Greetings Neighbors, The Season of Light is here again. Whether you celebrate Christmas, Hanukkah, or Kwanza, light is an important element. May yours shine bright this season! For those of us remaining here for the holidays, there are some socials to keep us entertained. Light Up Saddle Oak culminates with refreshments at the clubhouse after the golf cart parade. There’s a catered dinner in the clubhouse on Christmas, a party on New Year’s Eve, and soup on New Year’s Day. Lots of ways to celebrate during the holiday season! ***IMPORTANT ANNOUNCEMENT*** If an event at the clubhouse involves purchasing or preparing food, it is essential that there be a “no excuses” cut-off date. There are lots of ways to learn about events - at Saturday coffee, at HOA meetings, in the newsletter posters and on posters at the clubhouse. So read your newsletter, come to meetings or check the posters.

Hospitalization/illness:

No hospitalizations to report at this time. Just the usual colds, flu, allergies and aches & pains.

Bereavement

There are no resident deaths to report at this time. Since Rita Cope has moved, we need a chairperson for this committee. There are a couple of helpers, but they want a leader.

Election of Board Members

Volunteers are needed to serve on the Board of Directors for the HomeOwners’ Association

beginning in February. We are looking for 4 candidates. Two 3-year openings are available as we say goodbye to Toots Lobe and Shirley Ashbaugh. One 2-year and one 1-year position are also available. Those positions currently have appointed people who are eligible to officially run. As a Board member, you are asked to attend the monthly Board of Directors meeting on the second Tuesday afternoon and the monthly HomeOwners Association meeting on the second Wednesday evening. In addition, you will need to read and review the state statutes that govern our type of association (Chapter 723). There are responsibilities that the Board undertakes in regard to celebrating specific holidays. We look for candidates that enjoy the community and the residents that live here. If you are interested, please submit your resume to Nominating Committee Committee co-chairs, Kathleen Sirois or Nancy Savel. These resumes need to be published in the January newsletter. The newsletter deadline is the 15th of December.

Blood Drive

There will be a blood drive on Thursday, December 26 from 10:00 to 12:30 at the clubhouse. Please do not use the golf cart parking spaces so there is room for the bus to park.

Christmas Project for Veteran's Village

Thank you from Toots Lobe

I would like to thank everyone for a beautiful Veterans Day Dinner. The dinner was wonderful. The ceremony was quite touching. Everything was quite spectacular. Once again we thank every volunteer for their outstanding jobs. However, one person stands out in particular and that is Zee Melendez who all by herself cut in half 69 chickens. That was not an easy job. Again thanks to everyone and God Bless America and all of our service men and women. Toots

Cribbage

Cribbage fans: Cribbage resumes Sunday evenings @ 6:30 at the clubhouse. Come play or watch and learn. Linda Butryn

Interfaith Food Pantry

Dick and Gladys Ouimette remind residents that the box for food donations to Interfaith (which serves the Ocala community) needs contributions. It is located next to the piano in the clubhouse. This is different from the pantry in the office which is just for SOC residents.

Christmas Events Light Up Saddle Oak This is a time for residents to decorate outside their houses for Christmas. Prizes will be awarded. This year there is a change in the prizes. The committee decided to award 1st place prizes in three different categories: MOST EFFECTIVE USE OF LIGHTS, TRADITIONAL AND HUMOROUS. Judging (by anonymous residents) will be Thursday, December 12. Have your lights on by 6:00 pm. On Saturday evening there will be a golf cart parade. Dress up your carts and/or yourselves and join the entertainment. Lineup is by the bocce court @ 5:30 pm. The parade will begin at 6:00 pm. Following the parade there will be refreshments in the clubhouse for all residents. Come join the fun and ride around to see all the beautiful lights.

Christmas Dinner will be a catered event in the clubhouse on Wednesday, December 25 @ 2 pm.

The meal will consist of :

Spiral Sliced Baked Ham with Brown Sugar Raisin Sauce

Mashed Sweet Potatoes

Rice Pilaf

Veggie Blend

Red Velvet Cake Log Slices

To reserve a spot, all residents attending this dinner much purchase a ticket for $13.00 by 5:00 pm on Tuesday, December 17. The money will be refunded at the event. Guest tickets will not be refunded.

New Year’s Eve Party

On December 31, New Year’s Eve, there will be a party in the clubhouse from 8:30 pm-12:30 am. Cost - $3.00 per person. Jim and Kathy Besse will provide dance music. Attendees should bring snacks and their own beverages. Visit and celebrate with your friends. Welcome in 2020! Clean up your tables and the floor around them. Then head home to bed. Don’t forget to come to the

clubhouse the next day to have some soup and bread!

New Year’s Day Soup Event On January 1, New Year’s Day, from 11:30 am until it’s gone, Gloria Paige, Nancy Pollom, and Roxy Lyon will serve a variety of homemade soups and bread. The cost is $5.00 per seating paid at the event. No ticket necessary. Anyone interested in contributing a pot of soup to this event, please check with one the hosts.

