According to the Academy of Nutrion and Dietecs, this year's theme encourages us pracce healthy eang habits, but also urges us to find ways to cut back on food waste. 1. First Day of Spring!

With the coming of Spring it is once again

time to get outside and take advantage of

the nicer weather. Being outside is proven to

be positive for both the body and the mind.

Multiple studies have shown that being out-

side can:

1. Restore mental energy

2. Provide Stress relief

3. Improve concentration and creativity

4. Increased Vitamin D intake

So get outside and take advantage of the

weather as it improves. Sheboygan County is

spaces that provide amazing opportunities

for outdoor activity.

Sweet Potato and Black Bean Quesadillas

1 large sweet potato 1 can (15oz) black beans, drained/

rinsed ¼ cup chopped cilantro 1 tbsp low-sodium taco seasoning 8 whole wheat tortillas 1 cup pepper jack cheese

Directions Pierce the skin of the sweet potato w/ fork and

microwave for 5 minutes on high and allow to cool slightly.

Cut the sweet potato in half lengthwise & scoop out the flesh into a medium bowl. Mashed sweet potato until smooth.

Add beans, cilantro, and taco seasoning to the mashed sweet potato and mix well.

To cook quesadillas, heat skillet over medium heat. Spread 1/8 of the sweet potato mixture evenly on half of a tortilla. Sprinkle with 2 tbsp of cheese and fold in half.

Place quesadilla in skillet & cook 3-4 minutes, or until cheese starts to melt. Flip and cook for 1-2 more minutes or until tortilla is golden brown.

National School Breakfast Week!

National School Breakfast week is March 5-9. This is a weeklong program designed to raise awareness and promote the benefits of the School Breakfast Program. According to the School Nutrition Association, this year’s theme, “I Heart School Breakfast,” encourages parents and students to get social over school breakfast and spread the message that a healthy, tasty breakfast is being served at most schools each day. All Sheboygan schools have breakfast options available! Check with your school what is available for breakfast.
