With 2014 swiftly knocking on our door an op-portunity to reflect on 2013 is upon us. Throughthe Grace of God we have been blessed to comethrough another year with family, friends, and ourbelief in our Savior.

The St. Nicholas Greek Orthodox Church in To-ronto had a very successful 2013 which would nothave been possible without the collaboration be-tween all volunteers and the newly elected coun-cil. This new council is young, eager, professional and came with an arsenal of newideas in order to make our community a betterone.

The new council put forth several motionsthroughout the year and accomplished them asthe year progressed. By reforming the finances ofthe church and having a clear understanding ofwhere the money from parishioners is going sev-eral renovations were seen throughout our templeof God. Firstly, the bathrooms in the basement ofthe church were renovated with financial contri-butions being made from the family of Frank To-pos. In addition, the stairwell to the second floorwas also painted providing a new and cleanerlook to the side entrance of the church. Moreover, the clergy office and council meeting rooms wereredone to create a professional atmosphere duringcouncil discussions.

One of the major events of 2013 happened awayfrom our heavenly grounds at the Arcadian Park“Kolokotronis” in Innisfil. Although rain initiallyput a damper on the day, the sun started to shineand the “Ted Mirkopoulos Soccer Match” featur-ing the Senior York Region Hellenics against theYoung York Region Hellenics occured. A gener-ous donation in the amount of $3000 was made tothe church from the Mirkopoulos Family and theYoung York Region Hellenics. This generosityhelped provide further financial support to ourgrowing community.

It is only fair to note, that all our initiatives andprograms have been successful this past year dueto the tireless, correct, dynamic and indispensableguidance of Fr. Dimitrios Antonopoulos, congre-gational head of our church. We wish him goodluck in his new parish as of 1st September 2013and welcome our newest congregational head ofour church Fr. Fanourio. We are please that hehas continued with the same enthusiasm to main-tain the upward trend of our parish.

At the beginning of October the First AnnualDance was held at the Metropolis Center whichwill act as the springboard to the 40th anniversary

of church and many more Annual Dances tocome. Next year will provide an opportunity toshowcase our history but more importantly anopportunity to give back to our members.

In addition to the above, there were family lun-cheons, continued participation by the Philop-toxos, and being invited to Vancouver for theMetropolis Conference. Monthly movie nightsand continued and opportunities to give back tothe community will be present throughout 2014.

Initiatives to look forward to in 2014 includeChoir Orchestra, new Newsletter, farmer’s mar-kets, trade shows, and the creation of a youthgroup.

Looking forward to next year, yours in Christ,

Tom LampropoulosPresident, St. Nicholas Greek Orthodox Church

Life of the Saint

Our Holy Father Nicholas, emulator of the Apostles and ardent imitator of the Lord Jesus Christ, appears as a living

pillar of the Church, zealous in defense of the faith and a model of pastoral solicitude for holy bishops. Through his

countless miracles on behalf of the poor, the abandoned, of those suffering injustice and of all who call upon his

fatherly protection, he has to this day shown himself “a good steward of the manifold grace of God” (I Peter 4:10).

Saint Nicholas was born in Patara in Lycia towards the end of the third

century, to Christian parents who had long been childless. From

infancy, he showed his love of virtue and his zeal for observing the

ordinances of the Church by abstaining from his mother’s breast on

Wednesdays and Fridays until the evening. Pious and inclined to

silence, he was educated in theology and, while still young, was

ordained priest by his uncle, Archbishop Nicholas. For many years,

vigil, fasting and prayer were the virtues he excelled in, but from the

time of his parents’ death and his giving away his inheritance to the

needy, the virtue of almsgiving became his greatest glory to God. He

regarded himself merely as the steward of goods which belonged to the

poor and took particular care to keep his good deeds secret, so as not to

lose the heavenly reward (cf. Matthew 6:7). On three occasions he

secretly left gold enough for the marriage portions of three maidens

whom their debt-ridden father intended to give up to prostitution.

When the man eventually discovered his good deed, Nicholas made

him promise, as he valued his salvation, to tell no one of it.

God recompensed him through the charismata and miracles for which he became renowned in the sight of men. On

pilgrimage to the Holy Places he twice by his prayer calmed the winds that imperiled the ship he was sailing in.

