K-COOK DELIGHT Spicy South American Pajeon

INGREDIENTS:

Green Onion - 5 Roots

Shrimp (large) - 2 each, peeled

Bacon - 1 strip

Mushrooms, button - 1 each

Tomato - 1/4 each, diced

Zucchini - 1/8 each, sliced

Soy sauce - 1 Tbsp, ½ cup

Korean pancake mix - ½ cup

Water - ½ cup, cold

Honey - 1 Tbsp

Salt - TT

Egg - 1 each + 1 Tbsp water

Garlic - 1 Tbsp, minced

Oil for frying

Tabasco pepper sauce - ¼ cup, ½ cup

Cream cheese - 2 Tbsp, 1 Tbsp dollop for garnish

Sesame seeds - TT for garnish

Dried red pepper - TT for garnish

DIRECTIONS:

1. Gather equipment: cutting board, chef knife, mixing bowls (3), whisk, rubber spatula, tongs, ladle,

large sauté man, small sauté pan, mini sauté pan (4’’), towels, and spoon.

2. Rinse and trim green onions to 4’’ thick strips.

3. Slice mushroom to medium thickness.

4. Slice zucchini in half and slice to medium thickness.

5. Remove seeds and dice tomato.

6. Rinse and peel the shell off of the shrimp.

7. On low-medium heat on dry sauté pan cook bacon; take off the heat when crispy and cut into

small pieces.

8. In the same sauté pan, do not rinse, cook whole shrimp; take off heat and place aside with bacon.

9. In the same sauté pan, do not rinse, cook mushrooms and zucchini. Cook until crispy and brown

in color; set aside with bacon, shrimp, and tomato.

10. In smaller sauté pan on low-medium heat simmer ½ cup soy sauce + ½ cup Tabasco sauce.

Simmer until sauce comes to medium thickness. Please watch carefully, it is easy to burn this.

When finished, set aside.

11. In a bowl whisk together pancake mix, water, honey, garlic, and salt.

12. In small bowl beat one egg with 1 Tbsp of water.

13. Using mini fry pan cook pajeon:

a. On medium heat put oil in mini sauté pan.

b. Place green onions, mushroom, tomato, zucchini, bacon, and shrimp in sauté pan.

c. Using a ladle, pour batter over meat & vegetables.

d. Place 2 Tbsp cream cheese on top in small dollops all over pancake.

e. Drizzle with Tabasco sauce on top.

f. Pour 2 Tbsp of batter on top.

g. Drizzle 1 Tbsp of egg mixture on top of this.

14. When edges start to brown, flip the pancake. Let it cook for another minute or so.

15. Plating: place the pancake in the center of the plate, drizzle with the tobacco/soy sauce you made,

place a dollop (1Tbsp) of cream cheese on top, and finish with sliced dried red peppers and

sesame seeds.
