RHUBARB PIE AND WHIPPED CRÈME FRAÎCHE

RHUBARB JAM

1.5 l chopped rhubarb4 dl sugar½ teaspoon of balsamic vinegar Simmer the rhubarb in a kettle until the rhubarb softens and the sugar melts. Let cool. PIE CRUST

2 organic eggs3 dl sugar1.5 dl melted butter4 dl organic milk8 dl organic wheat fl our4 teaspoons of baking powder½ teaspoons of ground allspice Whip eggs and sugar into a foam. Add the melted butter and milk to the dough while continuously mixing. Work the fl our and allspice into the mixture with a spatula. Pour the dough into a sheet pan or pie mould. Spread the rhubarb jam evenly over the dough. Set the oven temperature at 175 degrees C and bake for 30-35 minutes. WHIPPED CRÈME FRAÎCHE

2 dl double cream1.5 dl sour cream or crème fraîche2 tablespoons of powdered sugar1 vanilla bean, scraped1 teaspoon of freeze-dried berry powder (lingonberry or cranberry) Mix together ingredients. Gently spoon the whipped topping on the pie. Make sure the pie is slightly cooled.
