LIMITED WARRANTY

• Subject to the terms and conditions of this Limited Warranty as herein stated, all Giles Enterprises Inc.(hereafter referred to as “Giles”) food service equipment and parts purchased new from an authorized Gilesrepresentative are warranted as to defects in material or workmanship for a period of twenty-four (24)months from the date of installation, provided, however, that with regard to labor costs in connection withthis warranty, see below. All installations must be made by a qualified installing agency in accordance withall applicable codes and/or regulations in the jurisdiction in which installed. Limited warranty coverage isextended only to the original owner and is void if the unit is resold.

• During the Limited Warranty period, Giles will replace or recondition, at its factory, any part or parts of thisunit which Giles inspectors judge defective, provided the unit has been properly installed, subjected tonormal usage, and operated and maintained in accordance with specified procedures. This Limited Warrantydoes not cover cosmetic damage, and damage due to acts of God, accident, misuse, alteration, negligence,abuse, or use of unorthodox repair methods. All parts replaced under this Limited Warranty carry only theunexpired term of this Limited Warranty. Limited Warranty service may be furnished only by an authorizedGiles service representative.

• If Limited Warranty service is requested, Giles will dispatch factory-authorized service representatives toinspect, repair, recondition, or replace units of its manufacture with such labor being rendered without costto owner for twenty-four (24) months from the date of installation. Otherwise, service, including labor andtransportation charges or other expenses, in connection with the removal or installation of any part or partssupplied under this Limited Warranty, are specified on the original sales contract between the purchaser andthe authorized Giles representative.

• Failure to use Giles OEM replacement parts and Giles OEM filters may void this Warranty.

• Giles reserves the right to change or improve its equipment and/or parts in any way without obligation toalter such equipment or parts previously manufactured.

• Giles makes no further warranties, express or implied, including implied warranties of merchantability orfitness for a particular purpose, and has no other obligation or liability not specifically stated herein.

• Repair or replacement as provided under this limited warranty is the exclusive remedy. Giles shall not beliable for any incidental or consequential damages for breach of any express or implied warranty on thisproduct, except to the extent prohibited by applicable law. Any implied warranty of merchantability orfitness for a particular purpose on this product is limited in duration to the duration of this limited warranty.

• Used Giles foodservice equipment or parts, or Giles foodservice equipment or parts not purchased from anauthorized Giles representative, carry no warranties, express or implied.

Safety Overview:The instructions contained in this manual have been prepared to aid in learning the proper procedures for installing,operating and servicing the Giles Model GBF Series Electric Fryer.

Throughout the manual, safety precautions are identified by a hazard alert symbol and key words such as DANGER,WARNING or CAUTION. Alert information precedes the tasks to which it applies. Suggested, recommended, orother noteworthy information is identified as NOTES, or will be noted as IMPORTANT!. Additionally, certain wordsare used to indicate a specific meaning, or to add emphasis as follows:

Shall: understood to be mandatory.Should: understood to be advisory.May: understood to be permissive.Will: indicates a future event or condition to occur.

Hazard Alert Symbols are used in conjunction with key words, such as DANGER, WARNING, orCAUTION, to alert Users to potential personal injury hazards and/or poor operating practices. These willimmediately precede precautionary measures pertaining to avoiding such hazards or practices. Adhere to allinformation following these symbols to avoid possible injury, or even death. Failure to do so may also void thefactory warranty.

Indicates an imminently hazardous situation which, if not avoided, will result in serious personal injury, evendeath.

Indicates a potentially hazardous situation which, if not avoided, could result in serious injury, even death.

Indicates a potentially hazardous situation which, if not avoided, may result in minor to moderate injury. Thisnotification is also used as an alert to unsafe practices.

If used without the safety alert symbol, indicates a potentially hazardous situation which, if not avoided, mayresult in equipment and/or property damage, and may void the factory warranty.

Specific Safety Precautions:

GBF Series Fryers

For your safety, please observe the following precautions when operating or servicing the GBF Electric Fryer.Adhering to the following important safety precautions will help Users to avoid personal injury and/or damage tothe equipment.

• Before cleaning or performing maintenance, place power switch in the OFF position. Unplug power cord or turnOFF power at the electrical panel supplying power to remove all power from the appliance.

• DO NOT wash down the Fryer interior or exterior with water spray.• Failure to comply with DANGER notices will result in serious injury, even death; or damage to equipment and/or

property and may void the factory warranty.

• Prior to installation, consult a qualified electrician to ensure that installation complies with all electricalrequirements and codes.

• The unit must be adequately and properly grounded. Improper grounding may result in electrical shock to User.Always refer to local electrical code to ensure proper grounding of this or any other electrical equipment.

• Check the rating label on the unit to determine the proper power supply required. Always consult with anelectrician, or other qualified service technician, to ensure that circuit breakers and wiring are of sufficient ratingand gauge to power this equipment. A Wiring Diagram has been provided with the unit as an aid fortechnicians. Appliance must be installed and electrically grounded in accordance with local code, or in theabsence of local code, in accordance with the National Electrical Code, NFPA 70.

• Improper installation, adjustment, alteration, service, or maintenance could result in serious injury, even death;equipment and/or property damage; and will potentially void the factory warranty.

• DO NOT use or store flammable liquids, or materials that produce flammable vapors, in the vicinity of this orany other appliance!

• DO NOT for any reason, or ALLOW OTHERS to, stand or step onto the top of the appliance.Cooking oil in Fryers can be EXTREMELY HOT (excess of 330°F [166°C]). Bodily contact will causeextremely serious injury. Lids used to sometimes cover cooking vats/pots are not designed to, andWILL NOT, support the weight of a person.

• Failure to comply with WARNING notices could result in serious injury, even death; damage to equipmentand/or property; and will potentially void the factory warranty.

• The appliance must remain in an upright position.

• Exercise care when removing the unit from shipping pallet.

• DO NOT operate the appliance, unless its components and their intended functions are fully understood (seeSection 3). After reading and fully understanding Section 3, closely follow the presented procedures andinstructions in order to avoid equipment damage or malfunction.

• To avoid personal injury, it is recommended that thermal hand protection (gloves or mitts) be worn whiletended the appliance. Certain parts of the Fryer will become very HOT during operation; temperatures insidecabinet may exceed 150°F (65.5°C)! Exercise caution when operating and cleaning.

