My favorite aspect of the maga-zine has always been the articles as they allow readers to get a glimpse into the lives of the peo-ple within the industry. Be sure to check the articles in this issue by some of the great individuals from within our industry such as: exhibitor Jordan Cowan on page 192, a look behind the scenes at Nichols Cryo Genetics on page 54 and show mom Carolyn Wilson on page 48. Page 160 hosts a special article on our newest hall of fame inductees, the Caldwell Family and the Willoughby Family, that you won’t want to miss!

Owning the Showtimes magazine has opened my eyes to a new per-spective of

the livestock industry. While I have always attended shows, sales and livestock oriented events from the time I was young, my vantage point prior never surpassed that of my own livestock and involve-ment. Over the past six years, however, I have gained a new-found respect for not only what we do, but for the majority of live-stock enthusiasts themselves.

I am constantly on the go while at shows. In addition to tend-ing to my own cattle, I may also have to work the booth, put out magazines, take pictures, meet with someone, or take care of some other random task that pops up. All of this “running around” has given me the opportunity to witness some amazing people. Denver alone exposed me to a multitude of people that positively influenced not only my life, but allowed me to see the influence

Carolyn Wilson, I grew up in An-keny, Iowa and was the 2nd child in a family of 5 chil-

dren. My Dad was in the Army National Guard and is retired as a Lt. Colonel. My mother was/is a nurse. I did not grow up on a farm nor did I show cattle. That did not come along until I met my husband, Chris Wilson. We have 4 kids and 2 daughter in laws (J.D. & Tabby Schroder, David & Salome Schroder, Luke Schroder & Kaden Wilson) and have recently become grandpar-ents to twin grandsons (Teddy & Leo Schroder) on December 3, 2012. To say we are proud

parents and grandparents is an understatement. If you see me at a show, I will gladly show you pictures.

I spent a lot of time on my Dad’s childhood farm in Albia, Iowa, and remember going to the county fair there and watching

my cousins show calves. Boy, did I miss out on such a great opportunity to meet so many people from all walks of life in the cattle industry. When I met my husband, Chris Wilson, he introduced me to the show cattle industry and I was hooked. I can’t imagine a day go by with-out being around cattle. When we married I moved from the city to the country and haven’t ever gone back to the city (ex-cept to shop). Chris thought the best way to “teach” me the showing cattle trade, was to put me on the wash rack with 8 head of cattle at the Arkansas State Fair and told me that was the best way to get to know the

cattle and “break me in”. Yep, I fell for that. Since then I have learned so much from him about cattle and am very involved in all the operations at Trausch Farms, and I love every minute of it. I do everything from washing, drying, feeding, calving, picturing, maintaining Facebook pages and blogs and so much more.

All of my children have shown cattle at some point. Our 2 youngest sons, Luke Schroder and Kaden Wilson, have the love like no other for showing. I always look forward to the times spent in the show barn washing & drying 4H calves, talking, sing-ing and spending time together. Luke isn’t as involved in the showing these days as he works a full time job in Omaha, NE. Some days he will give me a call and tell me “it smells like a cattle show where I’m at”. I ask him what a cattle show smells like, and he says “woodchips and diesel” lol. That is so true.

Our days start very early, especially in the spring and summer, and end very late work-ing, exercising and choring show cattle. Our vacations are cattle shows or somehow in-volve cattle and that’s perfectly ok with us. I am so glad my children are able to have this opportunity to show cattle because nothing else is so family oriented as going to a cattle show. Spending time together doing some-thing we all love and seeing and making new friends from all over the country. I feel so blessed to be able to watch my kids show, watch their faces as they watch a new calf be born, bottle feeding a new little one or helping the calf get nursing. It’s more than the show ring, it’s the day to day love of taking care of the cattle and spending time teaching them the values and responsibility of doing what they enjoy doing. I am so very thankful our family has this opportuni-ty and so very blessed to have met so many wonderful people in the cattle industry. ▪

IOWA, yes I said IOWA - it’s where a couple had a dream and made it a true reality. In their retiring passed a legacy

and a dream onto a newly married couple who shared the same dream and passion.

Jay and Dani Steenhoek, Maxwell, Iowa, are no strang-ers to the cattle industry and their specialty putting up proven quality bovine semen. Jay and Dani Steenhoek are the owners of Nichols Cryo Genetics, Inc. now located in Maxwell, Iowa. This couple is “Just Living the Dream” a quote taken from the late Mar-vin Nichols. Marvin Nichols

was not only a renowned cattleman, but looked up to by so many in the cattle indus-try. While Jay was going to college at Iowa State Univer-sity, earning his Bachelor of Science in Agricultural Stud-ies, he did his intern and then soon after worked for Marvin Nichols at Nichols Cryo Genetics, Ankeny, Iowa, as a herdsman. In those 4 years and many years later, the friendship grew strong and the mentoring Marvin was giving to Jay, would be a treasured memory for years to come.

Jay and I met in 2004 at the Iowa State Fair, Des Moines, Iowa, at the infamous Stock-

man’s. You know they always say “The Iowa State Fair is the best state fair” and now you know why.

We married in the fall of 2005 and then were approached by Marvin and Janet Nichols a week after our wedding on the purchase of the Nichols beloved business. An on-site bovine semen collection facility located on the Nichols farmstead. Taking them up on the offer after talking it over with each other, family, and friends we decided to jump in with both feet. We both knew what was important to us and that was keeping the Nichols Cryo Genetics, Inc., name,


and the legacy of Marvin and Janet’s reputation of putting out proven quality semen, and a home of contented bulls.

There are many opportunities that get handed to you in a lifetime and we both felt this was a special one that we needed to take and RISK everything we had or should I say didn’t have.

Nichols Cryo Genetics as a whole is able to accept change and adapt to the many different trends, de-mands, and changes this industry has incurred. Jay and I purchased some land outside of Maxwell,

Iowa off of the 65/330 bypass. We built a new facility and have expanded our business, keeping in mind what our customers would want, and what would be the safest for our employees and bulls. We are extremely excited and proud of the new facility we’ve built together. We cor-dially invite any and all who want to tour the facilities.

The growth we’ve been experiencing is worth all the challenges. Keeping the line be-tween work and home so life doesn’t get blurred is important. But to be totally honest Jay and I are horrible about “just shutting it off” after business hours. We don’t work on “regular” business hours its 24/7 in this industry if someone is dropping a bull off at 3am were answering the phone and out there to help unload. Some


of our best discussions are over morning coffee or should a say morning shuffle between getting the kids, Chesney (6) and Coy (5) up and going, on the weekends, or at night after our kids are in bed. While it’s great that we can run our business 24/7 if need be. In the end, we know our priorities.

