editor’s note HELLO AND WELCOME TO THE WINTER ISSUE OF SILVER CITY LIFE.

The winter issue of Silver City Life is all about food. Silver City is developing a

wide range of choices typically found only in the larger communities, with influences

materializing from around the globe.

The “food world” of Silver City is definitely coming of age. The Curious Kumquat

took a bold plunge by offering some unique cooking classes. I had such a good time

photographing one of the classes that I am looking forward to taking some myself. And

what a great store for broadening your food experiences – you won’t even have to trav-

el to the big city for needed ingredients.

I hope you will enjoy all the stories and perhaps learn about new places and infor-

mation…I did. There are so many stories about food that we want to tell, but most will

just have to wait for future issues. I know the photographs of meals from our area

restaurants will entice your palate; you’ll want to try them all.

We highlighted three local cookbooks, but to my delight, I found there were a num-

ber of others. The proceeds from these cookbooks go to great local charities that help

our community. I have already tried the Southwestern style linguini recipe offered by

Simon and Sandra Ortiz. I really liked it. As for the Pumpkin Pie recipe, that one is my

grandmother’s and she makes it for me. I can’t wait to try the others that are featured.

Eugene Lewis beganserious birding in east-ern Kansas in the1950s, eventually roam-ing the entire state inhis pursuit of the avianspecies. Upon retire-ment in 1991 he movedto Silver City, where he

has continued his lifelong quest.

Pat Young lives withher husband Jeff in themountains above theMimbres Valley wherethey hand-built their loghome. The retired journalist has writtenfor numerous publica-tions. She currently

Where Bullard Street ends, a unique shopping experi-ence begins for anyone seeking international and gourmetgroceries and quality cookware.

The curious Kumquat is located at 111 E. College Ave.in a charming building painted, well, the color of kumquat,a small citrus fruit that originated in China. First-time shop-pers know immediately that this is a new experience whenthey open the door. The sunny entry has stacks of wovenshopping baskets produced by a women’s cooperative inGhana, and fresh flowers promoting the building’s formerowner, Lusk flowers.

These are just two examples of the way owners Rob and

Tyler Connoley partner with and give back to the commu-nity and beyond. They also offer locally made products andpartner with Silver High School’s culinary program.

Rob and Tyler opened their store three years ago afterhearing people say they wanted gourmet and internationalfoods. They moved from their previous location on Bullardto their current building a year ago. From day one, theyboth wanted “to create something the town could beproud of.”

The name “Curious” came from their desire to learnnew things, Tyler says, and “Kumquat” because it was afun word. It also means good luck in Chinese.

“Everything we order comes from customer requests,”Rob says, adding that “most gourmet and international foodsare not expensive. We eat around the globe every night.”

Looking for something unusual? They have everythingfrom a rare Turkish oil and 25-year-old balsamic vinegar toPortuguese smoked trout and bacon chocolate bars. Theyalso carry less exotic items, including an impressive range ofpastas, sauces and cheeses.

People come in frequently asking for ideas when preparingmeals. Tyler answers questions about appetizers and maincourses. Rob is the “sweets” guy. They offer cooking class-es about twice a month. In September, there were classeson sushi and Chinese. Classes, usually on Saturdays, last acouple of hours. They keep enrollment down to eight. Thefee, around $35, covers materials as well as a gift bag ofingredients so participants can try it at home. Call the storeat 534-0337, or stop by for class information and schedules.

“We sell memories, too,” Tyler adds. No matter whereyou’ve been in the world, something at The Curious Kumquatwill bring back memories. Their business card says “life’s abanquet.” So is their store.

Silver City and area residents enjoy Chinese cuisine andcurrently have a choice of at least four restaurants that offerthis type of food. But it was not until 1874 that the firstChinese resident, Charlie Sung, came to Silver City fromMorenci, Arizona to establish a wash house and, three yearslater, opened a restaurant at the corner of Bullard andBroadway streets.

More Chinese people followed and established such busi-nesses as hotels, restaurants and raising vegetables at thesouthern end of town known as the Chinese Gardens.

Helen Toy, Mrs. James Graff, who now lives in Tucson,said her family came to Silver City from Morenci in 1932.Her parents were Yee Do Toy and Rose Toy. They are

remembered for their grocery store which was located atthe corner of Market and Arizona streets. Her brothers,Herbert and Walter still live in Silver City.