• Placing foods containing excessive moisture into hot oil, or attempting to load larger than recommended batchsizes can cause a “surge boil” and result in an overflow of HOT cooking oil. Exercise due care when loading foodby observing how oil is reacting before continuing.

2. Installation

1. Appliance and surrounding area must be free and clear of combustible materials. Maintain 3” [7.6 cm]clearance.

2. Allow for adequate space to allow easy access for future servicing and proper operation.

3. Be sure that electrical service available in the intended location is of a voltage and amp rating adequate topower the appliance. NOTE: A banked battery requires a separate electrical service for each Fryer unit.

4. Be sure unit will be installed in a stable position and will not unintentionally move. Unit has locking brakeson front casters ... be sure they are locked. Some code authorities may require that special anchoring beutilized for this type appliance; check local codes.

5. The appliance shall be installed, operated, and maintained in accordance with the Standard for VentilationControl, and Fire Protection of Commercial Cooking Operations, NFPA 96. Ventilation must be provided forthe appliance as required by local code requirements.

2.02 Unpacking

Fryer is shipped on a wooden pallet; secured with high-tensile plastic strapping and enclosed by a woodenframework. The entire unit is wrapped in machine-applied stretch wrap.

• The appliance must remain in an upright position during the unpacking process.

• Exercise care when removing the wooden framework from around the unit.

• The unit is heavy and banked units will be very heavy. Use extreme care and appropriate handling equipmentand/or sufficient manpower when lifting or moving the equipment.

• Failure to comply with these CAUTION notices may result in minor or moderate injury, equipment or propertydamage, and void the factory warranty.

1. Carefully cut and remove the plastic stretch wrap, strapping and all other packing material.

2. Filter Pan and fryer accessories (baskets, screens, etc) are packed inside the fryer cabinet and vat. Removethese items and set aside in a safe place for future use.

3. Carefully remove fryer from shipping pallet. Fryers can be very heavy, especially banked systems. Great careshould be taken when lifting or moving the unit to avoid personal injury or equipment damage. Use ofappropriate material handling equipment is recommended to lift unit from pallet, especially for bankedsystems of more than two (2) units.

2.02 Unpacking - continued

IMPORTANT!Giles shall not be liable for damages to the unit caused by improper use of material handling equipment orpoor work practices. Giles shall not be liable for personal injuries or property damage which may be incurredduring installation of this equipment. 2.03 Electrical Requirements

IMPORTANT! If crate unit exhibited evidence of damage or mishandling, immediately inspect the unit and all accessory items

and notify the freight carrier of any damages. Generally, it is the purchaser’s responsibility to file and negotiateclaims for freight damage.

• Fryers must be properly grounded in accordance with local code, or in the absence of local code, with theNational Electrical Code, ANSI/NFPA 70. Improper grounding may result in electrical shock to users. Check localelectrical code to ensure that proper grounding techniques are utilized.

• Always consult a licensed electrician, or other qualified service technician, prior to installation to ensure that theelectrical circuit intended for connection to the unit is of sufficient rating to handle the appliance load.

• GBF Fryers are manufactured with the various electrical specifications as shown in Table 2.04. Check theSerial/Data Label inside the cabinet or attached to the rear panel to determine the proper electrical servicerequired for the unit. Each unit of a banked battery requires a separate power supply.

2.05 Electrical Connections

1. As needed, install appropriate circuit breaker(s) in main electrical panel. See Section 2.04.1.2. (Recommended) Install a disconnect switch box between main panel and fryer.3. See Section 2.05.1. Connect 1-1/4” flexible conduit from disconnect switch to the fryer. Attach conduit to rear

of the fryer Service Box with appropriate conduit fittings. Allow enough length so that appliance can be movedeasily for future cleaning and servicing.

4. See Figure 2.05.1. Open fryer cabinet door and remove Service Box Cover.5. Connect ground wire between the Ground Lug and a proper earth ground.6. Route appropriately sized power wires from the disconnect switch box through to the front Service Box.7. See Figure 2.05.1. Connect supply power wires to Distribution Block located in Service Box and reinstall cover.8. For banked system installation, each fryer unit in the battery will be connected in like manner.

2.07 Restraint Device (Not Included, provided by purchaser)

This equipment requires installation of an appropriate Restraint Device to prevent unintentional movement, whichmight cause undue strain on electrical connections. The length of restraining cable must be shorter than the electricalsupply cord or conduit. A restraint anchor shall be fastened to an immovable wall or structure. Install a quick-releaselatch on one end of the cable for connecting to the factory-installed eye-bolt(s) on the rear of the unit. A restraint isrequired at each end of a banked system.

1 Power Switch Turns fryer power ON or OFF.

2 Heat SwitchEnables heating elements. Place in [OFF] position to disable heat;place in the [HEAT] position to enable elements when ready to heatcooking oil or boil-out solution.

7 HI-LIMIT Light (Red)

Illuminates to indicate oil has overheated and tripped the heatingelement safety shutdown. When this light turns ON duringoperation, typically, a control malfunction has occurred.DISCONTINUE COOKING and refer to Section 7, Troubleshooting.DO NOT ATTEMPT TO CONTINUE COOKING UNTIL CAUSE OF THECONDITION IS DETERMINED!

8* PUMP Switch

Controls the oil filtration system pump when filtering oil or topump waste oil to the Discharge Hose. NOTE: On banked systemsthe switch is only present on the unit that contains the Filter Pan,otherwise the position is plugged.

9* LIFT Switch

Enables/disables opional Basket Lifts. When placed In the [LIFT]position, basket lifts operate, automatically lowering & raisingbaskets at the beginning and end of a cooking cycle. 1 Drain Valve Handle

Opens and closes the cook vat Drain Valve. Always be sure thevalve is fully in the [CLOSE] position (handle in left-most position tostop) prior to adding cooking oil, or boil out solution. Fryer will notheat if Drain Valve is not completely closed!

Even though safety interlocks are built in,always be sure the HEAT switch on control

panel is in the [OFF] position before opening valve. Failureto do this could result in fire, causing serious injury, evendeath, damage to equipment or property, and void thewarranty.

On banked system - NEVER drain oil frommore than one (1) fryer at a time into the

Filter Pan. Doing so will cause OVERFLOW! Always pump oilback to vat or to a waste oil disposal container beforedraining oil from another vat.