BRAIN HEALTH is defined as the ability to function in daily life including wise decision-making, problem-solving, successful interactions with others, and emotional balance. All of these functions require you to remember, understand, think and problem solve.

It’s never too late to think about your brain health. The research is clear: What you EAT and what you DO have a lot to do with your brain health. In fact, eating the right foods can enhance memory, build new brain cells and even help ward off Alzheimer’s, dementia & brain fog (forgetfulness).

What foods help?

Fruits: Avocadoes, blueberries, cantaloupes, citrus (lemons, limes, oranges, tangerines), cherries, eggplant, grapes, longans, mangoes, papaya, peaches, pumpkin, squash, strawberries

Simple Lemon Herb Chicken (Allrecipes)

Prep 10 min. Cook 15 min. Ready In 25 min.

2 skinless, boneless chicken breast halves

1 lemon

Salt & pepper

1 T. olive oil

1 pinch dried oregano

2 sprigs fresh parsley, for garnish

Directions

1. Cut lemon in half, & squeeze juice from ½ lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.

2. When oil is hot, put chicken in skillet. As you sauté chicken, add juice from other ½ lemon, pepper to taste, & oregano. Sauté for 5 to 10 min. each side, or until juices run clear. Serve

On Monday, November 11th, the Saddle Oak residents honored their military veterans.

With balloons flying, the program began with the color guard marching in to patriotic music. Following was the Pledge of Allegiance and Fred Mullen gave the blessing before dinner.

During dinner, veterans and quilting ladies photos flashed on the screen thanks to Ed Buckley. The meal was exceptional with generous pieces of chicken, baked potatoes, fruit salad, lettuce salad, rolls and dessert, Toots Lobe and her crew did an excellent job.

After dinner, the program continued with a patriotic poem written and read by John Terreault. A new resident, Eddie Rager, donated a Korean war framed print. Dick Ouimette was the winner in a drawing.

The highlight of the evening: Rita Cope, Trina Vertefeuille, and Suzette Brown with many helping hands created 16 patriotic quilts and presented them to the World War II veterans: Bob Bull, Frank Ruck, Wayne Robertson and Larry Gaubatz. The Korean War veterans also each received a quilt: Clint Barber, Bill Kramer, Bill Logan, Jim Fritz, Dick Ouimette, Karl Glandorf, Ed Born, Al Carson, Carl Smith and Frank Miller.

The evening ended with cupcakes for dessert.

We would like to take this opportunity to thank everyone who worked hard to make the evening a success:

Many people would rather be a spectator than a participant in the evets and activities here at

Saddle Oak Club. If everyone was a spectator, then here would be nothing to attend, nothing

to watch, nothing to do. Volunteers keep the community alive, active and make it a

community instead of a small cluster of houses indistinguishable from any of the many other

clusters of houses in Florida

Most of us came to Florida because of climate or taxes. When you ask why we came to Saddle

Oak Club, you will hear a variety of reasons. Some say they came here for family or friends,

others cite the “sense of community” that comes with living here. Aren’t both really saying the

exact same thing? Volunteering makes that all happen.

Every Saturday morning many of us gather for Saturday coffee. Speaking of which, we won’t

have coffee and donuts on Saturdays unless someone volunteers. If you’ve never done it

before, someone experienced will be happy to show you the ropes.

The monthly newsletter is written and created by volunteers. Help is needed producing the

newsletter and organizing delivery to our community. You can join the newsletter team and

contribute to the effort. Please contact Marty Guzowski or Gloria Paige to volunteer.

Many upcoming events just won’t happen if there are no volunteers to help organize, purchase

supplies (with HOA funds!), cook, serve, entertain and clean up. Some of the events include:

Yard Sale, Memorial Day, Labor Day, Halloween, Veterans Day, Craft Fair, Thanksgiving, Light Up

Saddle Oak, Christmas Dinner, New Year’s Eve and New Year’s Day. There are numerous others

listed in the newsletter. Please pick one and join in.

Without volunteers none of it will take place. You don’t have to go from newbie to Event

Chairperson instantly. Just do a little piece. Others will be standing beside you to help along

the way. Become part of Saddle Oak Club. Contact any activity chairperson or HOA board

member to volunteer.

Speaking of the HOA Board. Elections are every February. If you want to be more involved,

continue the traditions and present new ideas, run for a board position. Submit your resume

Since retiring this past April, I miss interacting with the residents. As a board member I feel I may be able to tap into some residents for stepping up and helping out. I enjoy being around people and want to stay involved in our community by helping residents to keep Saddle Oak Community a great place to live. I moved to Saddle Oak Club in May 2014 from Huntingdon, a small town in central PA, about 32 miles from State College (Penn State University), in which I attended and was later employed by. “WE ARE”! In August 2014, I began working for Saddle Oak Club as a part time Maintenance Technician. Duties included taking care of the club house, pool area, flowers, weeds, and other duties. In December 2016, I accepted the position of Office Coordinator, working directly with the former Community Manager, Joanne Mickett, performing all administrative functions.