We don’t live a life of glitz and glam, we are very down to earth people, who are raising our family on a passion we share and that is Proven Quality Semen and taking care of our customer’s bulls. Our customers are valued each and ev-ery one. Our knowledgeable staff value and share that same passion along with superior customer service. It is a cornerstone to our family owned business.

We’re both extremely blessed to have such great loving parents that are an extremely BIG part of our business. I’m fortunate to have a mother in law who watches our children, and they are able to come up to the bull stud and visit. And a father and father in law who are willing to take the kids at phones call away and always willing to help out. They all have surpassed their duties already as wonderful grandparents. Jay and I feel that

it is extremely important for our children to be fully aware of what our business is. I’m sure it’ll lead to some real interesting parent/teacher conversations down the road.

It brings a smile to our face when we get to see and talk with all the hard working parents and bull owners out there. It really is a wonderful sight to see the junior exhibitors pulling around and purchasing calves that Nichols Cryo Genetics has had a hand in producing!!!

Keeping a Dream Alive

Clayton, who is the son of Tom and Sandy Calkins of Lakin, Kansas, passed away unexpectedly in August of 2011 at the age of 25.

While working in Florida, he suffered an allergic reaction to ant bites. During his childhood he showed at numerous swine and beef shows including area spring shows and jackpots, the Kansas State Fair, The Kansas Junior Livestock Show, The American Royal, and the National West-ern Livestock Show in Denver, Colorado. After Clayton graduated from high school he was very involved in helping his nieces and nephews begin their 4-H livestock projects.

Raising and showing livestock was his passion. It was his dream to one day host his own livestock show. Clayton’s family

and friends would like to keep this dream alive through the Clayton “Bud” Calkins Memorial Livestock Classic. The goal is to not only host a top-notch swine show along with a KCCA sanctioned beef show, but to use any money earned to provide a scholarship for select participants.

The 1st Annual Clayton “Bud” Calkins Memorial Livestock Classic was held in Clayton’s hometown of Lakin, Kansas on April 28th and 29th of 2012. We had a total of 81 exhibitors from Kansas, Col-orado, and Oklahoma, showing a total of 144 animals. We were able to give out over $5800 in prize money to these exhib-itors for their hard work and dedication to their 4-H and FFA projects. The Clay-ton “Bud” Calkins Memorial Livestock Classic was also able to award 3 of these youth with a $500 scholarship. Not bad for the first show!

The 2nd annual show will be held on April 27th and 28th, 2013 in Lakin, Kan-sas. A new addition to this year’s show is the chance for a participant to win the use of a 2013 Lonestar gooseneck trailer for one year. The winner will have the option to buy the trailer after the year is over. We would like to thank Cimarron Trailers, Supreme Show Supply, and Plain State Bank for making this possible.

This month’s tip will be a little off the wall. I was at a show this past weekend and a few little nit picky things happened that may be little to some, but it’s the little things that separate some from others. Where we were at the concrete was a little slick. It wasn’t like glass but it was slick and there were some cattle that were being led by that fell and struggled.

Fortunately nothing got hurt but those falls could have been prevented. When leading a calf over slick areas give them the lead and walk. Don’t try to slow down and try to force the calf to take it slow because all you will do is make it worse. Think of it like this, if you were to walk across a frozen pond you wouldn’t have any problem if you were to just walk in a straight line across the pond. But if you were wrestling with somebody across that same pond, pushing and pulling trying to get you to go at a certain speed or direction, do you think your footing would be the same? Then on top of it all, some come straight from the wash rack with water dripping and that only makes the situation on the floor worse. At least comb and get as much water out at the rack before leading across the concrete. Back off their head and give the calf their lead and just walk with ‘em. As soon as you start to strong arm them, they will lose their footing and then it’s hard to regain. All this goes for any slick area you might have to walk through. To some of you, you might think this is a little crazy but to others it might save getting a calf hurt.

Remember it’s that time of the year that a lot of you are get-ting in new calves for next year so be sure to get them start-ed on the right track with a good nutrition program. I highly recommend contacting a ShowRite dealer near you and feed the Throttle Up finishing feed to get ahead of the game. Don’t be left behind. See you down the road and always be sure to say “Hi” if ya see me at the show. Good luck in the upcoming show season!

People are like elevators; they eithertake you up, or they take you down. BY BRAD HENDERSON, CO

If you are reading The Showtimes Magazine you are, in this old guys opinion, one of the elect. You are a leader, not a follower. You either show livestock or have been involved in the livestock industry from your youth. You know the value of hard work, educa-tion, striving for a goal that is not easily attained and I’ll add one more very signif-

icant part of your background - you have a family or family member that cares deeply about what you do with your life and what you become. You are set up to be “upwardly mobile”. Which means you intend to to do something with your life, go to the places and do the hard things that fill your deams. You’ve had to make a lot of hard decisions to stay on track and, from a guy that’s several miles in front of you, there are a lot tougher decisions yet to come. We’ve discussed the little forks in the road that can lead you way off coarse if you make a wrong turn. And I’ve walked you through the analogy of people being like elevators.....they either take you up or they take you down... and you’re never standing still. You may think you are but the instant you stop climbing you start sliding back-wards. Remember, this principle applies to you and your pier group. If you hang with the wrong crowd, you will be associated with that crowd and you are far more likely to go where they are going. And let me tread into a touchy subject- this definately applies to those you date. Why would you waste your time or limit your future with someone that doesn’t have the same life goals you do? If your looking for some-one to spend your life with, that intends to conquer

a mountain, go find them and don’t wast your time, or risk your future with a loser. And if you are just passing the time with Mister or Miss Wrong, think what will happen when high acheiver Mister or Miss Right see you with that crowd and log you away in their minds as a loser as well? Life is about choices and making the right ones. Most of the time you do not ever get a second chance. Especially with people.

