Star of the Month Edelberto Saltos
We are very proud to have Edelberto with us at Fair Oaks Adult Activity Center! At the young age of 14, Edelberto began working and studying at night to support his family. He helped provide education for his 10 brothers who all became professionals. Edelberto graduated as an economist from the University Vicente Rocafuerte, Ecuador. He was a professor for 35 years at the University, a journalist, and worked in radio and television.
Edelberto believes he is an instrument of God, and, through his diplomatic relations, has achieved benefits for older adults in his country. He is very happy coming to Fair Oaks and believes seniors need health, entertainment and family attention. His children Walter, Jose, Luis and Marlene are following his example by going to college and working to pay for their studies. Edelberto says, “To serve humanity is the best work in life”
Estamos orgullosos de tener a Edelberto con nosotros . Siendo casi un nino, a los 14 anos, Edelberto empezo a trabajar y a estudiar de noche para educarse y apoyar la economia familiar, asi sus diez hermanos, llegaron a ser profesionistas. Se graduo de Economista en la Universidad Vicente Rocafuerte, Ecuador, ha sido Profesor de la Universidad por 35 anos, ha sido periodista y ha trabajado en la Radio y la Television.
Edelberto dice que ha sido el instrumento de Dios, que a traves de sus relaciones diplomaticas ha logrado beneficios para los adultos mayores en su pais. Edelberto cree que los adultos mayores necesitan Salud, Diversiones y Atencion Familiar. El esta muy contento de venir a este centro y le gustaria compartir la Teoria de la Recuperacion de la Memoria que en su experiencia ha ayudado a muchas personas. Sus hijos Walter, Jose, Luis, y Marlene siguen su ejemplo de ir a la Universidad y trabajar para pagar sus estudios. Edelberto dice “Servir a la Humanidad es la Mejor Obra de Una Vida”

Club Health and Wellness Dance Class Arts and Crafts Class Fitness Class/Activity
Stress Management Yoga - Design for the disabled student to recognize stress symptoms and become aware of signals which cause triggers in stress. Learn stress management skills from passive to active take-charge role.
Yoga - A slow-paced, very beginner yoga class for those with more seasoned bodies and those new to yoga. The class will use chairs and other props to ensure that the benefits of yoga are accessible to folks of varying degrees of strength and flexibility.
Sit & be Fit -Is an exercise program for older adults and individuals with limited physical motion. This class promotes functional fitness, healing, and independence.
Soul Line Dancing – Is a low impact aerobic exercise. The music selection includes the following: R&B, Blues, Jazz, Hip-Hop, Country, and Latin.
Tai-Chi – This format is often described as “meditation in motion,” but it might as well be called “medication in motion.” There is growing evidence that this mind-body practice, which originated in China as a martial art, has value in treating or preventing many health problems. And you can get started even if you aren’t in top shape or the best of health.
Samba – It’s time to move to the rhythm of Latin Music! This is a free style dance format where you dance along as you wish. Directed by one of our volunteers that loves to dance!
Estrés Yoga Gestión - Diseño para el estudiante con discapacidad a reconocer los síntomas de estrés y tomar conciencia de las señales que causan los factores desencadenantes de estrés. Laura’s Turkey Meatloaf
1 tablespoon olive oil
1 large onion, chopped (1 1/2 cups)
2 garlic cloves, minced
3/4 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 1/2 tablespoons Worcestershire sauce
1/3 cup fat-free, low-sodium chicken broth
3 tablespoons ketchup, divided
1 3/4 pounds ground turkey, 97% lean
3/4 cup dry breadcrumbs
1 large egg, lightly beaten
1 large egg white, lightly beaten
Preparation
1. Preheat oven to 375°. Heat oil in medium skillet over medium heat. Add onion and cook, stirring frequently, until soft, about 5 minutes. Add garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook, stirring, 1 minute. Stir in Worcestershire sauce, broth, and 1 tablespoon ketchup; transfer mixture to a large bowl, and cool.
2. Add turkey, breadcrumbs, egg, egg white, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to mixture in bowl, and mix well (mixture will be very moist).
3. Cover a baking sheet with aluminum foil, and coat lightly with cooking spray. Form the turkey mixture into a loaf, and place on the pan. Brush meatloaf evenly with remaining 2 tablespoons ketchup. Bake 1 hour. Let meatloaf stand 5 minutes before serving.

Laura’s Torta de Carne de Pavo 1 cucharada de aceite de oliva
1 cebolla grande picada ( 1 1/2 tazas )

3/4 de cucharadita de sal , dividida
1/2 de cucharadita de pimienta , dividido
1 1/2 cucharadas de salsa inglesa
1/3 taza sin grasa , caldo de pollo menos de sodio
3 cucharadas de salsa de tomate, dividida
1 3/4 libras de pavo molida , 97 % magra
3/4 taza de pan rallado
1 huevo grande , ligeramente batido
1 clara de huevo grande , ligeramente batido
Preparacion
1.Precalentar el horno a 375 °. Calentar el aceite en una sartén mediana a fuego medio. Añadir la cebolla y cocine, revolviendo frecuentemente, hasta que esté suave, aproximadamente 5 minutos. Añadir el ajo, 1/4 cucharadita de sal y 1/4 de cucharadita de pimienta; Cocine, revolviendo, a 1 minuto. Agregue la salsa Worcestershire, el caldo, la salsa de tomate y 1 cucharada; transferir la mezcla a un tazón grande, y fresco.
