    Makes 2 servings

    Place bacon slices on a microwave-sae plate lined withpaper towel. Cover bacon with paper towels and placein the Cuisinart Convection Microwave Oven with Grilland microwave on high (PL-10) or 2-minute intervalsuntil bacon is slightly crisped; reserve.

    Place hal o the vinegar and water into each o two6-ounce custard cups. Break an egg into each cupand gently prick the yolks with a toothpick. Place cupsin oven and microwave or 1 minute on high or untildesired doneness; reserve.

    Hollandaise sauce can be daunting making this in your microwave makes it quick and easy. Serve withsh, vegetables or to make Eggs Benedict.

    Makes about 1 cup

    Place butter in a microwaveable 1-cup measure. Coverwith waxed paper and place in the CuisinartConvection Microwave Oven with Grill; microwave onmedium power (PL-5) to melt, about 1 minute. Let coolslightly, about 4 to 5 minutes.

    Place egg yolks, lemon juice, water, salt and drymustard in a microwaveable 4-cup measure or bowlwith handle. Whisk until emulsied and smooth. Whisk

    in melted, cooled butter; whisk until completelyemulsied.

    Cook sauce uncovered or 2 minutes on medium-high(PL-7), stopping to whisk briskly every 20 seconds. Themixture will begin to thicken at the edges and resemblea sot custard. Cook until mixture thickens enough tocoat a metal spoon. Serve warm with seaood,vegetables, or eggs.

    A twist on the classic BLT ingredients compose this rittata.

    Makes 12 servings

    Place slices o pancetta in a single layer on amicrowave-sae plate lined with paper towels; coverwith an additional layer o paper towels. Place in theCuisinart Convection Microwave Oven with Grill andselect Express Cook or 3 minutes. Continue tomicrowave on high (PL-10) in 1-minute increments untilpancetta is cooked through and lightly crisp, about anadditional 2 to 3 minutes. Remove and reserve. Tossarugula, garlic, olive oil, pinch o salt and pinch opepper together and place in a microwave-saemeasuring cup with the tablespoon o water. Microwaveon high or 45 seconds, stir ingredients together and inecessary microwave or an additional 10 seconds toully wilt all o the arugula. Once wilted, stir in the grapetomatoes.

    Whisk together the eggs, Parmesan, and remaining saltand pepper. Crumble the pancetta and stir into eggmixture. Pour o and discard any extra liquid that mayhave accumulated with the arugula and then stir thearugula and tomatoes in with the egg mixture.

    Coat a 9-inch microwave-sae pie plate with nonstickcooking spray and add the egg mixture.

    Place on grill rack in the lower rack position and placein oven. Select Combination Fast Bake at 375F or 30minutes. I center seems wet, select Combination FastBake again or an additional 5 minutes. Select the rstGrill Combination (G-1) or 3 to 5 minutes to lightlybrown the top.

    Serve immediately.

    broccoli and cheddarQuiche

    A classic combination try this delicious quiche or brunch.

    Makes 12 servings

    Place four and salt in a Cuisinart Food Processor ttedwith the metal chopping blade. Process or 10 seconds.Add butter to work bowl and pulse until the mixtureresembles coarse crumbs. Pour in water, 1 tablespoonat a time, and pulse until a dough just orms. Formdough into 2 fat discs; wrap in plastic and rerigerateuntil ready to use.

    Roll out one dough disc** to 18-inch thick to t a 9-inchglass pie plate. Fit into pie plate. Chill in rerigerator orabout 20 minutes.

    While dough is chilling, preheat Cuisinart ConvectionMicrowave Oven with Grill to 350F on the convectionsetting.

    Using a ork, prick the dough evenly all over but makesure not to go entirely through the dough. Line the shellwith parchment and weigh down with dried beans orrice. Place on grill rack in lower rack position and bakein preheated oven or 15 to 20 minutes, or until thedough under the parchment is no longer wet. Removethe beans/rice and parchment and continue baking until

    the shell is golden brown, about an additional 20minutes. Remove and reserve.

    While quiche shell is baking, cut the broccoli into foretsand place on a microwave-sae plate with the water.