I’m going through a bit of a crisis right now. I’m watching my oldest son prepare to leave the home-stead and head off to college. He is now realizing all the decisions he’s made up to this point in life have impacted (either limited or expanded) the opportuni-ties for his future. College Admissions are now evalu-ating each decision he’s made and are backing up their opinions with college acceptance and scholarships. Say what you want about our parenting skills, but I’ve treated him the way my Dad treated me- I’ve always found it more important for a young man or woman to learn how to fail that it is to win. I’ve preferred there to be more failure learning experiences in my kid’s lives than success. I want them to not just feel the pain of falling down but learn how to grab those boot straps, stand back up, and get back in the game. My Dad told me, at a very young age, there are two words that do no appear in the Henderson dictionary - “quit” and “can’t”. Next time you see one of our kids ask them about how their Granddad feels about those two words. When they do win, they have earned it and they know the value of all the lessons, hard work, and failures it took to get there. That’s life folks.

WISE DECISIONS & WISE COUNSEL


Mathew 5:13-16 ”Ye are the salt of the earth: but if the salt have lost his savor wherewith shall it be salted? It is thenceforth good for nothing, but to be cast out, and to be trodden under foot of men. Ye are the light of the world. A city that is set on a hill cannot be hid. Neither do men light a candle, and put it under a bushel, but on a candlestick; and it giveth light unto all that are in the house. Let your light so shine before men, that they may see your good works, and glorify your Father which is in heaven.”

Mathew 7:12 (The Golden Rule) “Therefore all things what-soever ye would that men should do to you, do ye even so to them for this is the Law and the Prophets” Note: The Jewish Bible is broken into two pieces which they call the Torah (the Law) and the Prophets. Jesus Christ boiled them down to one sentance- (paraphrazing) “Do unto others as you would have done unto you”. Want to solve a lot of your problems? Live your life according to this wisdom and watch things change... all for the better.

We are made in the Image of God. Just like you - He is spirit (the Holy Spirit), He is body (manifested in His Son Jesus Christ) and He is mind (The Father). I can touch your arm, but I can’t touch your mind or your spirit. Just because I can’t physically touch your mind and spirit does not mean they aren’t there. I really don’t think anyone living this lifestyle will argue the existance of the spirit or mind. You see it around you ev-eryday. As their dad, it’s my job to teach our kids how to build three muscles - their bod-ies, their hearts, and their minds. I want you to think about your mind and what you need to fill it with and how to excercise it. There is wisdom and there is foolishness. Again, if you are reading this magazine you aren’t into foolishness, wasting your time, or not being successful. There is a very high likelyhood you don’t want a mediocre future---you want to do something great with your life. Before you read further please turn off the radio, set your phone down and turn off your com-puter and really focus on what you are about to read. These words were written by the smartest man that ever lived over 2,700 years ago. And they are even more true today:

“My son, if thou wilt receive my words and hide my commandments with thee; So that thou incline thine ear unto wisdom, and apply thine heart to understanding; Yea, if thou criest after knowledge, and liftest up thy voice for understanding; If thou seekest her as silver, and searchest for her as for hid trea-sures; Then shalt thou understand the fear of The Lord, and find the knowledge of God. For The Lord giveth wisdom, out of His mouth cometh knowledge and understand-ing. He layeth up sound wisdom for the righteous: He is a buckler to them that walk uprightly. He keepeth the paths of judgment, and preserveth the way of His saints. Then shalt thou understand righteousness, and judgment, and equity; yea, every good path. Discretion shall preserve thee, understand-ing shall keep thee: To deiver thee from the way of the evil man, from the man that spea-keth froward things; Who leave the paths of

uprightness, to walk in the ways of darkness; Who rejoice to do evil, and delight in the frowardness of the wicked. Whose ways are crooked, and they froward in their paths: To deliver thee from the strange woman, even from the stranger which flattereth with her words; Which forsaketh the guide of her youth, and forgetteth the covenant of her God. For her house inclineth unto death, and her paths unto the dead. None that go unto her return again, neither take they hold of the paths of life. That thou mayest walk in the way of good men, and keep the paths of the righteous. For the upright shall dwell in the land, and the perfect shall remain in it. But the wicked shall be cut off from the earth, and the trangressors shall be rooted out of it.” Proverbs chapter 2.

Seek wisdom and shun foolishness. Be careful who or what you spend your time on. Be aware how fast this time of your life will speed by and how the decisions you make now will impact your future. Be all God has given you the ability to be. Seek His face and His will... saddle up and ride to the top of that mountain. ■

I consider myself the luckiest 15 year old in America because I have been exposed to some of the greatest leaders and people that make up the livestock industry. Showing cat-tle is just one of many

experiences my family and I enjoy and I do not have to be involved in agriculture, but rather I get to be involved in an industry that I truly love. We live north of Manhattan, Kansas close to a small town called Flush, which is located in the mid-dle of Pott. County. Of course my friends find humor in this and they sometimes tell me it explains my unique sense of humor. My moth-er, Kandi teaches Kindergarten at Westmoreland Elementary. She is the glue to the family because not only does she have to manage a group of young energetic students all day, but when she gets home she fixes our meals, does the laundry, and sometimes she has to take care of the livestock when the rest of us are gone. Thank God she is inde-pendent because she also serves as the plumber, electrician, and takes care of the general maintenance

while dad is gone. My dad is the livestock judging team coach at Kansas State University where he has coached teams to five national championships and seven reserves. He has judged livestock shows in 41 states, Canada, Mexico, and South America. My dad has in-troduced me to some of the great breeders of livestock and promi-nent leaders in agriculture. Some of my best friends are not my class-mates at Rock Creek High School, but many of the students that have been on my dads livestock judging teams. I am very thankful for all the help that my friends have given me and the wisdom that I have ac-quired from my mentors. My older brother Shane is a Freshman at Kansas State University and major-ing in Animal Sciences and Indus-try. His interest is in production agriculture and he would like to return to the family farm and help our grandparents upon graduation.

My family owns a small ranch and we raise simmental seedstock. We have an annual heifer sale in the Fall and a bull sale in the Spring. I enjoy the daily routine that is required on our ranch but

always try to find time to hunt and fish. I enjoy all types of sports but have a true passion for baseball and hope to play college baseball someday. During the summer, my club baseball team will play 70 plus games around the country. Most nights we get home at midnight and still have to finish chores by rinsing and turning steers out of the cooler. I learned at a young age that success requires hard work, dedication, and a little bit of luck.

Showing livestock has been a part of me since I was six years old. I enjoy the responsibility and the daily commitment it takes to be prepared for a show. I enjoy the work that is done at home as much as I do the banner, because I know that all the hard work has paid off. Besides showing cattle, I also enjoy showing hogs and sheep.