Soon after his return, an angel made known to the synod of bishops, meeting to elect a shepherd for the nearby city of

Myra, that they should choose Nicholas—which they did, to the joy of the people. During the last great persecution

under Diocletian and Maximian (c. 305), Saint Nicholas was thrown into prison where he continued to confirm his

spiritual flock in the faith. With the accession of Constantine, he was very zealous for the destruction of idolatrous

temples and for driving out the demons that inhabited them. Among the Fathers gathered at Nicaea in 325 for the first

Ecumenical Council, Nicholas was one of the leading champions of Orthodoxy against the impious heresy of Arius,

which had so swiftly sprung up to trouble and divide the holy Body of Christ.

He saved the city of Myra from famine by appearing to the master of a vessel laden with corn, and telling him to

discharge his cargo at the harbor there. Later the man of God saved the lives of three Roman officers unjustly accused

of conspiracy, by appearing in a dream to the Emperor Constantine and to he perfidious Prefect Avlavius. Full of

gratitude to the Saint for their deliverance, the three soldiers became monks.

SAINT N

ICHO

LASOn many other occasions after his death as

well as during his lifetime, Saint Nicholas

has miraculously assisted ships in distress

and people making voyages, and so is

venerated as the protector of all who sail the

seas. Thus, one day during a gale, he

appeared at the helm of a ship in distress

and brought it safely to port; and on another

occasion, he rescued a passenger who fell

overboard crying, “Saint Nicholas, help

me!” and at once found himself at home

surrounded by his astounded family.

For many years the holy Bishop was, as the

presence of Christ, a friend of man and

good shepherd to his faithful; there was no

misfortune that would not move him to

compassion, no injustice that he would not

redress, no discord that he would not allay.

Wherever he happened to be, his illumined

countenance and the atmosphere of radiant

peace surrounding him were instantly

recognizable. When he fell asleep in peace

his people lamented the loss of their pastor

and their providence, through whom they

had received so many benefits, but the

angels and Saints rejoiced with great joy to

receive the meek Nicholas among them. His

holy relics, placed in a church built in his

honor at Myra, were venerated by crowds of

pilgrims every year. One day the Devil,

unable to tolerate the glory that shone from

Saint Nicholas’ tomb, took the form of a

poor old woman and accosted some

pilgrims who were leaving for Myra,

lamenting that she was not able herself to

travel, and

entrusting them with a flask of oil for the

lamps that burned perpetually before the

shrine. During the voyage, Nicholas

appeared to the ship’s captain and told him

to throw the oil into the sea. No sooner

had he done so than the surface of the

water caught fire and swirled about in

blazing eddies to the terror of the

passengers, who gave thanks to God for

having saved the sanctuary through his

Saint. In 1087, after Myra had fallen to the

Saracens, the holy relics of Saint Nicholas

were transferred to Bari in the south of

Italy, accompanied by many miracles, and

there they are venerated to this day (cf.

May 9).

Saint Nicholas, with Saint George, is one

of the Saints most beloved by Christian

people in the East as well as in the West.

The churches dedicated to him are as

countless as the places and the faithful

named after him. He is especially revered

by the Russian people as the protector of

crops, and in the West he is regarded as

the patron of schoolchildren and of young

people in general.

Tri-ing for Humanity (T4H) is a simple group whoseultimate mission is to raise funds for as many charities aspossible. Every year this small group will choose onecharity and raise as much money as possible for them. In2012 the charity of choice was the SickKids Foundationand in 2013 the charity will be the Terry Fox Foundation.

T4H was founded by Theodore (Terry) Lampropoulos afterhe realized how much the sport of triathlon changed his life.He not only realized how fortunate he was to be able tocompete in these races but also realized that he would beable to use these races to raise awareness for charitiesaround the world.

The one aspect of this group that will remain constant isthat no profit is to be made. This group is about creatingchange in the world - not change in our pockets. Everystroke in the water, every revolution of the pedal, and everystride during a run is now officially helping create a positivefuture.

If you want to become a member of Tri-ing for Humanityplease visit www.http://tri4humanity.com. If you areinterested in becoming a contributing athlete pleasecontact us and we will get back to you within 24 hours.

Three Sisters Back to the

Beginning: Timeless Greek

Recipes Made Simple

By Betty, Eleni and Samantha

Bakopoulos

Winner: Best Mediterranean

Cookbook, Gourmand 2013

Three Sisters Back to the

Beginning is the much-

anticipated sequel to Three

Sisters Around the Greek

Table, the must-have Greek

cookbook of 2009 that

received numerous awards and

became a bestseller.  This

sequel is a sleek and elegant

book that unfolds and reads

like a gift.