2 Pump Diverter ValveHandle

Directs discharge of Filter Pump to either to fryer vat or to the wasteoil Discharge Hose (hose must be connected).

3 Oil Return Valve HandleOpens & closes the Oil Return Valve allowing vat to be refilled withfiltered oil from the Filter Pan. Diverter Valve must be in the [OILRETURN] position to refill vat.

4 Oil Discharge HoseConnection

Quick-connect/disconnect coupling for connecting the waste OilDischarge Hose to the fryer pump system for removing waste oilfrom fryer.

(Standard)

Stainless steel, micro-mesh screen filter media removes fine particlesof cooking sediment and residue from used cooking oil. It iswashable and reusable; eliminates paper waste and reducesoperating cost.

3 Filter Paper(Optional)

Paper filter media may be used instead of the mesh screen. One (1)sheet is required. IMPORTANT! Do not use filter paper and screenat the same time.

4 Filter Pan

Collects oil drained from fry vat. Contains filter media forperiodically cleaning. The pan has casters and is easily removablefor cleaning. A permanent perforated filter media support screen isaffixed to the pan bottom to help protect filter pump fromunintended large debris. THIS SUPPORT SCREEN IS NOT A FILTER ...FILTER MEDIA MUST BE USED!

At a minimum, it is recommended that oil be filtered after every4th load cooked in a vat.

5 Filter Pan Hose Fitting Connects Pan Assembly to the fryer filtration system. Hose must bedisconnected before removing the filter pan.

6 Filter Pan CoverLays loosely atop pan. Helps contain splash and splatter as oil isdrained into filter pan, helping keep cabinet interior & floor areaclean. Acts a safeguard against oil contamination.

3.04 Filter Pan Assembly

Never remove the Filter Pan while it contains liquid shortening. Oil spillage and/or burninjury are possible. Please see Section 5.04, Removal of Liquid Shortening.

• Always wear thermal protection, such as oven mitts, when handling these parts. They can become very HOTduring normal operations!

• Never drain boil-out solution into the Filter Pan. It is corrosive and will damage the Filter Pan and the FilterPump. See Section 6.01, Boil-Out Procedure.

4. Preparation for Operating Fryer

4.01 Initial Fryer Set-up

Giles takes pride in quality of workmanship. Every effort has been made to ensure that new equipment is in perfectoperating condition when received. Every unit must pass rigorous quality control testing prior to shipment and tofurther ensure that it meets your expectations, it is recommended that this operational checkout and preparation beperformed prior to using the fryer for the first time.

Before attempting to perform these steps, please refer to Section 3 and become familiar with various controls andtheir function, and after fully understanding that information, perform the steps described in the following sectionsto confirm the unit’s functionality and prepare it for operation. Precisely adhere to these instructions, otherwiseequipment damage or malfunction could result.

Be sure that the unit is set-up as follows before proceeding.For a banked battery of fryers, these checks should be performed for each unit.

2. Open cabinet door(s), disconnect and remove Filter PanAssembly ③ from unit.

3. Ensure that the Drain Valve Handle ④ is fully in [CLOSE],position (left to a stop) ... check all fryer units in a bankedbattery.

4. Ensure the Pump Diverter Valve ⑤ is in the [OIL RETURN]position (horizontal) and the Oil Fill Valve ⑥ is in the [FILLVAT] position (horizontal).

5. Remove baskets and basket support screen(s).

NOTE: The Pump Diverter Valve is only present in the cabinetcontaining the Filter Pan in a banked system.

4.03 Heating Element Check

Heating Elements become extremely hot when energized! Skin contact will result in severeburn injury.

The following check will confirm that Heating Elements are being powered and energized. Perform this check for eachFry Vat in a banked system.

4.02 Power Check

The following test confirms that the unit isproperly receiving power. Perform for eachunit in a banked system.1. Set up unit as described in Section 4.01.2. Be sure the main circuit breaker

powering the unit is ON.3. Place the Power Switch ① in the ON

position. The green POWER light ②will turn ON and the controller willpower-up. The message [HOLD] is shown on the Lower Display. An alarmsounds and a “POWER FAILURE” message is shown on the Upper Display.If this occurs, return Power Switch to [OFF] and see Section 4.03; if not,refer to troubleshooting procedures in Section 7.

6. Press the [START] key ④ ... a setpoint of 335°Fshould display, the alarm signal will silence, and thecontroller will indicate PREHEAT.

7. Set the Heat Switch ⑤ to the [HEAT] position. The HEAT light ⑥ should turn ON. Leaveswitch in [HEAT] position for NO MORE THAN 10 to12 SECONDS, then return to [OFF].

NOTE: During this time, should the HEAT light turnOFF, an alarm sound and the Upper Display showthe “MAX ELEMENT TEMP” error, return PowerSwitch to [OFF] and proceed on to the next step.

8. Moisture should quickly dry from elements and heatshould be felt rising from the vat. Proceed to Section 4.04 below.

DO NOT TOUCH THE ELEMENTS DURING THIS CHECK!

If heating elements do not dry rather quickly or no heating is detected, refer to Section 7.01,Troubleshooting Procedures.

4.04 Filter Pump Check

1. Set up unit as described in Section 4.01.

2. Open cabinet door (unit with filter pan for banked system). Disconnect andremove Filter Pan if not previously done.

3. Firmly press the palm of the hand over the Filter Pan coupling ①.

4. While covering the opening with hand, set the Pump Switch ② to the [PUMP]position. The pump will start ... if suction is felt, it is operating correctly. Returnswitch to [OFF]. Allow pump to run ONLY long enough to check for suction.Proceed to Section 4.05.

If the pump does not start or suction is not detected,refer to Section 7.02, Troubleshooting, Oil FiltrationSystem.

The following check is to confirm that the system Filter Pump is operating correctly.

4.05 Boil-Out Procedure

Appliance preparation is now complete; proceed to Fryer Operation, Section 5.

Perform a Boil-Out Procedure to remove any dirt/debris that may have accumulated during shipment, or residueremaining from manufacturing processes. See Section 6.01, Boil-Out Procedure. After the Boil Out procedure has beencompleted, proceed to Section 4.06.

