Wavelength Brewing Company Welcome to North County, Vista California, Wavelength BrewingCompany! Yes, its all about the beer and even more so, all about the
brew master, in this case, the combo tag team of Hans Haas and MasterBrewer James Petti. I cant tell you how many times I walked by theirnew location last summer wondering when they would open. Then onDecember 20, 2014, I was surprised to see the place was packed. Their
official Grand Opening is slated for some time in February.A couple of years ago, James Petti, Brew Master, while employed
at Karl Strauss Brewing Company, had his Heavy Petti Double IPA beerselected as the unofficial ale of San Diego Beer Week. He also was a
Maser Brewer at Pizza Port.
Wavelength is a no frills brewery and tasting room, with a wide-open
floor space and plenty of square feet to hang out. But their beer speaks
for itself. If youre inclined to visit, you simply must try their Orange
Wheat Ale, which weighs in only at 5.8%, so you might want to try a
couple of pints. Other honorable mentions include their Cascadian Dark
Ale and their Summit Rye Double IPA. These two arent for the faint of
heart, so drinker beware, hehehe!Wavelength Brewing Company is located right on the main drag at
236 Main Street in downtown Vista. Check them out at www.facebook.com/wavelengthbrewingco.
Belching Beaver Brewery Celebrating its third year, Belching Beaver is quickly making a namefor itself, is one of the upcoming breweries in North County to watch, and is one of our favorites. Theyve been on the move getting theirbrews in a lot of places, such as Jerrys Dogs in Carlsbad, and SolterraWinery in Leucadia. Their brewery and tasting room is located in Vistanear Carlsbad border, and they have a tasting room in San Diego, but willsoon be opening a new brewery and tasting room in downtown Vista.
Their beer selections range from pale ale to stout. No doubt, theyhave some of the best tasting stout around and stout is a great choiceduring the colder spring weather. A few of our favorites are their PeanutButter Milk Stout, Pumpkin Spice Milk Stout and our absolute favorite, their Beavers MilkMilk Stout. The Beavers Milk is so smooth, silky, and creamy you can almost eat it with a spoon. Vista tasting room isopen six days a week and closed on Tuesdays.
They have an awesome outdoor patio with a fire pit and live musicon Sun, a DJ on Wed, and food trucks and caterers Wed-Sun. Fifty Barrels Winery Brian Vitek, Owner and Vintner of Fifty Barrels Winery in Vista, beganfermenting and making wine in 1999 with his college buddies in hisCarlsbad garage and thought that if they could some day reach the goalof 50 barrels, they would be in business. Thus, 50 Barrels Winery openedon December 13, 2013, and the rest is history. The tasting room is opensix days a week (closed on Monday) and features bar and comfortablelounge seating. They are kid-friendly and dog-friendly.
Fifty Barrels Winery produces 12-17 varietals a year. Most of hisblends are with red grapes from Central California, Napa, Sonoma,
and Paso Robles. Many of their blends have whimsical names, such asBen Dover, Sweet Cheeks, Mellow Apathy, and Hind Spirit. But, dontbe fooled by the cute names; because Fifty Barrels produces some finewines, and one such blend that we highly recommend is their wonder-fully popular 2012 Petit Sarah from Paso Robles grapes.
Join their wine club for great discounts and ask them about upcomingevents. They have one of the oldest grape stomps in San Diego at theirwinery during the month of September. They also have Painting Nightswhere you can paint and drink great wine with friends and neighbors.Flights are seven wines for only $10.

California Spirits Company North County San Diego welcomes its first modern day and onlyspirits distillery, California Spirits Company. Casey Miles, Owner andMaster Distiller, has absolutely perfected and produces his small batchrum, Avalon Silver, at his San Marcos distillery. His rum is possibly thebest Ive ever tasted. Its the real deal; and the reason is
that most rum distilleries use neutral grain spirits and add flavoringand bottle it, calling it their own. California Spirits Company perfectedtheir small batch recipe by trying over fifty different combinations of
sugar, sugarcane, derivatives and various yeasts from around the world.Avalon Silver is made at their custom distillery location with an extrastep in the process, that commercial distillers dont do; and the outcomeis a delicious, natural, sweet rum flavor with hints of banana and apple.
The extra distilling step is a process that uses heat to remove theacetone in their custom built copper kettle (shown on our front cover).Acetone in commercial rum is what gives you headaches. Casey Miles saidhe personally has tried to induce a headache from drinking too much from
the strongest batch, but he can not. He believes that this is the processthat will prevent you from getting a headache after drinking. One morething about Avalon Silver is that it is different from all other rums becauseit is made to be mixed with Coke. According to Casey, It wouldnt winany taste awards if we entered it in any competitions by itself; but ifyou mix it with Coke, no one will come close to the taste that we havemastered. It is made specifically to drink with Coke. Congratulations toCalifornia Spirits Company for making North County very proud!
You can purchase Avalon Silver at Holiday Wine Cellar in Escondido.Liquor stores, bars, and drinking establishments can order wholesaledirect from the distillery in San Marcos by calling (760) 593-7581 or byvisiting www.calspirits.com.
Proprietor, Alex Morrison, has spent most of his life in North County andhas been a wine collector for years. Fine wine, craft beers, and his interestin food with local ingredients have led him to put the best of both worldstogether in Perfect Pairings. Chef Aaron Gentry hails from some of the fin-est restaurants in San Diego and uses fresh seasonal ingredients and hisspecialty French techniques, combined with a simplistic approach, to allowthe ingredients shine through in each and every dish he creates. PerfectPairings intimate 40-seat restaurant opened in the heart of CarlsbadVillage last October and almost every seating has been a sell-out.
Their concept is to perfectly pair beverages with cuisine, which comesfrom local farms that use environmentally sustainable practices. Their
menu changes every two weeks, based on availability of local produce.Their unique concept is that they begin each menu creation with a bev-erage. For example they will be serving a 5-course Tablas Creek winedinner on February 19, at 6:30 PM. Their craft beers are from California, wines are mostly from California, chilled teas are from Republic of Tea,and they also serve natural sodas. According to Morrison, We tastethrough the wine and beer, and create dishes that enhance and accom-pany the flavors and aromas of the beverage. Our most popular diningexperience involves a 4-course prix fixe menu, where our guests choose
an option from four categories on the menu and create their ownpairing dinner, with our chosen craft beer, wine or tea alongside eachcourse. They also feature a 6-course chefs tasting menu with pairings.Their beer and wine lineup changes every two weeks. The 4-course mealis $45, and the 6-course chefs tasting is $65.
Also interesting to note, the night before their menu changes, they hold winery or brewery dinners, with one seating. A recentwinery dinner featured Justin Winery from Paso Robles and LandmarkWinery from Sonoma paired with a 5-course dinner. Karl Strauss willhave a Feb. 5 beer dinner; and Tablas Creek winery from Paso Robleswill have a Feb. 19 wine dinner. Beer dinners are typically $50-65,
and wine dinners are typically $80-95.Perfect Pairings is located in the heart of Carlsbad Village at 300