The 2012 Kansas State Fair will always be memorable because I exhibited the Grand Champion Steer, Supreme Champion Breed-ing Heifer, Supreme Champion Breeding Ewe, and the Reserve Supreme Champion Breeding Gilt. My livestock projects are truly a

family activity where we work together rinsing, exercising, and feeding all the animals. Because of my parents busy schedule the live-stock shows and the preparation is one of the few times we are able to spend time and work together as a family. All this post state fair success was possible thanks to my friends Jim Nelssen, Randal Von Krosigk, Mike Hartman, and ev-eryone at Bonham show cattle.

On Thursday, January 24, 2013 a life time dream came true. My steer "Trevor" was selected as the Grand Champion Market Steer at the National Western Stock Show. I have attended most all major livestock shows in the United States and without a doubt the Denver Stock Show is my favorite. It is exciting to me because of the atmosphere in the yards and on the hill, the livestock producers, show officials, and the

tradition of the stock show. We thought "Trevor" was pretty good but like all shows so many things have to come together to make it happen. The first hurdle was "Trevor's" personality which he developed a bad habit being able to get away from me. Secondly, I worried about how he would act at the show, if he would eat, drink, and if we would be able to keep him looking as good as he did at home. Finally, just because I liked "Trevor", it did not mean the three judges would appreciate him as much as I did. I will never forget the thrilling experience of the grand drive and that special moment when judge Jack Ward selected "Trevor" as the Grand Champion. It's hard to explain the emotions, feelings, and excitement that raced through my body, but it is an experience that I will always cherish. Even today a month after the show my family and I talk

about the excitement and still can't believe what happened. So many things were special that week, not only the excitement associated with winning, but the trip to the Brown Palace, meeting all the buy-ers, the interviews with the media, and the enthusiasm generated at the sale will be life long memories for myself and my family.

I want to thank everyone who is associated with the Junior Market Beef show at the National Western. Because of their hard work all year long they do make dreams come true. A big thank you to Steve Bonham, Travis,Little Bob, Ryan, and my good friend Baylor for all their help and guidance, and of course my parents who have given me the opportunity to do the things I have such a passion for. ▪

I am 12 yrs. old living on a ranch that straddles New Mexico & Texas. My dad Matt is a corn & alfalfa farmer, my mom Eliza-beth, is in charge of raising our herd of show goats. I nickname my mom Effie, after the character

“Effie Trinket” from my favorite movie; Hunger Games. Effie is the one who takes care of all the important details. She has a keen ability to get things done and seems to know what our family and livestock need to be successful at stock shows. My mom was one of the first to import Boer goats into the U.S. and is very passionate about them. My dad is in charge of mixing feed and adjusting rations as the goats grow. My little brother Truman helps me all year walking, bracing, & feeding. I counted 24 banners on my wall & Truman was there to hold every one of them. I can’t wait to return the support he has given me as this will be his first year to show. I have been exhibiting market goats for 4 yrs. I have won my state fair 3 times and American Royal in 2011. Despite the number of times I have won a title, each time feels like the first. When the last show ends for the season, the work begins again. New babies are born, and it is like starting from scratch. When I walk into the ring, my goal isn’t about winning that day. My aim is believing in myself and just enjoy what I love doing with my family.

Usually I am not nervous before a show because being nervous is not doing either me or my goat any favors. When you stay calm, the goat will work with you because animals can sense human emotion. Just like a professional athlete, my goats are being prepared for the show months in advance. A runner cannot win a marathon if he suddenly decided to get serious about training the week before. Winning the National Western with my 94lb. goat “Frank the Tank” is an honor. He was raised by Hugh & Ann Schafer of Garden City, TX. This is the first time I have won a ti-tle with another breeders goat other than our own. My mom always reminds me that we owe it to the breeders in taking their animals home to give 110% effort because they put a lot of their own heart into creating that animal before they trusted it with us. Of course winning the National Western is an awesome way to start out my new year! The junior livestock sale at the National Western is the best I have ever had privilege of selling my animals. I am very thankful to all the people that make stock shows possible for youth to learn and grow from. My long term goal is to graduate Valedictorian and go to college at Texas Tech. I thank all those from the show volunteers, judges, breeders, the buyers, and especially our families who support agriculture students. I read a book that former first Lady Bird Johnson said; Children are likely to live up to what you believe in them. ▪

My name is Stock Martin. I am 12 years old, and a 6th grader at Vega Elementary School. I live in Here-ford, Texas, with my parents, Brian and Sherri Martin, and my young-er sister, Saige. I enjoy hanging out with my friends and family, and playing sports. Most of all, I enjoy hanging out in the barn.

I started showing cattle when I was 5 years old. I showed the Grand Champion Miniature Hereford Steer in Denver in 2007. Throughout the years, I’ve won several prospect shows in Texas including the Belt Buckle Bonanza, Golden Spread Classic and Pan-handle Parade of Breeds - to name

a few. I showed the Reserve Grand Champion Steer at the 2012 Fort Worth Stock Show, and the Grand Champion Steer at the 2012 State Fair of Texas.

And to the biggest win of all: The Grand Champion Steer at the 2013 Fort Worth Stock Show. My 1329 lb Crossbred steer, Lunchbox, won it all! This win means so much to my family because we raised my steer. He is out of our #105 Irish Whiskey Donor cow. We’ve always wanted to win a major show with one of our own steers. I was so ex-cited to win – it’s a feeling like no other. It was Saige’s 10th birthday too. So, we got to celebrate big. It’s a big win that I will never forget.

There are so many people that have helped me to have a success-ful show career. And I am grateful to all of them. It means so much to me to be part of a winning team. See ya at the next show! ▪

Introducing Dan Willoughby

Dan Willoughby was born on a small farm in Westfield, Indiana, where the family raised beef production

cattle and 4-H calves, along with his grandfather’s standard bred horses. It was there that family chores turned into a lifelong passion for Dan. Even as a little boy the barn was the location Dan preferred best. In high school,

with the direction of his agriculture teacher, Alan Myers, Dan learned to channel his competitive spirit and interest in livestock into what has become a career in an industry he loves. Little did he know at the time that his ever growing interest in the sheep market would soon become the launching pad for what was to become Willoughby Sales, Caldwell Willoughby Sales, The Pig Planet Auctions and the-HorseAuction.com.

After graduating from Purdue University Dan married Carol Hamer Willoughby. During these early years and what Carol calls her “introduction to motherhood” the Willoughby’s traveled the country with some of the best livestock youth in the country; buying, selling, marketing and showing livestock on local and national levels. Then in 1993 the Willoughby’s were truly blessed with the addi-tion of Justin Daniel Willoughby. “It’s funny to think back at how time truly flies, says Carol, from Justin and his entourage of ‘big brothers and sisters’, to his final year of 4-H where he had transformed into the mentor for the next generation of show youth. Four decades latter these individuals are still who we count among our family.” Justin is now a fresh-man at Indiana University studying marketing and communications.