4.06 Clean Filter Pan, Accessories & Unit

Thoroughly clean the Filter Pan to remove dirt/debris that may have accumulated during shipment, or residue remainingfrom manufacturing processes. See Section 6.02, Cleaning the Filter Pan & Refreshing Filter Media.Wash accessory items (baskets, basket carriers, support/fry screens, stirring utensil, crumb shovel, etc) in warm soapywater, rinse and dry thoroughly.

Inspect unit for adhesive protective plastic film which may remain on the appliance. Some of this film typically remainson some surfaces as added protection during shipment. Remove all of such material from surfaces and clean the entireexterior unit with a good quality stainless steel cleaner/polish. DO NOT use cleaners that are abrasive or containcaustic chemicals.

5. Fryer OperationGBF Series Fryers are available in several different optional configurations: a single unit, a banked battery of up tofive (5) fryer units, and with or without automatic basket lifts. Differences in procedures are noted where neededand, in some cases, separate sections are used to describe procedures for a different configuration. Whenreferencing this manual, be certain you are reading the information or instructions pertaining to the specific fryerconfiguration you are operating.

• Turn off the fryer power switch and main supply power at electrical panel cleaning or servicing.

• DO NOT wash down the interior or exterior with water spray, or any other pressure-type washing equipment.

• Failure to comply with DANGER notices will result in serious injury, even death, damage to equipment orproperty and void the factory warranty

• DO NOT use or store flammable liquids, or materials that produce flammable vapors, in the vicinity of this orany other appliance!

• DO NOT for any reason, or ALLOW OTHERS to, stand or step onto the top of the appliance.Cooking oil in fryers can be EXTREMELY HOT (excess of 330°F [166°C]). Bodily contact will causeextremely serious injury. Lids used to sometimes cover cooking vats/pots are not designed to, andWILL NOT, support the weight of a person.

• Failure to comply with WARNING notices could result in serious injury, even death; damage to equipmentand/or property and will void the factory warranty.

• Be sure the fryer is positioned in a stable, safe location with front caster brakes locked.

• Exercise caution when operating and cleaning. To avoid personal injury, wear thermal protection (gloves ormitts) while tending the appliance. Certain parts of fryer become very HOT during operation; temperaturesinside the cabinet may exceed 150°F/65.5°C and cooking oil temperature is in excess of 330°F/166°C.

• This appliance is for professional use only and is to be operated by qualified personnel. It is not intended for useby persons (including children) with reduced physical, sensory, or mental capabilities, or those lackingexperience and knowledge, unless they have been given adequate instruction and/or supervision concerning itsoperation by a person responsible for their safety. 5.01 Computer Controller

The following sections explain the functions, features, programming, and operational procedures for the Dual-TimerComputer Cooking Controller.

5.01.1 Keys and Functions

Numeric Keypad: Used for entering Fryer settings and to edit preset Menu Itemcooking parameters. The [2-4-6-8] keys are also used as [ARROW KEYS] for operatingBasket Lifts (if installed), selecting timer, navigating lists, moving cursor for editing,etc. [2-8] = UP/DOWN ... [4-6] = LEFT/RIGHT. The keys will illuminate to indicatewhen they are active as ARROW KEYS.

[START]: Function key used to start cook cycles, select items, save settings, and exitediting, etc.

[CLEAR]: Function key used to cancel cook cycles, exit certain functions, etc.

MENU Key: Action key which is pressed in combination with other keys to access programmedmenu presets. Fifty (50) different Menu Item cooking presets can be programmed.

ALARM Reset Key: Pressing this key silences the controller alarm and acknowledges certain statusmessages.

CLOCK Key: Press this key to manually set a cooking time (mm:ss).

5.01.1 Keys and Functions - continued

BASKET Key: Activates arrow keys [2]-UP & [8]-DOWN to manually operate basket lifts. Key isdisabled during PREHEAT mode to prevent lowering product into oil that is not yet at cookingtemperature. This key is ONLY active if Basket Lifts are installed.

EDIT Key: Action key which is pressed in combination with other keys to enter edit mode forchanging or entering new Menu Item Preset cook settings.

TEMP Key: Press this key to set the cooking oil temperature setpoint. When fryer is in READYstate, Pressing key twice (2x) will display Actual Oil Temperature on the Lower Display forapproximately 20 secs. NOTE: During PREHEAT, real-time actual temperature is displayed.

While in PREHEAT state, press this key to start BOIL-OUT program. Temp setpoint and time willchange to the BOIL TEMP and BOIL OUT TIME specified in User Settings (Section 5.01.8, Edit UserSettings). Defaults = 200°F & 30 mins.

Press this key to enter COOL mode. An energy-saving feature, places fryer at a lower temperatureduring inactive periods. Temp setpoint will change to the COOL TEMP specified in User Settings(see Section 5.01.8, Edit User Settings). Default = 275°F.

Upper OLED Display (blue graphic): Displays cook settings, fryer statusinformation, operational instruction prompts, alarm/error messages, etc..

Lower 7-Segment Display (red graphic): Displays status information, cookcycle time countdown, temperature, error codes, etc.[HEAT] indicator illuminates when controller is calling for the heatingelements to energize.[LEFT/RIGHT Timer] indicators illuminate to show which basket’s timer isbeing displayed.

5.01.2 Controller General Operation

● POWER UP:Place Power Switch in [ON] position. Controller will power up and sound an alarm. The message “POWERFAILURE [PRESS START TO PREHEAT]” is shown on the Upper Display. This is normal, intended to prevent fryerfrom heating after power interruptions until attended by an operator. Pressing the [START] key silences thealarm and places fryer into PREHEAT mode. If Heat Switch is in the [HEAT] position, and temperature setpoint ishigher than the current actual oil temperature, heating elements will turn ON and cooking oil will begin to heat.DO NOT place Heat Switch in [HEAT] position unless vat is filled with cooking oil to the FULL level.

● PREHEAT:During PREHEAT, real-time actual oil temperature will be displayed on the Lower Display. When oil reaches theprogrammed setpoint, an alarm will sound, Upper Display will show message “ALARM - STIR OIL”. Vigorouslystir cooking oil in pot, and press [ALARM] key. Typically, oil temp drops when stirred. Controller delays for 10seconds and if temperature drops below setpoint during this time, PREHEAT continues until temp returns tosetpoint. This process helps to ensure more consistent temperature throughout the total volume of oil, leadingto better cooking performance. Upon reaching setpoint again, alarm sounds again and Upper Display shows“ALARM - SETPOINT REACHED”. Pressing the [ALARM] key, places fryer into READY state.

