One of the biggest challenges that I hear from my clients is that they have "zero time to cook". Well, I am also busy but I still try to make my own meals for myself whenever possible as opposed to relying on takeout or restaurant food. I've learned to keep certain healthy items on hand for the times when I literally have 2 minutes to whip up something to eat.

Pre Washed SaladThe bagged, chopped, pre-washed salads cost more than buying regular bundles of lettuce, but they are also effortless. Open the bag, pour into a big bowl, and top with all my other favorites in this list.

Canned BeansThese are your best source of instant protein (as well as

many other nutrients). You literally open the can, rinse, and pour them into a wrap, on top of salad, into a soup, or with some pasta. They are one of the cheapest "convenience foods" too. I eat beans almost everyday for this reason.

Raw Vegetables & FruitThings like red/orange/yellow peppers, cucumbers, tomatoes, snap peas, zucchini, broccoli, carrots, snap peas, red onion, cabbage, etc. are all totally edible and tasty when chopped up and thrown into dishes. Same goes for all fruit, both fresh and dried.

Instant Whole GrainsOptions include instant oatmeal, frozen/microwaveable rice blends, pre-cooked quinoa, etc. I'd also put good quality 100% whole grain bread or wraps in this category, just make sure it’s actually good quality (hint, it should only have about 4 or 5 to-tally recognizable ingredients).

My favorite way to make them is in a toaster or stove top pan with some cooking spray. There are lots of brands out there, some with good quality ingredients and some with a bunch of crap &

chemicals. Read the food label; you want to recognize every ingredient easily and avoid "isolated soy" anything.

Canned/Boxed SoupAs long as you read the label and buy a kind that has straight-forward ingredients and no weird chemicals & additives, I think canned soup is an acceptable meal in a pinch. Obviously it de-pends what kind you choose. I like to buy organic veggie & bean based soups or chilis because they are healthy and filling.

I could go on and on with this list presenting other quick, healthy, acceptable options, but these are the foods that I personally find myself actually eating the most when I have no time to cook. The foods in this list can come together to create healthy meals in mere minutes (for example, a salad with beans, hummus, raw peppers, red onion, tomatoes, olives, and wild rice would take about 3 minutes to prepare). So maybe this is a little harsh, but stop making excuses for why you rely on everybody else but yourself to prepare your food, and start buying some of these quick staples to keep around!

Soba NoodlesAll pastas have pretty quick cooking times (usually under 10

min), but soba noodles are the quickest I've found yet. These are good in all Asian dishes but can also be used an-ywhere you'd use regular pasta. They cook in 3 minutes.