In 1995, Dan and Carol decided to take a leap

of faith and take the passion that had once began as a hobby, and turn it into a business. Dan attended Kenneth Gregg’s auctioneers’ school in Lubbock, Texas. After two years hosting Private Treaty sales Dan decided to take things to the next level. In 1997, the first Premier 10 and Midwest Elite Show and Sale were held; now in its 16th season this sale has become the Nation’s Largest Sheep Prospect weekend.

Dan has always viewed the livestock industry from a national perspective and recognized the need for better contacts between the producers and consumers. In 2005, on a cross country drive back from Oklahoma, Willoughby Online Sales was born. “We (Mike Crowder, Matthew Hayes and I) had just left the live sale of long time clients Deb and Brad Ott, Vince McGolden, and Mike Hindman and were headed down the I-44 corridor when we started discussing the best means of marketing these animals to a broad based audience. A few hours and many miles latter these same three clients had signed on to be the first to use this new platform. And the rest as they say is history!” Dan adds, “We are truly grateful to those who took a leap of faith in this platform as this facet of our organization has grown exponentially over the past 8 years.”

success online sales were bringing to the sheep Industry Dan and longtime friend Todd Caldwell joined forces in 2011 to create Caldwell Willoughby Online Cattle Sales. Neither of these men could even imagine the sky rocketing growth that was about to take place when they set out on this joint venture. Dan recalls a conver-sation that he had with Todd in March of 2011 about the possibility of booking 10-15 club calf sales for the fall of 2011. Conversation turned to action as they made appointments with several breeders in South Dakota and Indiana. In April of that year they made the trek to South Dakota where Todd’s salesmanship and business connections helped to solidify the interest in the online sale platform for the cattle industry. They turned these same skills to the home front where they made it a point to visit with and secure interest from as many Indiana breeders as possible. Early adopter Jeff Miller recalls, “It was a very foreign concept to me, sell-ing cattle over the Internet, but I trusted these men and thought, why not?” Mill-er added that it turned out to be a wise investment on his part and a great way to get calves into great show families’ hands. My average went up over $1000 per head from 2011-12, you can’t beat that!” Miller Show cattle can also claim the 2012 Grand Champion Steer at the Indiana State Fair that sold through his fall CW Cattle on-line sale.

Introducing Todd Caldwell

Todd has been a part of the cattle industry his entire life. He was first intro-duced to livestock through weekly trips to the stockyards with his grandfather Alvi. He would look forward to those trips each week so that he could learn the “ropes” and would study how to find good quality

cattle.

This education of evaluating livestock continued thru out his high school years. He was involved with both 4-H and FFA. In fact his FFA judging team was the State Champions in 1985. In addition, his fam-ily spent countless hours and many miles traveling thru the U.S. showing cattle. During those years he learned the value of hard work and dedication will help you succeed in achieving your goals. It was this background that helped him con-tinue on to Purdue to study Agriculture education. He was a member of the AGR house, the Purdue Judging Team, and was chairman of the Purdue AGR Steer Show for four years.

After College, Todd started teaching at his high school under his mentor, Rex Smith in the ag department. He also started a supply business and would travel to many shows with the dual purpose of to showing livestock and selling equip-ment. He continued this for several years before moving to Illinois and working for Jeff Adams Show steers.

It was during this time that he met his wife Kim. She too had been raised in a livestock family, showing Angus Cattle in Illinois. After they were married he moved to his current location in Elm-wood, and started Caldwell Show Cat-tle. In 1994 Todd had his first cattle sale under his new business with 20 steers that sold to livestock youth across several neighboring states. Since that time, Todd has expanded his sales to over 200 head of cattle sold each year to over 15 states across the country. It has been during those past 17 years that he has assisted countless young people with finding live-stock projects, showing them the ropes,

and helping them to exhibit. Most importantly thru out this time he has had the opportunity to meet and help some the most dedicated livestock families in the business.

These experiences have shaped Todd’s desire to raise his own children in the livestock community.

Todd and Kim have three children, Maddison who is 15, Olivia who is 10 and Cole who is 7. All of their children are actively involved with livestock. In 2007, Grant Weisinger convinced Maddison that she needed to show a pig. Maddison immediately fell in love with the project. Todd soon became obsessed with shopping for pigs online. This took him just one phone call away from creating history!

Today what started out with a 15-sale goal has turned into 300+ sales annually. What once was a two-person shop has grown to include 6 full time employees, two cattle specialists and a multitude of seasonal employees. “It’s been great to be a part of such a successful operation,” says, Brett Bowman, Cattle Specialist, “We’re extremely busy, but hey that’s a good thing!”

Today, Willoughby Sales and its subsidiaries, is a livestock marketing and promotion company, whose area of expertise is the promotion and marketing of “specialty” livestock, specifically breeding and show

animals including –Cattle, Sheep, Goats and Hogs and Performance Horses. “The market has continued to adapt and change, says Willoughby. People have grown very comfortable with the format and seem to enjoy shopping from the comfort of their own home. When this all began we simply wanted to continue being engaged in the show animal industry. At the time, I am not sure we could even have imagined how much the company would help shape and impact the livestock and show animal industry” Through his 26+ years of experience, Willoughby has developed a “sixth sense” for promotion and what “moves” people.

Kent Habeger is remembered as a judge, cattlemen and friend to many in our industry. Kent was fatally injured in a farm accident on December 8, 2008. He will be greatly missed.

For the past 20 years, he has sold semen on the most popular bulls in the business, and each year continues to raise the bar with his new genetics. From his first bull (a Chi-cross named Jackpot) to bulls like Heat Wave, Who Made Who, Ali, and many many more –Lautner bulls are household names amongst all club calf enthusiasts.

Jim Williams is one of the nation’s biggest supporters of junior livestock programs. He’s done it all... from being a showman, breeder, judge, and show dad. As one of the nation’s best loved junior show judges for steers, heifers and open shows, he has judged at every major show in the U.S. and 27 different state fairs. Under his management, cattle bred by V8 Ranch have won 33 Inter-national Championships and 36 National Champions in the Brahman breed. His family’s Shorthorn herd (V8 Shorthorns) has raised champions at Denver, Louisville, Kansas City, and many state fairs.

