As fall approaches, don’t let the looming chaos of mornings intimidate you. While you're trying to get everyone out the door, you may barely have a moment to sip your coffee. This year, stop the scrambling, and remember that there’s no reason to skip the most important meal of the day. Breakfast can get you and your whole family ready to take on the day's challenges, and a healthy, energizing meal doesn’t have to mean more time. Try these quick bites to start the day off right.

Make-Ahead Sunrise SmoothieZero dishes required! Get a week’s worth of breakfasts by using your blender at the beginning of the week. Combine vanilla yogurt, orange juice, a banana, ice and honey in the blender. Whir until smooth, and then separate the mixture into 12 muffin cups and freeze. Place a few of the frozen smoothie “muffins” in a disposable cup and stick in the fridge overnight to thaw. In the morning, you’ll have a delicious ready-to-drink smoothie. You can customize the smoothie any way: add veggies or kiwi for a green monster smoothie or coconut water for a tropical treat.

No Bake Granola BarsThese granola bars are perfect for busy mornings. To make a batch, mix steel-cut oats, rice cereal, and your favorite dried fruit, nuts and seeds in a bowl. Use a skillet to melt enough butter to wet the entire mixture. Before removing the skillet, add a bit of brown sugar and honey in with the butter to sweeten your creation. Combine all ingredients, pour in a baking dish, and refrigerate until chilled. For an extra crunch, press sliced almonds or crushed walnuts on top. Then add cucumber, red bell pepper, basil and shallot in a blender or food processor. Puree until smooth, then add watermelon slowly. Add olive oil, salt and red-wine vinegar until desired taste is achieved. Chill entire mixture, garnish with basil and/or lemon and serve chilled for a summer dinner that will keep you cool.