Among restaurants that flourished in Silver City were theManhattan, owned by M. F. Lime and Barker’s, owned byFred Mar. The Rainbow was owned by the Sherman Wongfamily and Bow’s Market, which was in the Murray Hotel andowned by Bow Yee. The present Buffalo Bar occupies thebuilding that at one time was the Grant Restaurant. Also inthe food business was Hing Lee, who had a grocery storeon Broadway adjacent to the Big Ditch.

Although not all were food businesses, there were at least30 Chinese stores in Silver City. This was reported by Terry

While some opium denswere owned by Chinese, andwholeheartedly patronized bysome town citizens, the Asian

residents were seen as honest, hard working persons.However, there was prejudice against them and at one time,the “good citizens of Silver City” met and attempted to runthem out of town because of their “sly ways” and for resist-ing total immersion into “good American life styles.”

There were years, in the early 1980’s when the closestChinese restaurant was in Lordsburg but, a few yearslater, Silver Citians began to patronize new Chineserestaurants that opened in Silver City. Today theserestaurants are the China Gate, Golden Star, the GoldenDragon and the Chinese Palace. According to Eric Wong,owner of the Golden Dragon, Chinese dishes are namedfor northern or southern areas of China. Popular namesinclude Cantonese, Mandarin and Szechuan.

The news of the de-listing this year of the BaldEagle from the endangered species list is especial-ly noteworthy since there was a concerted effort formany years to bring back our national emblem to ahealthy population. We who live in this part of thecountry have an opportunity during the wintermonths to see Bald Eagles rather easily. There havebeen at least two adults inhabiting the Lake Robertsarea for the past several winters. If at first you don’tfind them just be patient and one could fly overheadat any moment. Or, look across the lake at a talltree where they often perch.

Besides Lake Roberts, Bear Canyon Lake canhost some Bald Eagles as well. After coming up therise to the first view of the lake there are two deadtrees directly across the water. It was in these treesthat I saw as many as ten eagles resting one winter,only two of them being in full adult plumage. Formany years immature Bald Eagles were very hard tofind, and having that many at one place made mefeel they had made a strong turnaround in theirbreeding success.

While at the two lakes, take time to look at thevariety of ducks. At Lake Roberts one should findCanvasback, Bufflehead, Common Merganser andRuddy Duck in good numbers. Look also for Pied-billed Grebe, Eared Grebe, Western Grebe,Redhead, Ring-necked Duck and Lesser Scaup.

Bear Canyon Lake often has a different variety, inaddition to the ones already cited, to include Green-winged Teal, Gadwall, American Wigeon andHooded Merganser. Lake Roberts sometimeshosts Red-breasted Mergansers and CommonGoldeneyes.

The other North American eagle to be found inour general area in the winter months is the Goldenand I find them from mid-November and on throughthe winter along US180 between Hurley andDeming. They can be seen on the tall power poles,the ones with cross bars. I have seen as many assix along that stretch of highway but most of thetime only two or three. Binoculars are a require-ment, and a spotting scope would help in identifyingthe eagles and the many other raptors along theway, the most abundant being Red-tailed Hawk.Once in a while a Ferruginous Hawk will be there aswell as Prairie Falcon, Merlin or American Kestrel.

It is always exciting to anticipate what othernorthern birds will come down to our area. RedCrossbills, Cassin’s Finches, Pinyon Jays andTownsend’s Solitaires show up in good numbers insome winters. Maybe this will be the winter forEvening Grosbeaks coming to your feeders.Whatever the case, get out and look. Winter is anespecially inviting time to explore and enjoy; andoffers a great escape from the summer heat.

“2007 will be remembered, sadly, as the year GrantCounty lost two exceptional legislators,” lamented StateRepresentative Dianne Hamilton. “In October, my dearfriend and colleague, Representative Manuel Herrera,passed away. Shortly after Christmas, we were all stag-gered by the death of Senator Ben Altamirano, thePresident Pro Tem of the Senate and the longest servinglegislator in the history of New Mexico. They both wereloved by all whom they touched. Our Legislature has beenricher because of their contributions and they both will besorely missed. Like the rest of the community, I am still inshock at the profundity of our loss.”