Wayne Colette is known and recognized by his voice. Many of you listened to him while visiting the National West-ern Stock Show in Denver, Colorado. Others may recog-nize his voice at the Colorado State Fair in Pueblo, Colorado or even the American Royal in Kansas City, Missouri. He has announced many classes, witnessed numerous champi-ons and has demonstrated his announcing ability since 1960. According to Wayne, “It has been a very enjoyable time.”

Steve Bonham is recognized as an industry leader when it comes to marketing live-stock—whether in the pasture or on the auction block. His passion for the club calf indus-try, specifically, is infectious and has inspired thousands of young people across the coun-try for over 25 years. If you buy show steers or heifers, chances are you have been to Newcastle, Oklahoma, where Steve has resided since 1986. Having one of the quickest eyes for livestock of anyone you will meet, Steve has se-lected and marketed hundreds of show ring champions and sale ring elites. His customers have won steer shows in virtu-ally all 48 contiguous states.

Christy Collins is one of the leading cattle- women in the club calf and composite busi-ness. She pioneered modern day livestock photography by being one of the first profes-sional photographers to offer her signature style of photog-raphy in the club calf business in the early 1990s, which has since been imitated by many. Currently, as the owner of Collins Cattle Services, she continues to serve the industry by being one of the leading sale management firms in the business, and the only one owned and operated solely by a female. Her first sale, The Exposure Sale, started in 1997, is still regarded as the leading female sale of it’s kind.

Just mention the name Stier-walt to anyone involved in the show cattle industry, and they would know who you were talking about. From show clinics, success, and his many endorsements with popular brands such as Purina Show Chow, eZall, Andis, and most recently Weaver Leather, Kirk Stierwalt is very influential in taking the show industry to a whole new level. As a cattle fitter, educator, and judge, Kirk has many years of experi-ence in the show cattle in-dustry. He has won numerous awards at some of the most prestigious national and inter-national shows. Kirk actively participates in 4-H and FFA programs and conducts clinics, seminars and demonstrations for young people and cattle families. Kirk and his wife, Juli, began doing clinics at their house in 1987. While his success and accomplishments are impressive, it is Kirk Stier-walt’s character that has made him a clear choice for the Hall of Fame.

Randy Daniel manages the family ranch, Partisover pro-nounced “Party’s Over” Ranch in Colbert, Georgia. Randy, along with his wife Beth and father Dan, handle the day to day management. He has judged Junior Nationals for twelve breeds along with nearly every major show in the country. Steer shows Randy has judged include: Houston, Ft. Worth, San Antonio, Dal-las, Austin, Oklahoma City, Tulsa and many others.

All champions come from dif-ferent states, barns, exhibitors, species, breeds, and producers. So what is the one thing that they all have in common? Sul-livan Supply. In the mid 80’s, no one would have predicted that the then manager of Little Mondeaux Limousin’s show cattle in Genoa, Nevada would one day create an empire that changed the livestock show industry forever. In addition to Sullivan Supply, John also owns Sullivan Farms and is know for their high quality Shorthorn cattle. John Sulli-van’s motto of “progressive, aggressive, and family orient-ed,” has made Sullivan Supply the company it is today.

It is the passion and time spent bettering the show cattle industry that titles our April 2011 inductee of the Hall of Fame. Although Bob May was born, raised, and resides in Mineral Point, Wisconsin, the impact of his dedication to cattle and youth has reached all corners of the United States. He enjoys selling calves and working with kids – passing on his knowledge and enthusiasm for cattle at the same token of forming friendships and memories. Bob finds working with gen-erations of families extremely rewarding. Over the years, he has been blessed to be a part of numerous champions, but he does not seem to be one to keep a running record. It is with great honor that The Showtimes inducts Bob May into the Hall of Fame.

The Schnoor Sisters are known nationwide for showing quality cattle and their excellent showmanship skills. With champions from Denver to Kansas City and the numerous ways they’ve given back over the years, they were and easy choice for The Showtimes Hall of Fame.

It takes a special individual to not only judge livestock, but judge livestock in a manner that earns them a respect from competitors, breeders, and show officials. The Showtimes Magazine’s August 2011 Hall of Fame Inductee is a live-stock judging coach, judge, and producer that has impact-ed the livestock industry im-mensely through his teaching, evaluation of livestock, and breeding genetics. Dan Hoge is one of the most well known livestock judges of all time. His passion for the industry is evident when he judges shows whether they are at the county, state, or national level.


Prior to 1899, livestock and horse shows in the Kansas City area were held irregular-ly, usually only when conve-nient or need arose. However, in 1899, the first of a series of livestock shows was held. The event was to continue annually until now and develop into one of the most outstanding events of its kind in the world, the American Royal Livestock and Horse Show. Not only has it provided the livestock indus-try, producers, and exhibitors with a show to promote and show off their livestock, it has overcome numerous obstacles and grown to be arguably one of the most prestigious live-stock shows today!

The Showtimes Magazine is proud to induct the Bau-man Family into the Hall of Fame. John, Bruce & Brett along with their families have continued to carry on their livestock heritage. From pro-ducing cattle, hogs and sheep to branching out and providing quality livestock photography and Sullivan Show Supplies through their current endeav-ors, the Bauman Family is a prime example of what the livestock industry is all about.

As many in the cattle livestock industry know, Mark’s name has been seen and continues to be seen on many of the top op-eration’s photographs through-out the country. Mark Sneed is a household name in the cattle industry we all know and love, whether people know him personally or have just seen his name under a beautiful photograph, he is recognized. His work is tremendous and he takes great pride in putting out the best there is in livestock marketing through photo-graphs and now videos.

Matt Lautner is an obvious choice for our Sire Edition Hall of Fame Inductee. With over 35 top club calf sires including the dominant Mo-nopoly, the industry’s leading blog, Matt Lautner Cattle TV, and cattle sales, Matt Lautner has greatly impacted today’s show cattle industry. His bulls have sired champions nation wide. Between September 1 - December 1, 2011, 165 Monopoly sired cattle alone grossed over 2 million dollars! His marketing ability is second to none and is single handedly changing the live-stock industry. Mike Hartman was born and raised in the purebred business and active in 4-H and FFA as a youngster. He has spent his entire life breeding, promoting and marketing livestock. Mike has experience with all breeds. He, along with his dad and brother, were involved in the Charolais, Angus and Salers breeds for years and he has been involved with the Maine-Anjou breed since the breed’s early importation into North America. Recently, Harman has been making a mark in the Simmental breed. Mike owns and operates Hartman Cattle Company in Tecumseh, Nebraska. The July 2012 Showtime’s Hall of Fame Inductees have not only exhibited and produced nu-merous champions of various breeds, they have also given back to the industry by serving on national junior boards, hosting sales, and lending a hand to fellow exhibitors. James and Nick Sullivan of Dunlap, Iowa have without question become a familiar face at the photo back-drop, in the ring, or in the show barn. It requires a lot of hard work, skill, and overall good luck to achieve success within the show ring; therefore, when not only an individual, but a family, finds themselves in the winner’s circle on multiple occasions over multiple years, it is something we can and should all commend.

