Mia’s Four Minute Meals Hello everyone! My name is Mia and I love food, so I’ll be sharing a couple of different recipes to try this semester! I’ll have two recipes that can be made in a dorm, and two recipes that you can make using an oven or stovetop. Hope you enjoy! DORM FRIENDLY: This first recipe is a replica of one that I like to make at home, but now it’s dorm friendly! It’s called Cheesy Pasta & Broccoli. uncooked pasta broccoli (probably best to use the kind you can steam in a microwave) cheese(s) of your choice olive oil/butter >Put uncooked pasta in water and heat in a micro- wave-safe bowl. (To determine the time, add about 2-3 minutes to the time the pasta lists on the box.) >Strain pasta and add cooked broccoli. >Mix in 1 tbs of olive oil (or butter). >Add a handful (or half a handful, or three handfuls) of your favorite cheese. If the cheese doesn’t melt, pop it back in the microwave for a few seconds. And there you have it! The other dorm-friendly rec- ipe is a cheesecake mug cake recipe. This one is cool because un- like most mug cake recipes, you don’t need self-rising flour. 2 graham crackers, crushed into crumbs 1 tsp. sugar 1 tbsp. melted butter 4 tbsp. cream cheese 2. tbsp. plain Greek yogurt 2 1/2 tbsp. sugar 1 egg 1/2 tsp. vanilla extract >Crush the 2 graham crackers in a plastic baggie. >Pour it back into a mug and mix in the other sugar and butter >Pack it as tight as possible at the bottom of the mug. >Add all the cake ingredients in a different mug and stir until the batter is smooth. >Pour into the cup with the crust. >Microwave on high for 2 1/2 mins. KITCHEN FRIENDLY: These next recipes are for those of you have access to a stove/ oven. This first one sounds delicious to me- it’s a spin on classic baked chicken tenders. 4 boneless, skinless chicken breasts 3/4 cup ranch dressing 3/4 cup panko breadcrumbs, or plain breadcrumbs 1/4 cup sharp cheddar cheese, finely shredded 1/4 cup Parmesan cheese, grated >Preheat oven to 400 degrees. Line a baking sheet with parchment paper and spray with cooking spray. >Trim chicken breasts, place in a large bowl then pour ranch dress- ing over the chicken and mix until evenly coated. Marinate for up to overnight or bread immediately. >To make the breading, add breadcrumbs, cheddar and Parmesan cheese into a shallow bowl then stir until well combined. >Remove chicken from dressing and allow the excess to drip off but leave any that clings to the chicken. Completely coat each breast in the breading mixture. >Arrange the chicken on the baking sheet, spritz top of chicken with cooking spray and bake 22–25 minutes or until the breading is crisp and chicken is cooked through. >Remove from oven and allow it to rest 5 minutes before serving. The last recipe is one that my family and I love- it’s super easy and quick! Here’s how to make Three-Ingredient Peanut Butter Cookies: 1 cup Sugar 1 cup Peanut Butter 1 Egg >Preheat oven to 350 degrees. >Stir the ingredients together until blended. >Roll into 1” balls, then press down with the back of a fork and then press again from the other side to form the criss cross pattern on top. >Bake for 12 minutes. >Allow them cool on the tray for a couple of minutes before mov- ing to a wire rack to finish cooling.