“Ben’s approach to business, life and politics,” states for-mer representative Murray Ryan, “was to help others andhe made friends at every turn. He was a champion forWestern New Mexico University and his willingness to lis-ten and evaluate allowed him to do a marvelous job ofsecuring funds for area public works. His tenacity, his rather

unique political instinct for gaining the confidence of fellowlegislators and his seniority created a tremendous advan-tage for the area.”

Murray continued, “Representative Herrera was gainingconfidence and experience during his term in the State Houseand was somewhat of a symbol for his legislative district. Hisconstituents virtually idolized him as their spokesman in thelegislature and it is sad that he was not able to continue serv-ing on into the future. He and his wife Kathleen as a teamwere greatly respected and appreciated.”

7-8 large roasted and peeledgreen chilis, diced (mild,medium or hot to taste)

3-4 large garlic cloves, thinly sliced or pressed

2-3 tbsp. olive oil (use 1⁄2 stickof real butter if arterial clogging is not a concern)1⁄2 pint carton whipping cream1⁄4 cup chopped fresh parsley1 tbsp. oreganosalt and pepper to taste Parmesan or Romano cheese, grated.

SOUTHWESTERN LINGUINIAND CLAM SAUCE

Experience an Italian favorite linguini and clam saucewith a touch of southwestern New Mexico’s delight,green chili. Serves 4

Sauté garlic, clams, shrimp or scallops, green chili in oliveoil (or butter) for 3-4 minutes, sprinkling in parsley andoregano. Let stand 2-3 minutes for flavors to blend.

Mix in whipping cream, bring to simmer and pour in clamjuice. Add salt and pepper to taste. Simmer at low heatfor 10-12 minutes.

Serve over linguini and top with Parmesan or Romano (or both) cheese. Garlic bread and a stout red wine are amust. Tossed green salad with a tart vinegarette dressingadd to the enjoyment.

Combine the ingredientsand add a pinch of rosemary. Rub the seasoning onto the backside that has a layerof fat. Cook with the fat on top. Preheat theoven to 325 F. for 25-30 minutes per pound.Don’t open the oven until it is ready to checkthe meat temperature. Using a thermometer,the center temperature should be 125 F. forrare, 145 F. for medium rare and 160 F. formedium well. For well done, the roastshould cook 35 minutes per pound and thecenter temperature will be 170 F. Let it sit for15 minutes and begin carving.

Fajita Preparation TipA southwest fajita recipe from a staff member

is easy and relatively inexpensive. I recommendchicken tenders or top sirloin for a tasty, tenderresult. The vegetables would include onion,bell pepper (red or green) and jalapeños (orgreen chiles). In a full ounce of oil, sauté thevegetables in the wok to soften them. Turn theflame to medium and add 2-3 pounds of meat(two pounds feeds 4-6 people) and season withgarlic salt. Because of the vegetables, I recom-mend not using pepper. When the meat colorbegins to darken, turn the flame to high andstir for 4-6 minutes. When the vegetables beginto shrink and the meat browns, it’s done.

“A meat cutter has to plan ahead,” states Anthony Alarcon, “tomeet the request from an individual customer or simply to keep thedisplay case full while minimizing waste. Do we need to wrap familypacks, center cuts, thin cuts for the grill or New York strips? Are weout of stew meats, roasts or ribs? Should we grab the box of primecuts, chucks and shoulders or rounds and bottoms?

“At the Food Basket in Silver City, of course, it’s customer servicethat keeps them coming back. I try not to run out of anything and atthe same time, work with the customer to insure that he gets whathe wants. We cut our meat daily and keep the case fresh. I don’tallow anything in the meat case that I wouldn’t buy myself.”

Anthony was born in Deming and is a graduate of Deming HighSchool. “My Dad and his best friend butchered their own cattle and

sheep when I was growing up, so I have been around the processall my life.” He began working at Furr’s in Deming starting

with cleanup and wrapping and working into cutting andmerchandising. Art Reyes at the Food Basket in Bayard

slaughterhouse experience in Boise, Idaho, man-

A grass roots movement for the cen-ter began with nurses, spearheaded byKaren deGenevieve, then a registerednurse in charge of the special care unitat Gila Regional Medical Center.