Dave Guyer of Robinson, Illinois is the September 2012 Inductee! From raising and selling cattle, The Chosen Few sale, feed ambassador, to Natural Solutions for Livestock, Dave has greatly impacted our industry! According to Dave, “I enjoy spending time with the business, the people, and especially the kids, but all my life and all the decisions I have made for all these years have been for one reason... my fam-ily.” Congratulations to Dave Guyer!

In 2000 Bo became the sales-man for the scale side of W-W Livestock Systems quickly learning the livestock equip-ment/ rodeo side of the busi-ness and branching out to new horizons. He started in Houston, and San Antonio, and Den-ver’s National Western Stock Show and Rodeo, and rapidly branched out to Colorado State Fair, Aksarban River City Round-up in Omaha, Nebraska, American Royal in Kansas City, Missouri, and many others. Bo can be found weighing in livestock at many of today’s national shows!

Over the last 30 years, Jack has been fortunate to judge livestock shows throughout the US and in 4 different foreign countries on the local, state and national level. He could proba-bly count on my hands the num-ber of friends he has that are not part of the livestock business. He enjoy judging both market and breeding shows and he especially enjoy judging junior shows. He was most recently apart of the three judge panel that judged the 2013 National Western Market Beef Show.

The Cal Poly began hosting Western Bonanza in 1984, since that time the show has undergone many changes and tremendous growth. Western Bonan-za began as a concept for a senior project of Mark Reichle’s, and it was the first jackpot of its kind to hit California. Western Bonanza humbly began as a steer and heifer show with no more than 100 entries. But over the years, as its growth continues to exceed expectations sheep, goats and swine have been incor-porated into the show.

Since 1984, every February exhibitors ranging from 9 to 21 are invited to participate in Western Bo-nanza. Two Western Bonanza shows took place at the Santa Barbara County Fairgrounds in Santa Maria. But the Paso Robles Event Center, formerly known as the Mid-State Fairgrounds, has provided hundreds of exhibitors the opportunity to show and compete with their project animals, in hopes to earn a buckle from the show hailed as “Best in the West”.

Since 1990, the show has evolved into a com-pletely student directed livestock jackpot, by those students enrolled in Cal Poly’s ASCI 212 (Fair Man-agement) Class. The class is structured into com-mittees chaired by students. Each committee divides the planning and work of the show. The committees range from Beef, Sheep and Goats, Swine, Awards, Merchandise, Marketing, and Entries to Facilities and Special Events, Media and Public Relations. For the past several years, additional enterprise courses have been added prior to and following the show to pre-pare and wrap-up the event.

articleIn light of Western Bonanza’s 25th anniversary,

an honorary 25th Celebration Committee was added to direct the festivities planned for the weekend and the same will be done in 2014 as the 30th anniversary will take place. While the students running the show are essential, there is another vital component to the show’s success, the faculty advisors. The entire event was once overseen by Mike Hall, until 1997 when Wendy Hall assumed the responsibility. The pair shared in Western Bonanza’s success for decades and welcomed Jacky Eshelby in 2010 with the addition of Megan Silcott in 2011. Wendy and Mike Hall retired in 2012 and their legacy at Cal Poly continues in sev-eral avenues, Bonanza included.

In 1996 the sheep show was added to the event, followed by the hog show in 2001. In 2003 the stu-dents in Western Bonanza set a goal to complete a web page, and were successful in their technological advancements. The show saw an exciting increase in entries because of the new information available at www.weternbonanza.calpoly.edu. In 2005 the show underwent another change in format to fit an A and B show, with the idea of disbursing even more awards to the competing youth. Bonanza saw the rise of a Barrow Derby and Bred and Owned Breeding Heif-er classes. In 2013, Western Bonanza worked with ShoWorks software and implemented online entries. The new program worked extremely well and gives students another resume builder with working knowl-edge of a top-industry program. While the show changes a bit each year, its quantity of entries and exhibitors are consistent. The show has grown into a major livestock event with more than 500 exhibitors coming to compete, and over 2,000 total head entered on record years. The total payout benefiting these exhibitors exceeds $35, 000 each year on top of the buckles, banners, backpacks and other awards. ▪

We are already making big plans for the 2014 30th Anniversary Celebration of Cal Poly’s Western Bonanza Junior Livestock Show. They are deter-mined to once again present a well managed show that highlights the educational value of a livestock event. As we have learned throughout the past four months whenever something such as this occurs in the cattle business we are reminded of how grateful we are to have been born into this industry. As we’ve said many times in recent months, we always knew how much we loved the boys and how they changed our lives, but what hadn’t occurred to us was how much everyone else loved Jared and Justin and how many lives those boys impacted in such a short amount of time. Th e past few weeks many thousands of dollars have been raised through auctions, donations and various other fundraisers… and still counting that will help us to not only honor the wonderful young men that they had become but to help other young people to achieve their dreams that are so similar to those of Jared and Justin’s. Th e overwhelming support that has been provided by this industry has humbled us, yet challenged us to look forward to turning something that is so negative in our lives into something positive for others in the future. Currently, we have established a scholarship that will be designed by us, the Bedwell Family, and administrated through the American Shorthorn Foundation in honor of Jared and Justin Bedwell. Please know that in addition to the Shorthorn Scholarship, we are moving forward through the Progressive Spirit foundation in Fairview, Ok to determine where memorial funds may be used to assist youth involved in agriculture. We have full appreciation of the responsibility that we have to not only honor our boys but to help give a positive outlook on agriculture and aid the youth of today for whatever they wish to do in the future and we are grateful for the memorials that have given us the opportunity to do so. Th ere will always be a hole in our hearts that the loss of Jared and Justin has left us, however with the love and support of this industry, our friends, and our extended family that hole that felt so tremendous is beginning to heal. Without the help that our family has received from everyone, there is no way that we would’ve been able to endure these tragedies alone. An exhibitor who has an enthusiasm for the livestock industry that is

evident within the showring, as a producer, and as a part of an active

cattle family. BY JORDAN COWAN, IA

You might not think that much can happen in agriculture or farming when you are sand-wiched in between Chicago and Milwaukee, but my family

makes it happen.

