The BDF Technical Department has developed a new application for the product
Probind® MB 1.0, based on the transglutaminase enzyme.
This new application consists in
Restructuring Edam Cheese, i.e
transforming cuts of cheese into a
whole piece.
This application is especially suited
for cheese fingers or breaded cheese
as it has low melting characteristics.