● READY STATE:Fryer is ready for cooking. The Lower Display changes to show current controller temp setpoint and the lastused fryer cook settings are shown on the Upper Display.

While in PREHEAT or READY state, user can change cook setting by selecting a different Menu Item Preset, seeSection 5.01.5.2, Selecting a Menu Preset -- OR -- can manually input different settings (time and/or temp), seeSection 5.01.3, Setting the Cooking Temperature & Section 5.01.4, Manually Setting the Cook Time.NOTE: If PASSCODE ENABLE parameter is set to ON, user cannot manually set cook time without first enteringthe proper password. This lockout feature provides a measure of control over cooking procedures.

5.01.3 Setting the Cooking Temperature

Cooking temperature setpoint must be input manually as shown below. Menu Item presets do not include thecooking temperature setting.Instructions are shown on the Upper Display to help guide user through the process.

• If actual oil temperature is lower than the entered setpoint, controller enters PREHEAT mode (small red HEATindicator on controller turns ON). Heating elements will NOT actually turn ON until the HEAT Switch on controlpanel is placed in the [HEAT] position. At that time, amber HEAT indicator light on the control panel will turn ONand oil begins heating.

• If oil temperature is already equal to or greater than the current setpoint, after 10 seconds an alarm sounds andthe message “SETPOINT REACHED” is displayed. Press the [ALARM] key to enter READY state. Fryer is ready forcooking.

While heating, real-time actual oil temperature will be shown on the Lower Display. After reaching setpoint, thedisplay changes to show the temp setpoint.

specific item. Factory default = [NORMAL] for all presets ... use global setting.● FISH FILTER - To prevent flavor transfer, establishments cooking seafood products may wish to force oil filtering

after cooking only one (1) batch of a particular seafood item. This setting overrides the global FORCE FILTERsetting in User Settings. Factory default = [OFF] for all presets ... use global setting. A SNOOZE feature also canbe selected which will allow two (2) batches to be cooked before filtering is forced.

All 50 Menu Presets are factory-programmed with default settings. The first ten (10) are set to specific menu itemsand settings for some popular menu offerings (table below). All others contain the general settings shown on thelast line of the table. User can edit any of the settings as needed to customize for specific applications and menus.

To minimize potential for flavor transfer, establishments cooking seafood items may wish to force operator to filteroil after only one (1) batch item is cooked. When FISH FILTER is set to [ON], the unit will enter FILTER MODE aftercompleting (1) load of the specific item. If FORCE FILTER SNOOZE is set to [ON] in User Settings (Section 5.01.8),one (1) additional batch may be cooked before filtering is forced. 5.01.6 Cooking Cycle General Overview

COOKING TEMPERATURE • ITEM NAME • COOK TIME • STIR OVERRIDE • FISHFILTER settings are shown on the Upper Display. READY message indicates thatcooking oil is at set temperature and fryer is ready for cooking.

When in READY state, temperature setpoint is shown on Lower Display.

To start the cook cycle press the [START] key once.

Prompt to select basket side is displayed. Either side or both sides can beselected. Press appropriate keypad key to select.

After selecting side, controller enters COOK state ... fryer will not enter COOKunless READY is displayed. If fryer is equipped with automatic basket lifts, thebasket will be lowered into cooking oil and the set cooking time will begincounting down in the Lower Display. When lifts are not installed, manuallyplace basket into oil after selecting side. The Upper Display shows which side is cooking, as well as displaying theprogrammed setpoint temperature. One Timer Indicator will illuminate toindicate which timer is displayed.

A different Menu Item can be selected and started for the other basket asdescribed in Section 5.01.5.2, Selecting a Menu Item Preset for Cooking.To start the second cook cycle press the [START] key once again, then operatoris prompted to select the other side for start. Press the appropriate arrow key[4] or [6] to start the second timer. Lower Display and the Timer Indicator willchange to show the second active timer.

When both timers are running, pressing the [TIME] key 2 timeswill swap Lower Display between timers. Timer Indicatorchanges as well.

STIR ALARM: When active, an audible alarm tone is sounded at a specific time during the cook cycle, signaling theoperator to stir the cooking product. Stirring helps to promote even cooking and prevent sticking. This featuremust be enabled in User Settings, Section 5.01.8 and the parameter set. [STIR ALARM %] = amount of elapsed timewhen the alarm sounds. e.g. if [STIR ALARM %] = 60, then during a 10 min. cook cycle, the alarm will sound after 6mins. of time have elapsed.Factory-set default: [STIR ALARM ENABLE] = ON • [STIR ALARM %] = 62.The menu item STIR OVERRIDE setting overrides the [STIR ALARM ENABLE] setting, see Section 5.1.05.1.

When the cooking cycle time is complete, an alarm will sound and the message “DONE COOKING - (LEFT) (RIGHT)or (BOTH)” is displayed. If fryer is equipped with basket lifts, the basket is automatically raised from the oil.Pressing the [ALARM] key silences the alarm and the fryer re-enters READY state for the next load of product.

COOL MODE is an energy-saving feature that changes oil temperature setpoint to a lowervalue. Places fryer into an idle standby state during periods of inactivity.

IMPORTANT!After BOIL OUT MODE is activated and completed, controller automatically resets the temperature setpoint to50°F. It must be reset to a proper cooking temperature before the fryer will heat cooking oil for normaloperation.

Fryer must be properly drained, rinsed and prepared for cooking after a Boil Out cycle. See Section 6, Cleaning.

Pressing the [BOIL] key while controller is in PREHEAT state will start BOIL OUT Mode.Temperature and time change to the BOIL TEMP and BOIL OUT TIME, respectively, asspecified in User Settings, see Section 5.01.8.Factory-Default Setting:

5.01.10 Power Up Procedure

It is possible to add PASSWORD protection for certain Controller functions and settings. This feature is a FactorySetting that is generally disabled. If PASSCODE ENABLE is set to [ON], user will be prompted to enter a passwordbefore adding or editing menu presets, manually entering/changing a cooking time, or accessing User Settings.

If you desire to have password protection enabled, or have questions concerning this feature, call Giles TechnicalServices at 800.554.4537 to request the passcode and instructions as to how to enable this feature.