“This whole process started manyyears ago, bringing chemo here so peo-

ple didn’t have to travel so far,” saysdeGenevieve, now a family nurse practi-tioner with the cancer center.

Construction for Gila Regional CancerCenter began in 2006 on the north sideof GRMC. The center opened in April of2007. Before that, patients were treatedin the Chemotherapy Infusion Clinic inGila Regional Medical Center.

Funding for the new center came fromthe State of New Mexico. A dedicationplaque gives special recognition toSenator Ben Altamirano and GovernorBill Richardson as well as the SenateFinance Committee and New MexicoFinance Authority. A second plaqueexpresses gratitude to RepresentativesDianne Hamilton and Manuel Herrera as

The first doctors, with New MexicoOncology Hematology Consultants, Ltd.at New Mexico Cancer Center, startedcoming down in 1995. The same special-ists still come today for 5 clinics, wherethey see up to 26 patients.

“Regardless of the facility, it’s the peo-ple and staff that make this a specialunit,” says Mike Torres, director of thecancer center.

A graceful sculpture at the center’sentrance gives a sense of serenity, asdoes more New Mexico artwork in thelobby, purchased from New Mexico ArtsCouncil through grants. Efficiently usedspace beyond the lobby includes fourexam rooms, two extended care rooms, achemo room and nurses station. Behindthick doors is a state-of-the-art radiationunit, scheduled to be running by early2008. Backlit ceiling tiles in the window-less room will give patients a comfortingoutdoor scene. High-tech equipment willgive specialists the ability to simulateexactly where a tumor is before radiation.

“The radiation unit will change every-thing,” deGenevieve says. Patients willno longer have to travel great distances

Both deGenevieve and Torres stressthat it is the dedicated caregivers that makethe center truly stand out. Patients agree.

“It’s wonderful to have this center righthere,” says Patty Smith, a Silver city res-ident and cancer patient. “KarendeGenevieve and the staff are incredible.They make you feel comfortable and helpthe patients have such hope.”

That’s important, according to deGene-vieve and Torres. “Being able to help can-cer patients at this point in their lives isincredible,” deGenevieve says.

“We get to know patients and theirfamilies,” Torres adds. “You just learn notto let things tear you apart.”

The American Red Cross office in SilverCity, working entirely with volunteers, abouttwo dozen of them, services the entire GrantCounty area. Despite its size and volunteerstatus, they respond to family fires, floodsand other natural disasters…and they wouldlike to do more.

Supported by the Southwest New MexicoChapter in Las Cruces, the Silver City officeis seeking a stronger community presenceand hopes to soon become a branch officeand eventually a chapter. Key volunteers aredeveloping a strategic long-term plan withthe help of an advisory committee comprisedof Grant County area community members.

The current goal is to hire a full or parttime paid employee and offer health andsafety classes that will include First Aid andCPR, babysitting and AIDS and HIV aware-ness sessions. The group also hopes tostrengthen and expand their emergency dis-aster plan by joining forces with localschools serving as emergency shelters.

“They peddle out such a fish as that bythe pound in the market-house there;everybody buys some of him; his meat’s aswhite as snow and makes a good fry.”

So wrote Huck Finn (Mark Twain) of a 200lb. catfish he and Jim caught off the bank ontheir trip down the Big River. Without catfish,they would never have survived their longjourney. The same fish, in somewhat smallerdimensions, is available to the angler insouthwest New Mexico. And with a fullkitchen at your disposal (Huck and Jim werecamped out), the catfish can make an evenbetter “fry.”

Summing up, catfish angling in our regionis available in the Rio Grande, and thewarmer waters of the Gila and SanFrancisco Rivers. Also, Elephant Butte,Caballo, Bill Evans, Bear Canyon, and LakeRoberts reservoirs have cats. Speciesinclude the channel catfish (most common),flathead catfish (bigger and less common),and blue catfish (big as the flathead andfound in Elephant Butte and the Rio Grande).“Eating size” catfish, averaging 12 to 20inches are most common, but monstersweighing 10 to 50 lbs. and more are a realpossibility. The catfish is attractive to boththe pan fisherman, or, the trophy hunter.

