Bocca di Nonna with Earl Grey GanacheM cup all-purpose fl our2 tablespoon unsweetened extra dark cocoa powderM cup unsalted butter1 cup sugar¾ teaspoon vanilla bean paste1 ½ cups fi nely ground blanched almonds

Earl Grey GanacheL cup heavy whipping cream4 Earl Grey tea bags (or a tea ball of 4 teaspoons loose tea)4 ounces dark chocolate, 65–70% cocoa content

PreparationIn a small bowl, stir together fl our and cocoa powder; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add sugar and vanilla bean paste. Beat until combined, scraping sides of bowl occasionally. Beat in almonds. Beat in fl our mixture just until combined. Cover and chill dough about 1 hour.

Preheat oven to 350 degrees. On a chilled surface (either marble or a rubberized mat) roll out cookie dough and cut into 1½ inch rounds. Place cut cookies on cookie sheet lined with parchment paper. Bake for 12 minutes or until fi rm. Cool on cookie sheet. Spread about a teaspoon of Earl Grey Ganache on top of the cookies. Decorate with slivered almonds or any other decorative edible.

Earl Grey Ganache: In a small saucepan, bring heavy whipping cream to a boil. Remove from heat. Add tea and let stand for 15 minutes. Remove tea from cream and, if using bags, gently squeeze them with back of spoon to release any remaining liquid and add to the cream mixture. Return cream to boiling. Remove from heat and add 4 ounces of dark chocolate chopped into small pieces. Stir until chocolate is melted and shiny and smooth. Cool to room temperature before frosting.

Cream Cheese Frosting6 ounces cream cheese3 tablespoons softened butter1 cup confectioners’ sugar, sifted2 teaspoons vanilla extractDemerara sugar (unrefi ned sugar), for sprinklingCardamom powder, for sprinklingvanilla extract, making sure the frosting has a completely creamy texture.

PreparationIn a large mixing bowl beat butter with electric mixer on medium speed for 30 seconds. Add brown sugar, chai tea, vanilla, baking soda, and salt. Beat until light and fl uffy, beating in as much of the fl our as you can with the mixer. Stir in remaining fl our. Divide dough in half. Cover and chill about an hour.

Preheat oven to 375 degrees. On a lightly fl oured surface, roll half the dough until¼ inch thick. Use any cookie cutter shape you like, placing pieces 1 inch apart on an ungreased cookie sheet.

Bake 8 to 10 minutes or until edges are fi rm and light brown. Transfer to wire rack and let cool. Frost cookies with cream cheese frosting. Immediately sprinkle with Demerara sugar and ground cardamom powder.

Cream Cheese Frosting: Whip the cream cheese and butter on high with an electric beater. Add confectioners’ sugar and 2 teaspoons of vanilla extract, making sure the frosting has a completely creamy texture.

PreparationPreheat oven to 350 degrees. Mix chilled butter and granulated sugar until blended with an electric mixer. Add one egg at a time until fully incorporated. Add drops of lavender essential oil and continue to mix. In another bowl, mix fl our, salt, baking powder and baking soda, adding these dry ingredients to the moist.

Portion dough at 2 ounces each, rolling into balls. Bake 15 minutes or until cookie has no glossy look. While cookies are cooling on rack, in a double boiler, melt white chocolate, adding oil to keep from becoming dry and hard to dip. Dip cookie edge, lay out on parchment paper and immediately sprinkle with lavender buds and sprinkles.