1. Initially, ensure that the Heat Switch ① is in the [OFF] position.

2. Place the Power Switch ② in the [ON] position. The green POWER light ③ will illuminate, Controller

will power-up and sound an alarm tone. The message“POWER FAILURE [PRESS START TO PREHEAT]” isshown on the Upper Display ④. This is normal,intended to prevent the fryer from reheating after apower interruption until it is attended by an operator.Pressing the [START] key ⑤ silences the alarm andputs fryer into a PREHEAT state. Cooking parameters shown in the Upper Display are the lastsettings used. The controller will indicate that the fryer is heating, but until the Heat Switch ①is placed in the [HEAT] position, the heating elements will not turn ON.

DO NOT place Heat Switch in [HEAT] position until fry vat has been properly filled with cookingoil.

ER19 MAX ELEMENT TEMP Error The maximum heating element temperature has been exceeded.This is a safety device; NEVER bypass this Probe.

ER25 GUARD BAND EXCEEDEDActual oil temperature deviates from setpoint by the GuardBand amount. Allow oil to cool, or heat, to within range.Factory default is 900°F ... Error should not occur.

ER37 EEPROM Error An error occurred while saving settings to the EEPROM. ContactGiles Tech Service (800.554.4537).

ER38 Internal ADC ErrorThe ADC (Analog-to-Digital Converter) chip that reads outputfrom thermocouples is not working. MCB1 board must bereplaced. Contact Giles Tech Service (800.554.4537).

Conditions which can cause unsafe operation or damage to the unit (open valves,low oil level, max high temp, etc.) will halt operation, activate an alarm tone anddisplay error codes/messages. Error Codes are shown on theLower 7-Segment Display; error messages and prompts areshown on the Upper OLED Display. Generally, heatingelements are disabled until error condition has beencorrected. Pressing the [ALARM] key silences the alarm tone,but does not clear the error. Error Codes are shown in theTable below and details are discussed in a later section.

● DRAIN OPEN (Error Code OPEN) - If the pot Drain Valve is open (even slightly) while Fryer power is ON, analarm tone sounds, Lower Display shows “OPEn”, and the Upper Display reads “ERROR ALARM - DRAIN ISOPEN”. When equipped, if a basket lift is down, it will be raised. Heating elements are disabled as long as thecondition exists.Press the [ALARM] key to silence alarm tone. Completely close the drain valve to clear the error. When error iscleared, alarm tone sounds again and the Upper Display reads “CHECK OIL LEVEL, ENSURE VAT IS FULL, IF FULLTHEN PRESS [START]”. This is a post-error alarm, alerting user to confirm that oil in the pot is still at the [FULL]level. Add oil if needed, then press the [START] key to return to PREHEAT mode.

● LOW OIL LEVEL (Error Code 03) - Alarm tone sounds, Lower Display shows “Er03”, and the Upper Display reads“ERROR ALARM - CHECK OIL LEVEL - ENSURE VAT IS FULL”. Heating elements are disabled until the condition iscorrected. The temperature differential between two sensors in the vat exceeds the acceptable value,indicating a low oil level. Low oil level greatly increases the possibility of fire! Press the [ALARM] key tosilence alarm tone, and place Heat Switch in [OFF] position. Allow the fryer to adequately cool and then add oilto raise level to the [FULL] mark.

● LOW OIL LEVEL Post-error Warning (Error Code 06) - After Error 03 clears, a warning alarm occurs. The LowerDisplay shows “Er06”, and Upper Display reads “CHECK OIL LEVEL - ENSURE VAT IS FULL - PRESS [START]”.This alarm alerts user to confirm that cooking oil in the vat is at the [FULL] level. If no oil is required press[START], otherwise press [ALARM] key to silence tone, add oil, then press [START] key to enter PREHEAT mode.

● MAX. ELEMENT TEMP (Error Code 19) - Heating element has exceeded the maximum allowed temperature.The alarm tone sounds, Lower Display shows “Er19”, and Upper Display shows “ERROR ALARM - MAXELEMENT TEMPERATURE”. Heating elements are automatically turned OFF. Elements must cool to anacceptable temperature to clear the error. Typically, this error is caused by low oil level, exposing the heatingelement. It is possible for false alarms to occur when preheating cold oil at initial startup of a new day.Vigorously stirring oil during preheat will usually prevent, or clear, a false alarm of this type.

● MAX ELEMENT TEMP Post-error Warning (Error Code 07) - After Error 19 is cleared, a warning alarm occurs.The Lower Display shows “Er07”, and Upper Display reads “MAX ELEMENT TEMP - PRESS [START]”. Thisalarm alerts user that a maximum element temperature error occurred and is now cleared. Press [START] keyto enter PREHEAT mode. Heating elements will not turn ON until [START] is pressed.

5.02 Cooking Procedures

1. Place the Power Switch ① is in the [ON] position, POWER light ② turns ON. Controller proceeds through thepower-up as explained in Section 5.01.10, Power Up Procedure. At this time, DO NOT press the [START] key asprompted on the Upper Display, but press [ALARM] reset key ⑤ to silence alarm.

2. Ensure that the Heat Switch ③ is in the [OFF] position. DO NOT place switch in [HEAT] position at this step.

3. While “POWER FAILURE” message is displayed, set the desired cooking oil temperature setpoint. See Section5.01.3, Setting the Cooking Temperature.

4. Ensure the Drain Valve ⑥ is in the [CLOSE] position (leftto stop).

IMPORTANT! Fryer will not heat unless drain valve isfully closed.

5. Fill the fry vat with liquid frying shortening ONLY to the[ADD] level mark ⑦. This allows for expansion as oil isheated to cooking temperature.

This section explains the procedure for cooking products on the GBF Fryer with a computer controller. Thisexplanation assumes starting with a clean empty Fryer.

Except when filtering oil, keep the OIL RETURN VALVE in the lower cabinet set in the [CLOSE]position. If valve is left in the [FILL POT] position, it is possible for oil to siphon back into the

filter pan, causing a low oil condition in the cook vat that can create a potential for oil fire.

6. If the unit is equipped with basket lifts and you want to use them, place Lift Switch ⑧ in the [LIFT] position. Iflifts are not installed, there is no Lift Switch.

7. Place Heat Switch ③ in the [HEAT] position; the amber HEAT light ⑨ turns ON and oil should begin heating tosetpoint. The Upper Display ④ indicates PREHEAT and the Lower Display ⑩ shows the real-time oiltemperature.

