Banana Nut Bread Makes 1 loaf

Ingredients 3 very ripe bananas, well mashed 2 eggs, well beaten 2 cups all-purpose flour 3/4 cup sugar 1 teaspoon baking soda 1 teaspoon salt 1/2 cup walnuts, coarsely chopped

Directions Preheat oven to 350° F.

Grease a 9” x 5” loaf pan.

With a hand mixer, combine the bananas and eggs together in a large bowl. Blend in the flour, sugar, baking soda, and salt. Add the walnuts, and stir well.

Transfer the batter to the prepared loaf pan, and bake for one hour or until a toothpick inserted in the center comes out clean. Turn out of the loaf pan onto a cooling rack.

Serve warm with butter.