    Once shell is par-baked, place broccoli in oven andpress 3-minute Express Cook. Toss broccoli andmicrowave in 1-minute increments until broccoli is justcooked through about 1 to 2 minutes. Roughly chopbroccoli by placing in a Cuisinart Food Processor ttedwith the metal chopping blade; quickly pulse 4 to 5times.

    Preheat oven again to 375F on convection setting.Stir together the heavy cream, milk, eggs, yolk, greenonion, salt, pepper and nutmeg; reserve.

    Spread o the Cheddar evenly along the bottom othe partially baked quiche shell and then spread withthe chopped broccoli. Pour the cream mixture over thebroccoli and Cheddar and then top with remainingCheddar.

    Place quiche on the grill rack in the lower rack position.Bake or 30 minutes. Allow quiche to rest in the oven or

    an additional 15 minutes beore removing.**The second dough disc may either be used within 3days i rerigerated or it may be wrapped well andstored in the reezer until needed.

    Preheat Cuisinart Convection Microwave Oven with

    Grill to 375F on the convection setting. Lightly coat a6-regular mun pan with nonstick cooking spray.

    Prepare the crumb topping. In a small bowl, mix the rst6 ingredients together with a ork, reserve.

    In a small bowl, mix the four, baking powder, salt, andcinnamon; reserve.

    Cream the butter with the brown sugar using aCuisinart Stand Mixer on low to medium speed. Withmachine running on low add the egg and mix until

    incorporated. Stir together the sour cream, milk, andvanilla and add to the mixer until incorporated; add themashed banana. Gently old in the four mixture andnuts using the old unction until all ingredients areincorporated. Be careul not to over mix. Spoon evenlyinto prepared mun cups and top with the reservedcrumb topping.

    Careully place muns in the preheated oven on thegrill rack in the lower position. Bake in the preheatedoven or about 15 to 20 minutes, or until a cake testerinserted comes out clean.

    Makes about 8 to 10 servings

    Spray a (8 x 4 x 2-inch) loa pan with nonstickcooking spray.

    Sit the four, sugar, baking soda, baking powder andsalt together in small mixing bowl; reserve. Place thechopped dates, butter, and vanilla in a larger mixingbowl; reserve.

    Place the water in a microwave-sae measuring cup andmicrowave on high (PL-10) or 2 minutes in theCuisinart Convection Microwave Oven with Grill. Pour

    water over the dates and butter and stir together untilthe butter is completely melted. Stir in dry ingredientsuntil ully incorporated and then stir in the choppedwalnuts.

    Pour batter into prepared loa pan. Preheat oven to325F on the convection setting. Place loa pan on thegrill rack in the lower rack position and bake or 45minutes. Use a cake tester to test or doneness. I breadneeds more time, bake or an additional 5 minutes.

    eggplantBaba GhanoushThis version o the Middle Eastern dish works well as a spread or crackers or as a dip or crudits.

    Makes about 3 cups

    Slice eggplant in hal, toss with 1 tablespoon o theolive oil and place skin side down on a microwave-saepie plate; cover. Place in the Cuisinart ConvectionMicrowave Oven with Grill and microwave on highpower (PL-10) or 10 minutes. Remove cover and selectCombination Fast Bake on 375F and cook or anadditional 15 minutes. Eggplant should be sot. Inecessary, bake longer on Combination Fast Bakeor an additional 5 to 10 minutes.

    When eggplant is cool enough to handle, remove skinand discard.

    Insert the metal chopping blade into a Cuisinart FoodProcessor. With the motor running, drop the garlic clovethrough the small eed tube to nely chop. Add theeggplant and pulse to chop, about 10 pulses. Add thechick peas, lemon juice, tahini, salt, cumin and cayenneand pulse again until ingredients are incorporated,about 10 pulses. With motor running add the remainingolive oil through the small eed tube and process untilsmooth. Add the parsley and pulse to incorporate,about 10 to 12 pulses.

    Flavors are best when dip can sit or a ew hours. Keeptightly wrapped in the rerigerator; remove hour

    beore serving.

    These delicious spinach pastries do take some time to prepare however,they reeze beautiully and are the perect party hors doeuvre.

    Makes 18 to 20 pastries

    Place the spinach in a glass bowl or measuring cup toderost in the Cuisinart Convection Microwave Ovenwith Grill. Derost by time (dEF 2) in 5-minuteincrements until spinach is completely thawed. Placederosted spinach in a tea towel and wring out allpossible moisture over the sink. Place spinach in amixing bowl and mix together with egg, green onion,spices, eta and rosemary.