8. It is recommended that oil be stirred occasionally while heating to promote more even heating throughout thetotal volume of oil, by preventing the occurrence of “cool zones”. It is also helpful in preventing false HI-LIMITalarms, especially important during the initial heating of the day when shortening is cool and thickened.

9. When cooking oil reaches the programmed setpoint, an alarm sounds and the Upper Display reads “ALARM -STIR OIL”. Press the [ALARM] key ⑤ and vigorously stir oil. There is a 10 second delay and if oil temperaturedrops below setpoint while stirring, the controller remains in PREHEAT until setpoint is reached again. At thattime a second alarm will sound and the display will read “ALARM - SETPOINT REACHED”. Press the [ALARM] keyand controller enters READY state. Temperature displayed in the Lower Display ⑩ changes to the setpointtemperature.

Oil should now be evenly heated and ready for cooking.

13. It is recommended that uncooked product be placed into the cook basket before it is placed into the hot oil,whether using a basket lift or not.

With basket lifts, basket is automatically be lowered into oil when the cook cycle is started.

Uncooked product may also be placed into basket after it has been placed into the oil.

10. Check oil level ... it should now be at the [FULL] mark ⑪. If not, addshortening and stir in. If the HEAT light turns ON after adding additional oil,continue stirring and wait until it turns OFF again before cooking.

11. Place the fry screen ⑫ into vat with handles to the sides.

12. If basket lift option is installed, place the cooking baskets ⑬ onto the basketcarriers ⑭, otherwise hang baskets on hanger bars along the back cabinetheader.

Use extreme caution when dropping product into HOT cooking oil! There is potential forsevere burn injury should hot oil contact unprotected skin, such as with an unexpected

splash. Introducing food items with excessive moisture, or trying to place a larger than recommended loadsize, into the cook vat can lead to a surge boil that can result in an overflow of HOT oil. Slowly load fooditems and observe how the hot oil reacts before continuing.

Never attempt to perform the filter process when shortening is cold. Doing so can clog thefilter system and possibly damage the unit. Oil must be heated to at least 200°F (93°C)

before it can be efficiently handled by the filter system.Always wear thermal protection, such as gloves or oven mitts, when performing the filtering process. Fryerparts inside the cabinet can be very HOT!

This section explains use of the on-board Oil Filtration System for reconditioning used cooking oil. The systemcirculates oil through filter media in the Filter Pan and back to the fryer vat. Routinely performing this procedurecan increase useful life of cooking oil by as much as 50%.

The fryer controller has a configurable FORCE FILTER feature, which can be set to force operating personnel toroutinely perform the filtering process after a preset number of cooking cycles have been completed. The feature isenabled and configured in User Settings, see Section 5.01.8:

• FORCE FILTER - [ON] or [OFF] • Factory default = [ON].[ON] = After completing a set number of cook cycles (FILTER COUNT), alarm sounds and message “ALARM -MUST FILTER OIL” is displayed on Upper Display screen. Pressing the [ALARM] key silences alarm and fryerenters FILTER MODE. Unit will be disabled from continued operation until the filtering process is properlycompleted.[OFF] = After completing a set number of cook cycles (FILTER COUNT), alarm sounds and messuage “ALARM -

FILTER OIL” is displayed on Upper Display screen. Pressing the [ALARM] key silences alarm and fryer returnsto READY state ... not disabled. The unit can continue to be used, however the alarm is issued and theprompt is displayed after every subsequent cook cycle until filtering is performed.

• FILTER COUNT - 1 to 20 • Factory default = 4.The number of cook cycles that can be performed before fryer enters FILTER MODE.

In addition to global FORCE FILTER, each Menu Item Preset contains a FISH FILTER setting, which when set to [ON],overrides the global setting and enters FILTER MODE after cooking only (1) batch of the particular Menu Item. Thisadditional feature is typically used for seafood items in an attempt to minimize possibility of flavor transfer. SeeSection 5.01.5.1, Editing a Menu Item Preset for more detail.

• For banked systems: DO NOT drain more than one (1) vat at a time into the filter pan! The pan has capacityto hold oil from ONLY one (1) cook vat.

7. Confirm that Heat Switch remains in the [OFF] position and Power Switchremaines ON. In the lower cabinet (unit w/filter pan on banked system),ensure the Pump Diverter Valve Handle ⑦ is in the [OIL RETURN] position(horizontal). Slowly move Drain Valve Handle ⑥ of the unit being filtered,to the [OPEN] position (right to stop). Cooking oil should begin draining intothe filter pan.

NOTE: Add-on units in banked systems do not contain the Diverter Valve⑦ or the filter pan features.

12. After the vat has refilled, return Pump Switch ⑧ to [OFF] positionand immediately turn the Oil Return Valve Handle ⑦ of the unitbeing filtered to the [CLOSE] position.

Oil Return Valve must remain in the [CLOSE] position except when filtering. Failure to do so can allow oil tosiphon back to the filter pan, causing a low oil condition in the vat.

10. Used oil will circulate ⑨ through the filter media and filter aid containedin the pan and return to the cook vat. Leave the drain valve open, allowingoil to continually circulate through the system as a “crumb wash” for about5 minutes. During this time, use the provided heat-resistant brushes toscrub vat sides & heating elements to remove cooking residue, allowing itto be flushed into the filter pan.

11. After about 5 minutes, return Drain Valve Handle ⑩ to the [CLOSE]position and allow vat to refill. Typically, when pump dischargebegins blowing air, refilling is complete.

To maintain thequality of cooked foods, oil should be changed every 7 to 10 days, depending on filtering practices, types of food,and quantities regularly cooked. 12. Remove the discharge hose from the discharge coupling(push in on the slip-ring while pulling hose fitting out ofcoupling). Drain any waste oil remaining in the hose intothe oil disposal container.

13. Allow the filter pan to sufficiently cool, then remove itfrom fryer, disassemble and clean thoroughly. SeeSection 6.03.

14. After removal of waste oil, a Boil-Out Procedure shouldbe performed promptly. See Section 6.01, Boil-OutProcedure. DO NOT allow oil residue to remain in thepot any extended period of time. It will become verydifficult to clean and eventually can lead to anundesireable build-up that can negatively impact fryerperformance and food quality.