Both channel cats and blues are notedfor eating most anything, dead or alive,while flatheads favor live bait. Buy somefrozen shrimp, smelt, or squid at the gro-cery; it will thaw by the time you use it,makes great catfish bait, and will stay onthe hook. Even flatheads will sometimestake these dead baits, provided you keepthem fresh with an ice pack before usingthem as bait.

For live bait, nightcrawlers are an old reli-able. Package your worm container with,again, an ice pack. Nightcrawlers die quick-ly in summer heat and are much moreattractive alive, even to a catfish. And I liketo catch my own live bait for catfish. AtElephant Butte, use a throw-net to catchshad to use as live bait or cut bait. Andalong the Gila River my son Bud and I usea fine-mesh hand net. We turn over rocksin the stream and catch crawfish and hell-grammites – both dynamite catfish bait.

Rod weight can be light, medium orheavy, depending on the size catfish you’reafter. Casting rods, spinning rods, even flyrods can all be rigged for bait fishing cats,with 8 to 20 lb. test line, #6 to #2 hooks,and a sliding sinker so the fish doesn’t feelthe weight when he picks up the bait. And

keep your hands clean handling bait; catfishare scent hunters and easily put off by thesmell of gas, oil, sun-screen, anythinghuman and artificial.

One day this past summer Bud, age 12,out-fished his old man along the Gila River.While my best efforts left me skunked, hehooked into a 28” flathead. The fish ran hisline for 10 minutes before tiring in the shal-lows. I grabbed his massive lower jaw andswung him ashore. Bud said, “He’s freaky;look at his mouth.”

Well, he did look primitive, and had amouth that could swallow a grapefruit. Uglyyes, but savory. Conserve the resource bykeeping just enough for a meal or two.Here’s a can’t miss recipe from the oldschool of country cooking.

Skin and filet the catfish (you can findinstructions on line). Fry up one pound ofcheap bacon in a no-stick fry pan, save thegrease and keep it hot. Make a batter of but-termilk with an egg stirred in. Dip the filets inthe batter, then coat with corn meal spicedwith salt, pepper and seasonings of choice.Fry filets in hot grease till a fork slides easilythrough the meat (takes just a few minuteson a side). Drain on a paper towel and servewith cole slaw and hush puppies.

Organic beef is what's for dinner in Cliff, NM.TuOrganic beef is what's for dinner in Cliff, NM.Tucked away in the Gila River Valley on 80 acres ofland, Joe Hollister raises tull cattle. The catch? Hiscows are on a strictly grass-fed diet – no antibiotics,hormones or grain. In the winter, the cows are fedsome hay but still receive an all-natural diet designa-tion. Hollister strongly believes that this organicprocess is not only healthier for the animals, but forhuman consumers as well. "Cows were designed toeat grass," says Hollister. And Hollister has no short-age of grass.

Leasing more than 7,000 acres for grazing his moth-er cows, Hollister is still seeking to gradually expandhis business. At 20 months old, the cattle are sent tothe University of Arizona for processing. Hollister sellshis beef at the Silver City Farmers'

Market and takes orders for animal quarters orhalves. "Today it's hard for young farmers to get their

start in agriculture. The cost of land is high and ittakes awhile to get established," commentedHollister. Luckily for Hollister, his grandfather, DocHollister after which his business is named, beganfarming and teaching agriculture in Minnesota postWorld War II. With breeding and livestock as a part ofa long time family business, Hollister fell into farmingmore than 20 years ago. "It's kind of a passion," saidHollister. "I love the newness of farming," he contin-ued, "there's always something new; every day thereare new challenges."

Local food is important to Hollister and he notesthat, "there's not much available in Grant County com-pared to what is consumed here." Working mostlyalone, Hollister also grows potatoes and corn forhuman consumption and raises pigs. "I love workingwith nature," says Hollister.

Doug Lacy, a local proprietor of pet food, has avail-able good quality organic commercial products at hisstore. A lot of the population do not have time to pre-pare homemade meals for their pets so these prod-ucts are another great alternative. Doug, however,makes the time to prepares meals for his dog, Bully."I use burdock root, nettles, and a few other ingredi-ents added to raw tripe to feed to Bully," says Doug.Tripe is known for it's excellent balance of minerals,vitamins, fats and proteins.

