Orange Rum-Runner Biscotti

Servings: 24 cookies

We take our inspiration for this biscotti from a product called Sweet Simplicity. We think it also fits well in the Everyday Healthy category. Sweet Simplicity is made from erythritol (a sugar alcohol naturally found in grapes, melons and pears), fructose and natural flavors. It can be substituted for sugar, has zero calories, no preservatives, no artificial colors or flavors, and no aftertaste. We decided to try the company’s own biscotti recipe here, and it was terrific as well as guilt-free.

Ingredients

1/4 cup (1/2 stick) butter, melted

1/2 cup Sweet Simplicity

2 eggs

1/2 teaspoon vanilla extract

1/2 teaspoon rum extract

1/4 cup orange juice

1/2 teaspoon orange extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Directions

Preheat the oven to 350 degrees. In a large mixing bowl, cream together the butter with the Sweet Simplicity. Add the extracts, and orange juice. In another bowl, combine the flour with the baking powder and salt. Fold into the butter mixture, incorporating well and forming a dough.

Divide the dough into 2 equal portions, forming them into mounds, similar to the way you would shape a meatloaf. The mounds should be about 1/2-inch thick and 9-3/4-inches long and 3-3/4-inches wide.

Place on a cookie sheet coated with DuPont™ Teflon® non-stick and bake 30 minutes until golden brown. Remove form the oven and let cool for 10 minutes. Using a serrated knife, cut the mounds into 12 (3/4-inch) slices. Place cut side down on the baking sheet and bake another 15 minutes. Remove and cool on a wire rack. Get out your favorite coffee and dunk the cookies for an extra wow factor.