◊ If Boil-Out must be postponed, at a minimum, useabsorbent paper wipes to clean as much waste oilresidue as possible from the pot surfaces and heatingelements, clean the Filter Pan and refill pot withfresh oil. Restart fryer as described in Section 5.02,Cooking Procedures.

6.01 Boil-Out Procedure - Cleaning the Fry Vat

This section describes procedures for cleaning and maintaining GBF Series Fryers, which are necessary to keep themin good operating condition. General cleaning of the appliance should be performed daily and other activitiesshould be preformed as described by the following.

The following explains a Boil-Out Procedure for cleaning the fryer vat and heating elements. The procedure mustbe performed before cooking with the new fryer, and should be performed promptly before refilling fryer with freshcooking oil after old is removed and discarded.For proper maintenance and to ensure satisfactory operation and food quality, the procedure should beperformed every 7 to 10 days, however, exact timing of oil replacement is highly dependent on many factors. Oiltesting kits, which can help accurately determine oil condition and when replacement is needed, are availablefrom most restaurant supply providers.

• The Boil-Out process does not require a rolling boil ... nevertheless, DO NOT leave fryer unattended duringthe procedure. It should be carefully monitored for accidental overflow, which can result in seriousequipment damage.

• The boil-out solution and fryer will become very HOT ... always wear thermal hand protection when drainingand cleaning, as well as, other personal protective equipment, such as face-shield and latex apron.

• When using fryer degreaser/cleaner products, closely follow the manufacturer’s instructions for use. Manyavailable products may contain chemicals, which require special precautions. If used improperly, equipmentdamage and/or personal injury could result.

1. Remove waste cooking oil from the fryer as described in Section 5.04, RemovingWaste Cooking Oil.

2. Confirm that the Drain Valve Handle ① is in the fully [CLOSE] position.

3. Ensure Heat Switch is in the [OFF] position.

4. Use absorbent wipes to clean as much waste oil residue as possible from vat and heatingelements. Begin filling vat with clean ambient water.

5. Use a reputable fryer cleaning product and carefully follow the manufacturer’s usagedirections. Add the recommended amount to vat while filling, stir to mix, and fill to the[FULL] level mark ②.

6.01 Boil-Out Procedure - Cleaning the Fry Vat, continued

11. Position a suitable heat resistant catch container ⑦ (not provided)beneath the fryer drain. NOTE: Banked fryer systems have multiple draintubes; be certain container is positioned so that used boil-out solution willproperly drain into it.

11. Slowly turn the Drain Valve Handle ⑧ to the [OPEN] horizontal positionand drain boil-out solution from pot. If using catch container, carefullymonitor and empty as needed. As solution drains, clean heating elementsand vat walls, by scrubbing with the provided brushes.

12. Rinse and flush pot thoroughly with clean hot water. Empty catch containeras often as needed or continue to squeegee to floor drain.

Take care not to damage temperature probes protruding through the frontwall of the cook vat.

The container used for this step should be heat resistantup to 300°F (148°C). Plastic is generally not safe, as it may

soften and break open. A leak-proof metal container should be used. Failureto comply with this caution may result in personal injury.If a floor drain is available in a suitable nearby location, slowly drainingsolution onto floor and squeegeeing the liquid into drain is an acceptablealternative (may require a helper).

IMPORTANT: After draining and flushing, it is important that the vat’s oil filtration piping be purged to remove asmuch of the boil-out liquid as possible. Failing to do so will lead to oil contamination that can cause oil to “pop”and splatter excessively when heated to cooking temperature.

CleaningGBF Series Fryers

1. Remove filter pan from fryer if necessary.

2. Remove and clean the Pan Cover ① using a bio-degradable, non-detergent, non-toxic degreaser ... drythoroughly.

3. Use the provided metal Crumb Shovel to remove the majorportion of filter sediment accumulated on the filter mediasurface, particularly around the edge of the Hold-downFrame. This will help prevent sediment from fallingthrough the perforated filter media support screen ⑤intothe pan bottom, which could potentially lead to a cloggedfilter pump.

4. Turn the four locking levers ② (attached to pan bottom)and disengage the Hold-down Frame ③. Remove frame.

5. Grasp one end of the filter media ④ and carefully removefrom pan. Avoid allowing filter sediment to fall through theperforated support screen.

6. Use a non-detergent, biodegradable degreaser solution tothoroughly clean filter pan ⑥ & hold-down frame ③.Rinse thoroughly and dry completely. Flush out filtersediment that may have fallen through the perforatedscreen and be certain to drain all residual water from filterpan hoses.

This section describes the procedure for cleaning the filter pan and replacing filter media. Perform this after eachBoil-Out Procedure (Section 6.01), as well as part of a daily cleaning routine.GILES recommends using a non-toxic, non-detergent, biodegradable degreaser cleaner, such as SIMPLE GREEN®Crystal Foaming Spray Cleaner/Degreaser along with hot water, to clean the filter pan and components.

7. Reassemble filter pan with new or refreshed filter media (cleanfilter screen or [1] new sheet of filter paper). Be sure that filtermedia is properly installed underneath the hold-down frame andthat frame is locked securely in place by the (4) Levers.

8. Replace cover ⑦, position assembled filter pan under the unit andre-connect filter pan hose ⑧ to the quick-connect coupling (pushin slip-ring while inserting hose fitting). The connection must betight and secure for proper operation.

Filter Media Note:• A reusable Stainless Steel Filter Screen (SSFS) is standard on GBF

Series fryers - wash soiled screen in sink, using ONLY clean hot waterand a stiff bristle brush ... DO NOT use soap or cleaners. Shake offexcess water and blot dry with clean towel. Ideally screen should beallowed to dry overnight before reinstalling.

• Filter Paper - remove soiled paper and discard. Replace with one (1)fresh sheet of properly sized filter paper. Available through Gilesdealers & distributors: P/N 65871.

NOTE: Stainless Steel Filter Screen (SSFS)With proper use and care, this reusable filter screen should have a long service life. However, it should bereplaced if it becomes torn, punctured, frayed or if the silicone edge gasket becomes significantly damaged.

When filtering oil, proper use of a suitable filter aid product is essential for proper filtering and reconditioning ofused cooking oil.

Filter media must be used for filtering oil. Failure to utilize proper filter media will void the warranty! Thisplate is NOT a replaceable part.