Doug pointed out that the AFFCO (the AmericanAssociation of Feed Control Officials) is the govern-ment regulator for the quality control for pet food.According to the FDA (Food and Drug Administration)some of these commercial 'feed' materials going intopet food are "diverted unfit food for animal use".

Researching what goes into our pets mouths topreserve their health and prolong their lives is agood idea. The FDA requires ingredients to be list-ed, but the origin of these ingredients is some-times suspect.

Paul and Gisela Spencer found Vyf (meaning #5in Afrikaans) online. They planned on not taking himhome immediately. That idea left when a child pre-sented him dangling by a front paw. He needed outof this situation quickly. Overly long toenails snarledin the carpeting preventing walking. Ribs were bro-ken and infection had set in. The lump on his headgave the appearance of having two heads.

"He would have died, you know, had we notarrived today." Paul said on the way home. Giselacould only nod in agreement.

After months of rehab and love from theSpencer's, Vyf recovered from broken bones andinfections and has learned to walk.

Hannah & ParkerLois Murphy

Hannah, the English Springer spaniel, was atthe shelter in Sedona; her human family's lastchild left home. They didn't need a dog anymore.She was just 3 years old. Having abandonmentissues now, Hannah is never without a ball in hermouth. "She falls asleep with it in her mouth.Then it rolls out. Next morning, first thing, shegets her ball." Lois laughs.

Then, there's Parker, the Dachsund, foundabandoned with cigarette burns on his body. Lois'experience with behavioral problems in peoplehelped her handle Parker when he chewed upcarpeting and a loveseat.

In September, the High Desert Humane Society dedicated their petmemorial wall to Linda Keith. She recently retired from her diligentservices on the board of the society. Linda has donated her time andgenerosity to make the High Desert Humane Society what it is today.It seemed only fitting to name the wall in her honor.

The Linda Keith Memorial Wall is a great way to pay tribute to yourbeloved pets; past and present. At the shelter, for a donation of $10,you are entitled to a brass plaque with an inscription of your phrasing.

A contribution by an anonymous supporter of the High DesertHumane Society allowed this wall to transpire. Rex Nichols is credit-ed with the metalwork construction for the sign on the wall. Dunn’sNursery has strategically planted low-water foliage to beautify thearea.

Callie & BleuNicole Robbins Feeling the emptiness after the loss of an elderlyAiredale, Tad Van der Weele and Patrick Conlin,contacted an Airedale rescue group. They wereled to 'George' in Georgetown, Texas. A yearlater, Max, also from Texas, came into their lives.Max had been abused and had some issues, butwith love and understanding of the breed, bothGeorge and Max have a great home.

"We take them to the dog park everyday", saidPatrick. Plus, the dogs get walked around theneighborhood.

Patrick and Tad also assist the Airedale rescuegroup on transporting newly rescued Airedales.

Tina was at a gas station and noticed a puppywas obviously not wanted by his current owners.“I gave them my phone number in case theydecided to get rid of him.“ Tina said. Soon after,they called and said, “Come get him.” Six dogsnow roam Tina and Shawn's acreage.

Jenny, the boxer, was rescued from Tucson.Mia, the red dog was from Las Cruces. Biscuitand Sweet Thing (2 bigger dogs) were puppy give-away’s from Santa Clara; products of an unspayeddog. Buster’s former owner passed away. Zorro,the heeler puppy, is the newest addition.

"We wanted a good backpacker and a hiker."D. said. So, she and her husband went to thelocal animal shelter with these needs in mind.That's where they found Tripp, the AustralianShepard mix. This breed is known for their ener-gy and herding abilities. "He is such a great back-packer, he has his own set of packs."

Tripp knows where home is and stays aroundthe house with his cat companions. He evengraduated from Obedience School. But it's outon the trails with his human companions that heis happiest.

Hershey was with his mother and other littermates under a shed. The mother was scav-enging road kill just to feed her babies.Someone noticed and decided to call DeirdreWolf of a wolf rescue organization knowing thatshe would help. Deirdre crawled under the shedand rescued this unwanted family. TheHopwood's saw an article in a local newspaper,posted by Deirdre, trying to find homes forthese discarded animals. Kim and Ethan adopt-ed one of the puppies, now named 'Hershey'.

Hershey goes to work every day at the RoseValley RV Ranch.
