The Role of Adamark Airknife Drying Systems in Canada’s:
Vegetable Packaging IndustryThanks largely to new technology, it is now normal to see fresh fruits, vegetables and salads in Canadian markets 12 months of the year. Not only are they available, they are prepared ready to use or ready to serve in convenient portioned packages, offering everything from fresh cut and cleaned carrots to firm and flavorful frozen breaded zucchini wedges.
Vegetable processing can be done faster, more effectively and at reduced costs using packaging accessory equipment from R.E. Morrison Equipment Inc. Vacuum pumps, blowers and air knife drying and cleaning equipment are integral components in many of the procedures used to get fresh produce from the field to the table.
Vacuum ChillingVacuum cooling can be used in cases where further accelerated ripening can occur while vegetables await transport to the plant. Ice is placed on top of the loaded truck or wagon and covered to create a seal. High-flow Becker vacuum pumps are then used to remove the trapped warm air from within the load. Ice-cold air from the top now replaces the warm air, chilling the product to stop ripening. Vacuum chilling prior to storage and shipping is common. Here, an oil lubricated vacuum pump removes the warm air from a large vacuum chamber. Once the air is removed, chilled air is introduced, rapidly cooling the product.
Our ADAMARK Air Knife Drying Systems remove the gross water prior to entering the vacuum chiller. This dramatically shortens the vacuum chilling cycle time.
Product CleaningOnce in the plant, ADAMARK air knives are used to blow leaves, stems and loose debris from products prior to washing. After washing, the products should be dried to prevent mold and to provide a clean appearance for market. An ADAMARK system was installed on a pepper conveying line to dry the stem to prevent a musty smell and mold from developing after the product was washed. The same system was used to remove loose skins and dirt from whole onions prior to bagging.

required the ADAMARK air to water heat exchange
can be used to remove the heat caused by
compressing air at pressures up to 2 psi. The
ADAMARK system can be used to cool cooked
products such as battered zucchini wedges prior to
freezing. The heat exchanger allows a cool continuous
stream of air from the blower to filter around the
cooked product removing more heat faster than
traditional fans. Moving back on the line, air knives
are used to remove excess batter from the product
before frying. In high volume production our air knives,
powered by a one Hp, blower clean the fryer finds
from the belting to ensure debris does not re-enter the
cooking oil.
Drying to Shorten Freezer TimeThe production of potato products requires that
the potato be clean and dry for bagging. Further
processing as French fries, hash browns or shredded
potatoes requires extensive washing to remove natural
starch and water prior to freezing. The ADAMARK
air knife system is used on shaker tables to remove
water reducing the freezer load to enable more frozen
product in the same amount of time. The air knives
can produce temperatures of 15°C over ambient,
ideal at removing frost from freezer belts. Compact
and quiet, blower driven air knives are used as air
curtains at the inlet and outlet of washers and freezers
(typically on smaller opening of 24” high up to 60”
wide).
In the production of frozen kernel corn, peas, beans
and carrots the product has more appeal as frozen
pieces rather than stuck together with ice. ADAMARK
drying systems are used by many frozen vegetable
producers to dry kernels prior to packaging.
