lambic beer, but unlike other Lambic brewers, does not sweeten or modify their beers in any way. Cantillon beers are sour, funky and unique - they are the traditional style sour beers brewed as they were when the brewery first opened over 100 years ago.

Lambic beers are made from a blend of malted barley, raw wheat and debittered -3 year old- hops. The wort is exposed to wild yeasts and natural bacteria by cooling in an open vat. The beer is matured in oakwood or chestnut barrels, which also harbour the wild yeasts and bacteria, and left to naturally ferment in the brewery’s cellar for up to 3 years.

The wild bugs cause the beer to ferment natural (spontaneously) - that is without the addition of any commercial yeast strain. The result is a light bodied but intensely sour and complex beer with a tartness reminiscent of a hard cider or white wine.

Lambic brewers often add fruit to the casks mid fermentation. The beer then takes on intense fruit flavours and colours, though interestingly the fruit does not add much sweetness to the beer.

The beer is commonly bottled in 750mL corked champagne bottles - fitting due to the vinous character of this style. We are lucky enough to have 375mL corked bottles also.

Rose De Gambrinus Tasting Notes: Pours a ruby russet, with amber highlights, and a billowing pink

head. Raspberry and cream, peppers, and earthy aromas dominate the nose, with

hints of oak and turkish delight. A tart, raspberry flavour combines with ripe fruit,

marmalade and a refreshing acidity to finish creamy, puckering and moreish.

Iris Tasting Notes: A completely original beer which, contrary to the other products

of the brewery, is not brewed with 35% of wheat. The Iris, which is only made

with malt of the pale ale type, conserves the typical flavour of the spontaneous

fermentation, the complex aromas and the vinous taste. The hopping is different

too. Lambic is made with 100% dry hops, but for the Iris we use 50% dried hops

and 50% fresh hops. Although it is a spontaneous fermentation beer, the Iris is

very different from the Lambic. The amber colour and the bitter and slightly

caramelized taste make it very interesting and complex beer.

Food to Match: It’s hop flavours make this a lovely accompaniment to spicy

Asian dishes.

Vigneronne Tasting Notes : By blending Muscat grapes and lambic, brewers and beer merchants

produced the “druivenlambik” (grapes lambic). The fructose, which abounds in

of certain white wines.

Saint Lamvinus Tasting Notes: Pours dark red / purple with very little if any head. Its strong

Cuvee Lou Pepe (Gueuze, Kriek & Framboise In a lambic brewery, every bottling (about 50 each season at the Cantillon brewery) results in a beer with its own more or less complex taste. These differences are one of the characteristics of the Gueuze, Kriek or Framboise. The lambic beers are blended in order to neutralize these differences and to be able to offer our customers a beer with a harmonious taste the whole season through.

The Lou Pepe beers deviate from these principles. The Gueuze Lou Pepe is made with two years old lambic beers with a mellow taste, often coming from barrels in which only wine has been kept before. In July, the same kind of beer is used to make the Lou Pepe Kriek and Framboise. With these beers too, the fruits are soaked in barrels coming directly from Bordeaux.

The second fermentation of these particular beers is not caused by the addition of young lambic but of a sweet liquor. The yeast will transform the sugar in carbon dioxide. All the lambic beers which are used, are brewed in the same season and the use of liquor instead of young lambic makes the taste of the fruit more intense. The Kriek and the Rosé de Gambrinus contain 200 g of fruits per litre on an average, while the Lou Pepe beers contain about 300 g. This fruity taste, combined with the wine flavour coming from the Bordeaux barrels, distinguishes these special beers from the other Cantillon products.

The particular name of these beers comes from the south-west of France, a region the

Cantillon family is very fond of. In this beautiful region, the grandfather is called Lou

Pepe. To his grandchildren Florian, Simon, Louis and Sylvain, the master-brewer is

the Lou Pepe of the North.

Odin’s Tipple

Tasting Notes: Pours black as hell. Massive, menacing, ultra dark brown head erupts forth with very good retention. Bold roast chocolate-cherry and vanilla coffee aromas swirl over notes of smouldering wood and burnt juniper berries. Haand Bryggeriet

Situated in Drammen, Norway, in a wooden building nearly 200 years old Haand are trying to keep the long tradition of Norwegian brewing alive. They are digging into old history and traditions to recreate some of the old Norwegian beer types that got lost through time. This is their dedication. The best possible ingredients are put together by hands that care about the beer produced. No automation means a lot of hard manual labour, but they hope the end product will be worth it and appreciated by the beer loving consumers. They make living beer that’s not filtered or artificially carbonated, but naturally re fermented in the bottle. Whilst they have a passion for the history of Norwegian brewing they are also experimental and are producing some fantastic new-age beers. Stassen (The Belgian Cider Company) In 1895, Léon Stassen, a farmer, produced his first cider, using apples from his own orchard in Aubel. He wrote down his original recipe, which was carefully treasured and passed on to his son, Léon, who in 1937 founded a small traditional cider brewery in the centre of the village. Léon junior’s son Jean kept this passion for cider alive for over 50 years, only retiring from the business at the age of 68 after entrusting its destiny to his three sons, who today carry on the family tradition.