In the hands of the Three

Greek Sisters, the classic

Mediterranean kitchen of

Greece becomes comforting,

exciting and achievable. Fast

and easy family favourites

such as savoury Shrimp

Saganaki, and Fiery Feta Dip,

are balanced with recipes that

slow you down, and make you

wait with anticipation like

comforting Homemade

Yogurt, succulent Lamb

Shanks, and paper-thin

Homemade Phyllo.  As with

their first book, the layout is

clean, the recipes are approachable

and the food photography is

beautiful.  New features include

vegetarian and gluten-free symbols

and a unique 'Time to Table' symbol

that identifies preparation, cook, and

rest times.

Once again the Three Greek Sisters

have dished up a poignant and

inspiring cookbook. This time

around, readers are taken on a

nostalgic journey that documents the

magic of childhood and the

connection between family, place,

and identity. Three Sisters Back to

the Beginning is both a cookbook

and an inspiring art-book to be

cherished.  Fans will not be

disappointed.

This classic cake brings together all theflavours found in baklava, but without thephyllo. Filled with walnuts, cinnamon, oranges and a hint of brandy, it makes fora perfect dessert during the holidays.

Serves 8Bake 350°F (180°C)

For the syrup:

1 cup water1 cup sugar2 tbsp freshly squeezed lemon juice1 strip of lemon rind1 cinnamon stick2 whole cloves

For the cake batter:

5 eggs, separated½ cup sugar2 tbsp Metaxa, or other brandy¼ cup freshly squeezed orange juice1 tbsp orange zest1½ cups walnuts½ cup breadcrumbs3 tsp baking powder2 tbsp all-purpose flour, sifted½ tsp ground cinnamon¼ tsp ground cloves¼ tsp salt

Butter for greasing bakewareOptional topping:¼ cup walnut crumbs (toasted if desired)Place the syrup ingredients in a small saucepan andbring to a boil over high heat.  Stir using a woodenspoon until the sugar has dissolved.  Reduce the heatto medium and maintain a low-boil for 5 minutes.  Remove from the heat and set aside to coolcompletely.

In the mixing bowl of a stand-mixer fitted with awhisk attachment add the egg-yolks, sugar andbrandy.   Whisk on medium-high speed until mixtureis smooth and light yellow in colour, about 2minutes.  On low speed add the orange juice, mix for30 seconds.  Transfer to a large bowl, add the orangezest and set wet mixture aside. In a food processor, add the walnuts and theremaining dry ingredients.  Process until the walnutsare crumbs.  Using a rubber spatula, fold the dryingredients into the wet mixture set aside earlier.  Set batter aside. In the mixing bowl of a stand-mixer fitted with awhisk attachment add the egg whites and whisk onmedium-high speed until stiff white peaks form. Using a rubber spatula, fold the whipped egg whitesinto the batter a third at a time until thoroughlyincorporated and no white streaks remain.

Pour batter into a buttered 9x9-inch (23x 23 cm)square baking pan and place in the middle of apreheated oven for 30 minutes, or until the cake isbrown and pulls away from the sides of the pan and aknife comes out clean when inserted into the centreof the cake.Leaving the warm cake in its pan, use a toothpick toprick the surface of cake in several spots.  Pour thecooled syrup over the surface of the cake a little bitat a time, waiting for the syrup to be absorbed inbetween each round.  Set cake aside to cool.  Cut ona diagonal to create diamond-shaped pieces andserve.

OPTIONAL: Add either toasted or untoastedwalnuts as a cake-topper.

Note: “Three Sisters Back to the Beginning”includes a Karidopita recipe that uses chocolate aswell.

St.Nicholas Greek School is operating more than 20 years..

Our School has been in full swing this year.

We are proud to see that our school is running smoothly and happy to be getting

positive feedback from students and parents.

We are open from September to the middle of June and run every Saturday from 9:00

a.m. to 1:00 p.m. except for Statutory Holidays, including Greek Orthodox Easter.

We offer classes from Junior Kindergarten to Grade 8.  A day in Greek school consists

of children getting an enriched education of the Greek Language as well as the culture

and history of Greece.  Children also have a half an hour of Greek Dancing taught by a

Dance teacher and a half an hour for lunch/recess.

In addition, we take part in the parades held on October 28th and March 25th. We do

this because we believe it is vital to get children involved in the Greek Community and

teach them the importance of these dates in our Greek history.

We hold two concerts (The Three Hierarchs and our End of the Year Concert) where

families can come watch their children perform poems and songs according to the

event.

St. Nicholas Greek School offers a fun and educational environment with friendly staff

that allows children to fully grasp the Greek language, culture and history of Greece.

CHRISTMAS FOOD