    Place butter in a 2-cup glass measuring cup and lightlycover. Melt in the microwave by using medium power(PL-5) and 30-second time increments, stirring butter asit melts.

    Unroll phyllo dough and keep covered with a damp, notwet towel. Place one sheet on a clean fat surace. Brushlightly with butter and then lightly sprinkle withbreadcrumbs, repeat with 2 more sheets o phyllo,layering on top o each other. With a sharp knie orpizza cutter, cut layered phyllo into 3 strips each about2 inches wide. Place a heaping tablespoon o lling inthe bottom corner o each layered phyllo strip. Fold the

    end o the strip on an angle to cover the lling and toorm a triangle. Continue to old the triangle along thestrip until the end similar to olding a fag. Butter theoutside well. Repeat process until the remaining lling isused. Place prepared pastries into two 9-inch squarepans.

    Preheat oven to 375F on the convection setting. Oncepreheated, careully place one pan on the turntable andthe other pan on the grill rack in the upper position.Bake or 20 minutes until the pastries are golden.

    Preheat Cuisinart Convection Microwave Oven withGrill to 350F on convection setting. Butter two 9-inchround cake pans and then cut a circle out o parchmentpaper to t the bottom o each pan.

    Sit the four, baking powder, salt, and sugar into themixing bowl o the Cuisinart Stand Mixer tted with thefat mixing paddle. Turn mixer on speed 1 to mix thedry ingredients together. Add the butter to the bowland start mixing on speed 1.     In a mixing bowl whisk the eggs together well; reserve.

    Place the chocolate and butter in a 1 quart casseroleand place in the Cuisinart Convection Microwave Ovenand Grill. Microwave on medium (PL-5) or 6 minutesstirring halway through cook time.     poached pear and plumTart

    A simple, light dessert that is perect in early all when pears and plums are at their peak.

    Makes one 7-inch tart, about 4 to 8 servings

    Place the port, orange juice, water, sugar, orange peel,cinnamon and vanilla in a microwave dish that canaccommodate the pears i placed upright no smallerthan a 1-quart container. Peel the pears and place inthe liquid. Place in the Cuisinart Convection MicrowaveOven and Grill and select the 6 minute Express Cook.When time elapses, fip pears and microwave on highagain or 4 minutes. Continue turning pears andmicrowaving in 2-minute increments until pears caneasily be pierced with the tip o a paring knie. Removepears once cooked through and reserve. Place plums inpoaching liquid and microwave on high or 3 minutes.Flip the plums and microwave again or an additional 2minutes. Flip one more time i necessary. Plum skins willbegin to separate rom the ruit. When plums are tenderremove and reserve them with the pears. Place poach-ing liquid back into oven and microwave on high or 20to 30 minutes so that liquid is reduced and thickenough to coat the back o a spoon.

    While the liquid is reducing, prepare the ruit. Cut the

    pears in hal and careully remove the stem and core.Cut the plums in hal, remove the pits and careully peelaway the skin. Place both the pears and plums into ashallow bowl. Once the liquid has reduced, pour overthe halved ruit and allow to steep at room temperature.

    While ruit is steeping, roll the pu pastry out thin. Cuta circle out o the pastry to t a 9-inch round pan. Cuta 1-inch round band out o the pastry to create a borderon top o the circle. Whisk together the egg and thewater and brush the entire circle and border with theegg wash. Place both together in the 9-inch pan. Prickthe base o the circle with a ork all over its surace.

    Preheat the oven on the convection setting to 400F.Place pan on the grill rack in the lower rack positionand bake until golden, about 15 to 18 minutes.

    While pastry is cooling, melt the chocolate by placingin a microwave-sae dish and microwave on high or30-second increments, stirring in between, until melted.When pastry is cool to the touch pour the chocolate intothe tart. Allow to cool so that the chocolate hardens.

    Once the chocolate is cool, arrange the ruit on the tart.Place liquid back in oven to microwave on high or anadditional 3 to 5 minutes to reduce, creating a thicksyrup. Spoon over ruit and serve tart with whipped