Between 1987 and 1991, the company experienced exceptional growth thanks to the success of its flavoured ciders. It thus became the leader in the Belgian and Dutch cider markets.

Between 1992 and 2008 Stassen was owned by the UK’s Bulmers group which in turn became a part of Scottish & Newcastle. Over that time the focus was taken away from producing Stassen’s famous ciders and directed towards expanding the Bulmers brand throughout Europe.

In 2008 the Stassen family decided to buy back the family business to once again concentrate on producing top quality Belgian ciders and today has export markets right across the globe.

‘Over Ice’ Apple Tasting Notes: Pours a brilliant golden orange with fluorescent copper/gold highlights. Sparse white foam rises quickly then recedes. Aroma is predominantly of freshly pulped apples, although there is an underlying note of banana, blackcurrant and vanilla. Domaine Dupont

Located in Pays d'Auge, a part of Normandie well known for the quality of its agricultural products, the Dupont Family has run a 50 hectare Domain for over 4 generations, of which 30 hectares is apple cider orchards. The soils of the Domain, mainly marls and marly chalks, produce fruits with low yields that are rich and complex, that allows them to produce a large range of traditional and innovative products.

Etienne Dupont has been in charge of the Domaine since 1980, when he took over from his father Louis and his grand father Jules. He has improved the old orchard and has planted a further ten hectares of small standard apple trees.

Today, there are 27 hectares of typical varieties, 6000 apple trees, for the production of Cider, Pommeau and Calvados. Etienne went to Cognac to learn the art of double distillation and worked in close partnership with an oenologist. From the picking of the apples, to the final ageing of the Calvados.

Domain Dupont is fully committed to producing the best quality. Quality always comes first, often at the expense of the yield.

Calvados Original Info: A mix of 30% sweet apples, mainly Rouge Duret, 30% bitter apples (Mettais, Saint Martin, Frequin and Binet Rouge) and 40% of apples with acidity, mainly Rambault. Apples which are all cropped manually.

The apples are then mixed together, crushed and pressed. The apple juice ferments completely and the cider produced is ready to be distilled.

Double distillation takes place six months after the end of the cider production.

The first distillation of cider gives the 'petite eau' while the second distillation of the 'petite eau', produces Calvados.

The Calvados is then aged for a minimum two years in 3000 litres oak barrels, then in 400 litres casks which have already been used for a number of years and do not release any more tannins. Thanks to this process, the calvados keeps its "Original" fruity flavours and a very pale colour.

Pomme Captive (The captive apple) Info : At the beginning of spring, as soon as the apples appear the carafes are hung on the branches of the apple trees. The carafe is left until the apple has matured and are then taken down.

The carafes are then filled with a strong (70% alc.vol) 2 year old calvados that will help bring the apple alcohol content at around 40%. A few weeks later, the carafes are emptied and refilled with the final calvados. The apple will then continue slowly "maturing" in the calvados.

In order to keep the apple in good state, always keep the apple covered by adding more calvados.

Cidre Cuvee Colette Tasting Notes: A clear, coppery yellow colour with a very thin and permanent foam head. The nose is lively and fresh with hints of green apple, caramel and citrus fruits. This delicate and elegant cider is fresh, fruity and slightly acidic with lovely flavours of acidic apples and pineapple. Food to Match: Cuvee Colette can be served as an aperitif or with apple desserts. A perfect change from your best French Champagnes.

Henney’s Cider Co. Mike Henney started making cider as a hobby in 1996. At that time, it was 5 gallons fermented in his airing cupboard, but the hobby got a bit out of hand and in 2008 produc-tion has reached over 200,000 gallons! (no longer in the airing cupboard).

The business is still run by Mike in close collaboration with some key service providers. These include Wyre Croft Farm at Bishops Frome who, as well as supplying apples, also mill and press all the fruit and provide storage for the juice. Other key services of packing and warehousing are provided by Branded Drinks Bottling in The Forest of Dean.

Mike’s objective is to make the best cider possible and provide customers with a great service. He believes this is best achieved by keeping every process as simple as possible.

All our ciders are genuine craft products that are made from locally grown apples. Cider can only be labeled “Herefordshire” if it meets minimum requirements relating to provenance and ingredients. This entitles it to PGI Status (Protected Geographical Indication)

Fromme Valley Dry Tasting Notes: Pleasant bittersweet apple flavour, well-balanced sweetness and acidity, not too astringent and without excessive bitter aftertaste associated with some traditional ciders.

Food to Match: Partners well with pork chops and spicy chicken dishes.

Can also be used as a substitute for white wine in cooking.