My brothers, Cody and Houston, and I grew up on a farm in southeastern Wisconsin, 30 minutes south of Milwaukee and an hour north of Chicago, yet we lived a world apart from these metropolitan areas and most of our friends had no idea of what our days consist-ed. Our friends spent their days hanging out in town with their buddies; we spent our days walking pigs, getting calves in the cooler, and baling hay. We wouldn’t trade the experienc-es we’ve had for anything.

There is a sign above our kitchen door. It’s a great quote from Benjamin Franklin and it is a motto that my family lives by-it says: “We must all hang together, or assuredly, we shall all hang separately.”

My brothers and I have been surrounded by hard-working down to earth people our entire lives. I grew up where respect is earned and your reputation is everything. I learned early on that dad didn’t have normal working hours and that living things are counting on you to

take care of them and protect them. Chores came before friends or sports and they had better be done the right way or there were consequences for a job that was rushed.

The first national show I remember going to was the Kansas City Royal. My family owned Countess 115H, the mother of Cowan’s Ali, with DeRouchey Cattle Company and she was just picked Reserve Maine Heifer at the American Royal. My father ran up to the stands and asked if my brother Cody and I, wanted to be in the picture. I jumped at the chance and went down to the picture but my brother Cody stayed behind with my Mom and little brother, Houston. The three of us were too young to understand the importance of the picture that day, but as we grew older and started to show, we would constantly see that picture of 115H at the American Royal in show magazines and sale catalogs. We al-ways have given my brother Cody a hard time about missing out on the chance to be in one of the most famous championship pictures the American Royal has ever taken. For me, it was the start of my showing career.

I showed pigs and calves for my first few years in 4H, but then something changed. I was involved in sports and sports and show-ing don’t mix in our community. You have to choose one or the other, and I chose showing.

My parents promised me that if I chose cattle, they would put their energy into cattle as well. So I put sports in the past and in December 2008, my father and I flew down to Stillwater Oklahoma to the Exposure XI sale where we bought my first show heifer “Halle.” That year she was the Reserve Champion Mainetainer at the WI State Fair and 2009 World Beef Expo. It was my first time winning at a cattle show and it was an experience I would never forget. It was also an experience that I couldn’t get enough of, I wanted to show more and I wanted to win. The Exposure Sale has become a family tradition- a father-son trip. Each of us has a special show heifer from that sale and great memories with my dad to go along with those heifers.

The amount of work, time, and arguments that my brothers and I have in the barn throughout the years has made us better brothers and competitors. We all want to win and all have our favorite show heifers, but in the end, we have won and we have lost as brothers, and as a family. Our parents have never let us forget that, and I think that is why our family has been so successful whether it’s showing cattle, our business, or in school. Failure has never been an option in our house.

Over the last 7 years, our family has increased our herd

with Maine genetics from around the country and we have grown from 60 to 110 cows. My brothers and I also started buying groups of heif-ers and started our own herd together. This fall, my family will be having our first annual calf sale. It will take all of us working together to make the sale successful and I know we will, because we have never failed as a family and we never will.

Looking back at all the mem-ories of my career in showing cattle and hogs with my family in Burlington, Wisconsin some memories I won’t ever forget are road trips eating “Cattle Cones” otherwise known as McDonald’s ice cream, the six birthdays we spent in South Dakota at DeRouchey’s cat-tle sale in February, and the many friends we made at the countless national and state shows over the years. Show-ing is responsible for some of the very best memories I have growing up. When I’m older and have a family of my own, I want my kids to experience the same experiences and long lasting friendships I have found showing cattle because they are some of the best memories and experiences I’ve ever had. ▪

The Ohio Cattlemen’s Associa-tion BEST Program for youth ages 8-21 years, along with generous donors, raised more than $13,000, surpassing the $8,000 goal, to benefit local youth through Make-A-Wish. Fifty youth led their decorated show calves before a panel of

judges at the BEST Celebrity Showdown at the Clark County Cattle Battle on February 8, 2013, in Spring-field, Ohio.

The showdown kicked off with the Pledge of Alle-giance led by Honorary Wish Child Alexis. Judging the show were NFL players and Ohio natives Justin Boren, offensive lineman for the Denver Broncos; Jim Cordle, offensive lineman for the New York Giants; and former OSU Buckeye linebacker, Zach Boren. Participants were encouraged to dress up their calves for the judges who had never attended a cattle show. The winner was awarded a special Seth Rogers Memorial Trophy, in memory of a local young man who was granted a wish and enjoyed working with cattle alongside his family.

Through donations from family, friends, the commu-nity and members of the Ohio Cattlemen’s Associa-tion, youth participating in the Celebrity Showdown nearly doubled the goal in money raised to help grant the wishes of local children battling life-threatening

medical conditions.

“We are excited to partner with the Ohio Cattlemen’s Association and are honored to be chosen as the char-itable recipient this year for the BEST program,” said Development Officer Cathy DeLuca. “It is inspiring to see children in the community join together to help bring smiles to the faces of local Wish Children.”

Incentive prizes will be awarded to the top fundrais-ers at the OCA BEST Program Banquet on May 11, 2013. Donations to Make-A-Wish are still being accepted until the awards banquet. All sponsors will be recognized at the banquet, and those donating more than $100 will receive special recognition. Filling1 lb. ground beef2 lbs. of potatoes (cut potatoes in small cubes)1 c. thinly sliced raw carrots (optional)1 c. cubed rutabaga (optional)1 large onion (chopped)Salt and pepper to taste

Combine all ingredients in bowl, mix well. Set aside.

Crust4 cups flour2 tsp. salt1 1/2 cups shortening1/2 cup plus 2 tbsp. cold water

Mix flour and salt together in bowl, cut in half the shortening until mixture re-sembles meal, then remaining shortening until particles are size of peas. Add water mixing with fork or hand.

Divide crust dough into portions. Roll out each into 9 inch circles. Place on baking sheet. Place about 1 cup filling on lower half of crust. Fold upper half on lower half, dab with butter, seal by pressing edges together with floured fork. You should have a small pocket pie. Put pasties on a cookie sheet. Bake at 400 degrees for 1 hour.
